  • Olive Oil: Use good-quality extra virgin olive oil labeled first cold pressing for the best flavor.

  • Dijon Mustard: For depth and character, some creamy, wine-like Dijon is perfect. It also helps emulsify the dressing.
  • Vinegar: For this recipe, I find that white wine vinegar is just right! However, you could substitute rice wine vinegar, if you prefer, or champagne vinegar.
  • Sugar: A bit of granulated sugar balances the sour ingredients. You could also use honey or maple syrup.
  • Garlic Powder: You could also mince or press fresh garlic, but garlic powder is easy and tastes great in this vinaigrette.
  • Lemon Zest: Lemon zest should only include the yellow part of the lemon rind no white pith.
  • Italian Seasoning: Prepared Italian Seasoning blend is a quick way to add concentrated herbal notes and fragrance.
  • Salt and Pepper: To taste.

Cube two crispy chicken breasts, two grilled chicken breasts, toss in the chopped celery, mayo and relish and pulse for 5 seconds. Add the boiled eggs and pulse for about 10 more seconds. Thats it. Crazy easy, right?!

    TIPS: Just dont get carried away when it comes to pulsing the mixture or youll end up with a really mushy consistency. While their chicken salad is pretty fine, it does have noticeable chunks of ingredients in it.

    I love finding a dish I can order out that is macro friendly. We recently went to Chick-fil-A and I saw the ad for their seasonal Lemon Kale Caesar salad. I had to try it! And I loved it! I left thinking, I’m going to make something just like this. I think I might have even improved i! You let me know if you think so in the reviews/comments below.

    I made a homemade Creamy Lemon Caesar Vinaigrette dressing with ingredients I usually have on hand, maybe you have them on hand too . I also made a savory, lemon rub for the chicken and my husband grilled it to perfection! The dressing and chicken topped on a bed of greens with some shaved parmesan cheese and a few crunchy croutons and a squeeze of fresh lemon juice and wow! It’s a winner! My kids don’t really care for salad. Only one of them will eat salad dressing , so I can’t blame them. But the dressing is where it’s at. They did, however, devour the chicken!   • Saute the Garlic and Crumbs. Heat a swirl of olive oil in a skillet, and heat it up over medium heat. Stir in the garlic and let it cook for about 15 seconds. Then add in the panko crumbs and sauté for about 2 to 3 minutes, or until golden brown.
  • Let Stand. Take the skillet off of the heat, and scoop the crumbs onto a plate. Let them stand for a couple of minutes to crisp up.
  • Add Cheese, Lemon Zest, and Seasonings. Add the grated parmesan cheese and lemon zest to the crumbs and toss to combine. Taste the crumb mixture for salt and pepper, and adjust as needed.
  • Variations Of This Recipe

    • ONION not traditional in the Chick-Fil-A version, but I love to add a bit of grated onion or very finely minced yellow onion to my chicken salad. You wont need much! Another option is to mince some green onion or chives and toss those in the salad. You could also serve the chicken salad sandwiches with some sliced red onion as well.
    • SWEETER you could add a 1/2 tsp of granulated sugar to the chicken salad if you prefer a sweeter version.
    • DILL some folks dont like the sweetness of the sweet pickle relish, so feel free to try dill relish instead.
    • LOW CARB if youd rather ditch the extra carbs and go bread-less, try picking up some Bibb lettuce and serving this chicken salad up in lettuce cups!
    • BREAD OPTIONS I went with hearty whole wheat bread here since thats what Chick-Fil-A used to use, but my favorite way to have chicken salad is on a slightly toasted croissant. I take the croissant halves and heat them cut side down in a skillet thats been sprayed with cooking spray and heated over MED HIGH heat. Once theyre golden brown, I let them cool slightly and then make my sandwich. Toasted bagels are another great option .
