Our healthy egg salad recipe isnt your bog standard egg salad full of mayonnaise, ready to load into a sandwich.
We have created a unique egg salad, with slightly-soft boiled eggs, beetroot, quinoa and fresh leaves! Its colourful, full of flavour and super duper healthy.
And it only takes 15 minutes to put together!
The base of leafy greens is wonderfully crunchy, while the beetroot adds a pop of colour and a sharp tang, which offsets the mild flavour of jammy eggs.
The very first time I tried this recipe there was something missing I felt hungry 30 minutes later. And thats not a pleasant feeling when you have a busy day in front of you. Something was missing.
It turns out quinoa was the key.
Quinoa gives this salad some bulk, making it more filling than a standard salad of just veggies. The feta cheese sprinkled over the top is rich and salty, the perfect addition. Couscous works just as well, too.

We work really hard to cut calories in all of our recipes while enhancing the flavors. Making an egg salad sandwich on a diet is a challenge since one of the key ingredients is mayonnaise and of course eggs. So, Amy and I started to play with the recipe to cut the calories and keep the yumminess of the “traditional” egg salad. First thing, and no question about it, you have to keep the eggs!!! Next, we focused on the mayonnaise and came up with an amazing substitution. In fact the substitution is even, dare I say, BETTER than using mayonnaise. I never thought it would be possible…but IT IS!!! And now we use it anytime we need mayonnaise in things like tuna salad, chicken salad, etc.
When Amy and Josh were in school I would make egg salad for their lunches at least once a week. It’s cheap, easy to make, and kids love it! They liked it so much, they would often eat egg salad for an after school snack, usually on saltine crackers. Keep in mind, they really enjoyed some saltine crackers! You can make your hard boiled eggs any way you like. I usually just buy already boiled eggs at the grocery store. That way I can enjoy this healthy egg salad at a moments notice. Here are some great boiling options, though. With all options, its important to immerse the eggs in a bath of ice water immediately after cooking to stop the cooking process. Leave in ice bath for about 15 minutes to chill. Then, peel and chop the eggs.
- Air fryer method. Set the temp to 250ºF and cooked eggs for 16 minutes.
- Stove top method. Fill enough water in a large pot that will cover the eggs by 1-inch, once added. Bring water to a boil and then carefully place eggs in the hot water. Boil the eggs for 30 seconds, place the lid on the pot and reduce heat to low. Cook eggs on a low simmer for 12 minutes.
- Instant Pot method. Place eggs on a trivet, add 1 cup of water and select Pressure Cook for 5 minutes, then vent immediately.
- Oven method. Bake eggs for 25 minutes at 325°F.
