The Asian Salad Dressing
The Asian salad dressing I use in this salad is based on a recipe by David Chang of Momofuku. Its made with all manner of Asiany ingredients soy sauce, rice vinegar, sesame oil, garlic and ginger but theres plenty of flex here which Ive jotted down in the recipe notes.
I love the fresh hit of ginger and garlic in the dressing but I quite often make this salad using my standby simple Asian Sesame Dressing. Made with just soy sauce, sesame oil, vinegar, oil and sugar, it keeps for days, weeks even. It would be unusual if I didnt have a jar of this lurking in the dark depths of my fridge at all times!
I think the thing that really seals the deal for me about this Chinese Chicken Salad are the crunchy noodles. I just use Changs Fried Noodles which are often on sale at the supermarket for around $1. Any brand will do the thin ones Ive used or even the wider ones. Just as long as theyre crunchy!! Nagi x
PS This is a terrific do-ahead meal. The chopped veggies stay fresh for days in the fridge Ive kept them for 5 days in an airtight container and shredded chicken can be frozen. The only thing to add fresh is the ginger and garlic in the dressing.

1, 12-ounce package fancy coleslaw with red cabbage and carrots1 bunch green onions½ cup caramelized Frenchs Crispy Fried Onions1, 15-ounce can mandarin orangesSoy Vay Toasted Sesame Dressing1 boneless, skinless chicken breastSeasonings of your choice
Split the chicken breast in half to flatten it and season both sides with your preferred seasonings. Grill chicken . Cut cooked chicken into long strips and then cut strips in half. Chop green onions, then drain mandarin oranges. Mix coleslaw, chicken strips, oranges, green onions, wonton strips, and caramelized fried onions in large salad bowl. Add salad dressing to taste, and toss until glistening but not soggy. If desired, garnish with extra wonton strips and fried onions on top.

This Toasted Sesame Asian Salad Dressing is full of flavorful sesame oil, soy sauce, rice wine vinegar, and honey along with some fresh grated ginger. Then it is finished off with olive oil and blended up for a quick and easy salad dressing that packs a good punch of flavor without adding too many calories to your salad. The olive oil lightens things up because using all sesame oil would be overpowering.
If you have a big bad blender like the Vitamix I own and love, you can certainly use that to blend it up. I honestly prefer just making this in a wide mouth jar and giving it a quick whiz with my immersion blender. That way there is much less wasted dressing along the tall sides of the big blender. Best of all, I can just pop the lid on the jar and easily store it in the refrigerator.

How To Make Chinese Chicken Salad
Fry the wonton strips in batches until crisp, then place on a paper towel-lined plate to soak up any excess oil. Toss together the chopped romaine, chicken breast, green onion, almonds, and pasta.
Pour the Chinese chicken salad dressing over the lettuce mixture, then sprinkle with fried wonton strips and sesame seeds before serving.

Healthier Chinese Chicken Salad
Lighter fare that totally satisfies is what Im craving now. And as summers flowy skirts and loose-fitting shift dresses morph into falls jeans and thigh hugging pants, it seems lighter food is part of my weekly anthem.
And thats where my all-time favoriteand healthierChinese chicken salad comes in.
I 100% crave this Chinese salad, and lately, its been on my lunch train repeat. With meal prepped cooked chicken breast and pasta noodles in the fridge, and a bunch of chopped romaine at the ready, all I have to do is toss it all in a bowl and Im ready to eat.
I based this salad on two of my Los Angeles quick eats faves: Feast from the East where they use it to dress crunchy romaine topped with their lightly fried and highly addictive wonton strips, but I added rotini pasta noodles ala the Chinese chicken salad from California Chicken Cafe. Since I dont live in the same states as the restaurants where I used to pick them up for lunch anymore, Ive created a tasty homage to two of my favorite Chinese chicken salad spots, and man, they are on point.
Good thing I had these food memories embedded in my taste buds so I could replicate.
Whats In Chinese Chicken Salad
I know this may not sound like 100% healthy-for-you food , but moderation is my favorite friend.
So, as long as you watch your portion size, the amount of dressing you use, and the number of crunchy wontons and pasta you top it with, youll still be in the zone and your cravings will be 100% satisfied yet still healthified.

- grapeseed oil it has a milder flavor than olive oil. You can use canola oil if youd like too
- seasoned rice vinegar get the seasoned version, not the unseasoned
- sesame oil
- fresh ground pepper and kosher salt

Tips For Making Chinese Chicken Salad
Im a fan of meal prepping a few chicken breasts for the week to have them on hand for quick lunches and easy dinners, and this recipe is exactly one reason why.
A grocery store rotisserie chicken will always save a few extra minutes in the kitchen. I used just one chicken breast for these salads and saved the rest for the lunch leftovers.
The spiraled rotini pasta that tops the crunchy romaine plus the spunky green onion are probably my favorite additions to this salad. While you could skip the rotini pasta, I dont.
Ingredients For Chinese Chicken Salad
- Chicken: Use up that rotisserie chicken that youve been meaning to eat. Or bake a chicken breast for this easy recipe.
- Lettuce: Traditionally, romaine is used for this salad but you can use any kind of lettuce that youd like. I added in cabbage as well for more fiber and texture.
- Onions & Cilantro: Herbs and onion will add a depth of flavor to this dish. Add liberally or serve on the side so family and friends can add as much as theyd like.
- Rice noodles: These will add texture and act as the croutons for the salad. If you want to make this a keto chinese chicken salad, the omit and just use nuts for texture.
- Almonds: Add another source of protein to your salad!
- Dressing: Pick out any kind of asian dressing to add to your salad. Or, a creamy dressing if you prefer.
