The Best Potatoes To Use

Small, waxy, and thin-skinned potatoes are best for potato salad. Small yellow, white or red potatoes are perfect . They are quick-cooking, and since they are already small, theres no need to chop them before cooking them.

Leave the potatoes whole. Whole cooked potatoes maintain more of their flavor and natural sweetness. Were also partial to the texture of potatoes when they are cooked whole compared to chopped.

If you dont have small, waxy potatoes available, other potatoes will work in their place the texture will be slightly different. We try not to use russet potatoes since they tend to fall apart.

If thats all you have, dont worry. Chop them before cooking they are much larger and take a long time when cooked whole.

How To Make Potato Salad With Bacon

Boil the potatoes until fork tender be careful not to overcook them! Drain and rinse the potatoes with cold water to prevent them from cooking further.

While the potatoes are cooking, make the bacon. You can make the bacon as crisp as youd like. When the bacon is cooked to your liking, transfer it to a paper towel-lined plate and crumble it once its cool enough to handle.

In that same skillet you cooked the bacon in, sauté the onion and garlic until tender.

Then, whisk together the potato salad dressing in a small bowl. Dice the cooked potatoes and add to a large bowl along with the remaining potato salad ingredients. Toss gently to combine and add more salt and pepper as needed.

This is similar to a German potato salad and tastes incredible warm. However, you could also chill it in the fridge and serve it cold!

Once you have everything you will need, you will want to begin with your red potatoes. Fill your pot with water, add a pinch of salt, and bring it to a boil. Once the water has reached a rolling boil, add your red potatoes into the pot. Cook them for about 5-7 minutes.

While your potatoes are cooking, you will want to whisk together the mayonnaise, plain Greek yogurt, mustard, apple cider vinegar, garlic powder, onion powder, lemon pepper, dried basil, and salt in a bowl.

Old Fashioned Potato Salad Recipe

My Grandma who was famous for this recipe, passed away not too long ago. To help carry on her legacy in a very small way, Ive decided to share her recipe with all of you. If you dont follow the recipe to a tee, its going to turn out differently than hers does, and therefore wont be as good. Im going to give you some basic tips below that you need to follow to make sure it turns out delicious.

It took us years of twisting her arm to get her to give us this recipe, and even then she spoke so quickly that we had to ask her questions for years after to make sure we were doing it the right way. This makes a VAT of potato salad, so be warned, but dont worry, you still wont have any left at the end of the barbecue.

The Real Food Homemade Potato Salad Version

Instead of the kosher dill pickles that I grew up eating, I use lots of my own homemade refrigerator pickles. I add a bunch of fresh dill because my husband loves it plus it adds such a refreshing flavor. I also tend to use red potatoes, but good ole Russet potatoes are just as good .

My grandma and mom used yellow mustard which adds a great flavor, but I prefer Dijon or horseradish mustard. And mayo, step aside because you will not come near my potato salad! Instead, I use sour cream as the creamy base and its just as delicious, better in my opinion.

My grandma and mom always put diced up hard boiled eggs in the potato salad too. If you enjoy eggs in your potato salad, go for it! It adds a nice amount of protein plus some nice texture.

One more extra thing to add olives if youd like, they are a nice addition too. My mom often added black olives to the potato salad and occasionally green olives with pimentos. So salty and yummy!

The first time I made this potato salad for my husband his eyes got big and he said it was the best he had ever tasted. Hes always honest with me about my food. I love when he enjoys my recipes, it warms my heart.

This delicious vinegar based Potato Salad without Mayo was my grandmothers recipe. Passed down to my mom, whom passed it down to me. This classic potato salad recipe is sure to be a hit at your next barbecue!

There is no denying it. I love potatoes, and when I made the bbq beef brisket I knew I wanted to serve a potato salad with it. I called my mother to find out how to make her moms Potato Salad without Mayo. My mother graciously told me what ingredients I needed however, its one of those unwritten recipes and because of this she had no measurements to give me. I had to figure it out on my own.

Can I just tell you how excited I was when I nailed it on the first try! Because I was making the potato salad to accompany dinner I was able to lure my mother over for a late dinner once she was off from work. When she got to my home and saw the potato salad she then realized she forgot to tell me one extra ingredient! Mayonnaise.

At first, I was angry that she failed to tell me that key ingredient however, I had already taste tested some of the potato salad and knew it was spot on. I could have sworn that I never remembered this potato salad having mayonnaise in it. But then again, it had been many years since my mom had last made it.

After my mom took her first bite she was beyond pleased, and actually liked my version better than her own mothers. This recipe is perfect for the non-mayo lover in your life!

How Long Will Potato Salad Last

Potato salad should be stored in an air-tight container in the refrigerator. Properly stored, potato salad will keep for up to four days.

If you are serving potato salad at a party, it will keep at room temperature for two hours.

If you are serving potato salad at an outdoor barbecue or picnic, it will keep for about 1 hour.

Pro-tip: If serving potato salad at an outdoor event, I recommend storing the salad on ice in a cooler for a longer shelf-life.

How To Make No Mayo Potato Salad

Cook the potatoes. Slice them into ½ rounds, as if you were making potato chips. Place them in a saucepan full of cool water, then heat until boiling. Cook until fork tender, then drain and set aside to cool.

Make the mustard vinaigrette. Combine the olive oil, vinegar, garlic, dill, mustard and honey in a mason jar. Shake to combine. Taste and season with salt and pepper, then set aside.

Make the potato salad. Combine the cooked potatoes, eggs, celery and green onions. Toss lightly with tongs, and pour half of the dressing on top of them. Toss again, then add more dressing if desired, and serve immediately.

Recipe Notes And Tips

  • You can make more and the rule of thumb is: for every potato used, use the same amount of eggs.
  • I like to hard boil eggs in my Instant Pot pressure cooker, they always turn out perfect and the shells peel right off!
  • You can use Miracle Whip salad dressing if you like, keep in mind its sweeter than mayo so you may want to adjust the sugar accordingly and to taste.
  • Chill for several hours or overnightso the flavors have a chance to meld.
  • I like to dust with paprika before serving.

This traditional potato salad is no-frills and simple and exactly why its so dang good. It tastes just like the Amish potato salad at my neighborhood deli counter here in Missouri, and they have like 6 different kinds of potato salad! What The Kids Can Do

Kids can use an age appropriate knife to slice the scallions, and chop the parsley. They can also help measure and mix up the dressing. Also if you want to cook the potatoes in halves rather than small pieces, once the potatoes have cooled, the kids can cut them up with a knife, now that they are soft.

Leave out the white wine if you are concerned about the very small amount of alcohol for the kids. Ive always been preoccupied with other things to worry about.
