Dressing For Pasta Salad

Tuna Macaroni Salad – Easy Pasta Salad Recipe | I Heart Recipes

When making a pasta salad, its best to toss it in A LOT of dressing to prevent it from drying out and getting pasty. Instead of using all mayo, we add in a bit of sour cream to cut through the fat, making it less oily. You can also use yoghurt or Mexican crema.

WHAT TYPE OF MAYONNAISE? I suggest using whole egg mayo as it tends to be less sweeter and creamier than regular mayo.VINEGAR: adds a kick of tang! You can use white vinegar, apple cider vinegar, or white wine vinegar. Substitute with lemon juice for a citrus kick.DIJON MUSTARD adds MORE flavour, making it nice and thick.MINCED GARLIC completes the flavour profile. You can use garlic powder, onion powder or minced shallots if you prefer.

You all know how much we love drowning our food in sauce! That INCLUDES all of our salads and dressings. NO pasta salad recipe of ours will ever be lacking in dressing!

I Dont Like Sweet What Can I Do

If you dont like the sweetness of a Macaroni Salad recipe you can simply leave out the sugar and sweet pickle relish. We really love the flavor.

It tones down any acidity and overly powerful savory spices that are in the dressing itself, so we use it and it is minimal but you can still taste the sweetness on the tip of your tongue.

I start by simply making my elbow macaroni according to the package instructions. Once its done, I drain it and immediately run it under cold water. I know! Theres a lot of debate about this. But, I do it because it serves two purposes. It rinses off the extra starch and it stops the cooking process.

Next I transfer my macaroni to a salad bowl and I get to dicing my add-ins. Once cubed, diced, or chopped, I stir in the cheddar cheese, celery, cabbage, bell peppers, and green onions.

I dont mean to brag, but my macaroni salad is the creamiest around. The secret is in the dressing. To make it, I simply mix mayonnaise, yogurt, apple cider vinegar, lemon juice, Dijon mustard, honey, garlic powder, salt, and pepper into a bowl and whisk to combine. Before serving, I always taste test the dressing and adjust accordingly.

The final step is to pour the dressing over your salad and toss until everything is combined.

Then, I like to cover the salad with plastic wrap and refrigerate it for 30 minutes or up to 1 hour. This really allows for all of the flavors to mix and for it to come to a nice temperature.

Give it another nice big stir before serving.

How To Make This Recipe:

  • First step is to cook the pasta. When cooking pasta, I always heavily salt my water and use a good tablespoon of kosher salt. Cook the noodles al dente. You want them to be done but still have quite a bit of bite to them. Drain the pasta and let it fully cool.
  • Next, you’ll combine the pasta with the remaining macaroni salad ingredients. This recipe tastes best when the vegetables are cut super small to a uniform size. This can be done quickly in the food processor.
  • The dressing is easy to make. Simply combine all of the dressing ingredients together and whisk well until they’re fully combined.
  • Finally, add the dressing to the rest of the salad and toss to combine.
  • How Long Can Macaroni Salad Sit Out

Macaroni salad can sit out for 2 hours at room temperature before it should be discarded. If you are serving your macaroni salad at an outdoor function, be sure to keep it chilled before serving and keep it in the shade while serving. Macaroni Salad left in the sun can spoil much faster than 2 hours depending on the temperature outside.

Our 3-year-old daughter Valentine came out of her room very late last night. My bed is not letting me go to sleep. Nice try, kid. I cant really empathize my bed lets me go to sleep before Im even in it sometimes.

Eric and I went to the drive-in movie theater last weekend. There are only like 300 drive-ins running in the US, isnt that crazy? Its only a 3 minute drive from our house so we take the kids all the time. And its easy to social distance!

Anyway, there are no new movies of course, so the drive in is showing all these old movies from when we were kids. The Mummy, Transformers, School of Rock. So much fun to see them on the big screen again! Eric usually sets up the back of our minivan with blankets and pillows so we can lay down and relax, and I fall asleep every time. Every. Time. See Valentine? I dont even need a bed to go to sleep, the back of a car will do for me. I think Im getting old!

This is the last week of school for my kids! Hooray! Just like when they actually attend school in person, were all mostly checked out at this point. Sorry, teach. But really is there anything better than being a kid on the last day of school? Its the best!

What you add to your macaroni salad is up to you, but think about checking these boxes:

    • When choosing the pasta shape, choose something that will hold onto the dressing. Shapes that have nooks and crannies like elbow macaroni, small shells or even spiral shapes work nicely.
    • Add some color and texture with a variety of vegetables. We always end up adding onion and prefer red onion for the pop of color. In addition to the onion, we love celery, bell pepper, and radish. For more veggie suggestions, check below where we share possible variations to the salad.
    • For a little extra brininess, we love adding chopped dill pickle. You could leave this out or swap with a sweeter option like bread and butter pickles or for something different, go for spicy!

Cook the macaroni al denté as you would your favorite Italian pasta. Watching your cooking time and cooking to the package directions should ensure the perfect bite. After cooking, rinse the macaroni so it doesnt stick. The macaroni salad trick I learned from my mom is to rinse the pasta after cooking and drain it really well so theres no residual water lurking in the pasta nook and crannies. Rinsing the pasta under cold water stops the cooking time and removes some of the starches created from cooking. As the pasta cools, toss it a bit with your hands or a spoon so it stays loose and doesnt clump together.

How To Make Macaroni Salad From Scratch

Sometimes you just dont mess around with the classics. While some might look at this macaroni salad recipe and think its too simple thats exactly why its a time-proven favorite.

While Ive always been a fan of potato salad its taken me years to come around to macaroni salad. The reason being is that every time I tried one, it was never a good one. They were either too dry, too plain, or too heavily loaded with a goopy, flavorless mayo dressing that coated the macaroni like oil on a dipstick and likely came from a pre-packaged box from the deli counteryes! That stuff usually comes from a box!

Theres nothing worse than that acrid taste of fake mayo macaroni salad. You know. Youve been there.

But, this old-fashioned macaroni salad from scratch is everything those others were not. First off, its homemadetoss the box! Its simple but well-seasoned. Its dressed just right with a tangy but light mayo dressing. And the pasta is neither clumpy nor starchy, but smooth and satisfying with every bite.

I really do love this salad but Im going to defer to my husband on this one, who as a self-proclaimed macaroni salad connoisseur did attest, Honey, this is still the best macaroni salad Ive had. Ever.

How To Make This Macaroni Salad Dressing

Pickle juice is the secret! The dressing for this salad is a mayonnaise base thats been thinned out with pickle juice reserved from the sweet pickles added to the salad. I always use sweet pickles, so if you use another style, taste test it to your liking. If youre not a fan of pickles, you could substitute vinegar or lemon juice. Taste as you go to get the right balance. But for me, its sweet pickle juice all the way.

Refrigerate for the flavors to meld. This salad tastes best when its had some time in the refrigerator for the flavors to meld and the mayo sauce to permeate the noodles. Allow for at least an hour of chill time before serving, or make it the night before for the best, flavorful taste. And always remember to taste again before serving to decide if more salt and pepper seasoning needs to be added.

And really its as simple as that, and way better than mac salad served from a box.

What Ingredients Are In Macaroni Salad

Different macaroni salads contain different ingredients, but my staples include:

    • Elbow macaroni
    • Hard boiled eggs or shredded or diced cheddar cheese
    • A homemade mayo-based macaroni salad dressing

You can obviously add your favorite additional add-ins or make substitutions , but this if my favorite combination and I really recommend you try it out exactly this way at least once for yourself.

The dressing I just mentioned is what really sets it apart from other potluck recipes you might have tried. It provides just the right amount of creaminess the noodles are coated in just enough sauce and are neither dry nor are they drenched in the dressing. Its also just slightly sweetened thanks to the addition of some sweet pickle juice and a pinch of sugar.

How Long Does Macaroni Salad Keep

To be honest, macaroni salad never lasts very long in my fridge someone has always got their eye on it! If I do need to save it, though, it will stay good refrigerated for 3 to 5 days if well sealed in an airtight container. Some even say the flavor gets better if it spends a night in the fridge. Just be sure to give it a good toss before serving.

If youve set your macaroni salad out for longer than 2 hours, it will need to be tossed out.

Be sure to generously salt the water youll be cooking the macaroni in. The pasta itself needs to have some flavor, otherwise your macaroni salad may taste a little bland.

Feel free to play around with the macaroni salad dressing ingredients to suit your own preferences. We like a sweet-yet-tangy dressing, but add more or less sugar to your liking.

Pro Tips For Making This Recipe

The Only Macaroni Salad Recipe You Need
    • Do not serve this recipe immediately. When the macaroni salad chills in the fridge, it helps the flavors meld together and allows the flavor to soak into the pasta noodles. I promise it is worth the wait!
    • You must rinse the pasta before adding the ingredients to it. When you rinse the pasta, it stops the cooking process and keeps your pasta from overcooking. Rinsing also helps loosen the pasta from each other to avoid a clumpy pasta salad.
    • I love the kick that comes from Dijon mustard but you can use honey mustard or yellow mustard if youre not a fan of spice.
    • Use all of the dressing that is made. It may seem like much, but the pasta will absorb the dressing over time. The amount of dressing used also prevents the pasta from drying out.
    • Feel free to swap the chopped herbs to whatever you have on hand. Chives, basil, tarragon, and cilantro are great delicious alternatives.
