What we all think of today as a simple, easy dish that can be made at any time is the result of times that were far leaner than those we live in today. In fact, tuna salad was born from a need to stretch every last bit of food available to families.
Back in the 19th century, when there were no supermarkets or grocery stores just down the road, Americans did their best to use up every scrap of food they had. And I mean that literally.
Chicken, ham, or fish scraps from evening dinner were mixed with mayonnaise and served on lettuce for the next days lunch. Celery, pickle, and olive leftovers that were used to make supper relishes the night before were also mixed into the salad.

This recipe is super quick and easy to throw together. First, prepare your ingredients. Hard boil your eggs, then peel and chop them. Small dice your onion, pickles, and celery. Drain your tuna.
To drain tuna, cut the can lid with the can opener then turn upside down and press down on the tuna with the lid to remove excess liquid. If all you have is oil-packed tuna, you can always add it to a fine-mesh sieve, rinse with cold water, and press with a spatula to extract all of the liquid out of the fish.

Light Tuna There are a variety of fish that fall in the light tuna category. This tuna typically comes from either Skipjack or Yellowfin tuna. The meat is darker in color somewhere between a light tan and tan-ish pink. It has a soft texture and is more flavorful than white meat tuna. In many ways the texture is like a chicken thigh. Typically it is found in a chunk pack, which means it is small pieces of the fish loin that have been chopped up. It may be packed in water or a vegetable oil.
From a nutritional perspective it is slightly lower in fat than Albacore tuna and therefore is slightly lower in Omega-3s.
