The problem with most broccoli salads is the broccoli the raw broccoli. Some people like raw broccoli, and actually, I love raw broccoli stems. They taste a lot like cabbage or cauliflower. But the florets? If they’re raw, keep them away please.

So, how to make a broccoli salad if you don’t like raw broccoli?

The solution blanch the broccoli for 1 minute, or no more than two minutes. The broccoli will still be firm enough for the salad, the color will be even prettier, because blanching brings out the green, and the taste will be less raw and more cooked.

How To Make It

I like to first get all my ingredients together. You dont want to start mixing and then realize you never cooked your bacon, etc. So, I go about chopping up my broccoli , cooking and dicing up the bacon, cutting the onion, and measuring out my dried cranberries and sunflower seeds. Once thats done, I add all of those ingredients together in a large bowl.

Next, I make the dressing in a blender by adding in all the ingredients and pulsing until its all blended together. If you dont have a blender or food processor, you can put it all into a mason jar with a lid and shake until combined. If its too thick, Ill add about a tablespoon of water at a time until it reaches the consistency Im looking for.

I also taste as I go along to make sure it has enough salt and pepper. Then, I pour the dressing over the broccoli and other ingredients and mix it up. I eat what I want right then and save the leftovers for tomorrow.

How To Cut The Broccoli

If youre wondering how to cut broccoli for broccoli salad, Ive got you covered. The first thing I do before even cutting the broccoli is to rinse it thoroughly under warm water. Next, I cut the trunk off and set it aside. From there, I cut off each little floret individually and to about the same size, then the stems from there. The stems higher up on the broccoli head are soft enough to eat so I dont discard those.

Alternately, if you dont care if your broccoli is cut uniformly, you can just get to chopping it up like you would a carrot or any other vegetable. It all depends on how you like your presentation.

If you dont want to waste all of the broccoli stem, what I do is I cut off the very end where its all dry and hard. Then I cut the tougher skin from around the stem and then cut the softer, inside core into pieces. Discard the rest.

Traditional broccoli salad dressing is just creamy, mayonnaise-y perfection and were not about to stray from that sweet-tangy goodness. We start with store-bought mayo, and add both cider vinegar and fresh lemon juice for lots of tangy brightness. A bit of sugar and salt to balance it all out, and thats all there is to homemade broccoli salad dressing.

Making Ahead + Storing

Broccoli salad can be prepared a day ahead of time without losing its texture. Just be sure to leave out the bacon and nuts until youre ready to serve or they might get a little soggy.

If you need to prepare it 2-3 days in advance, combine all of the salad ingredients and leave the dressing out until youre ready to serve. Once the dressing has been added to the salad, it will only last 1-2 more days in the fridge.

    I never blanch my broccoli when making broccoli salad, and Ive never received any complaints . If you prefer to do so, you can. Bring a pot of salted water to a boil and then blanch your broccoli for no longer than 60 seconds. Immediately drain and rinse in cold water to stop the broccoli from over-cooking. Dry your broccoli thoroughly before proceeding.

    You can buy pre-cut florets, but for me it was cheaper and not much more difficult to just buy a few heads of broccoli and cut it myself. This recipe required about 2.5 heads of broccoli for me to make it, but your mileage may vary depending on the size of your grocery stores broccoli!

    Preparing fresh corn for this recipe only takes a few seconds. Youll remove the husks from the corn and drop each cob into a pot of boiling water. Cook the corn briefly, for just 3 minutes, before removing to a bowl or strainer and running cold water over the corn to stop it from cooking/over-cooking.

I like to cook my bacon on a baking sheet at 375 degrees for about 15-17 minutes flipping the bacon halfway through the cooking process. You could even use this candied bacon recipe to add a hint of sweetness to this broccoli salad.

    Now in a large bowl, combine the broccoli, onions, bacon, dried cranberries and sliced almonds. Drizzle the dressing over the top and stir to coat. Cover and chill for about 1 hour before serving. Toss again right before serving.

    Patience Is A Virtue I Struggle With

    This is one of those salads that is best made the day before or at the very least 2 hours before serving.

    I dont deal with this well. I pick at it constantly straight after making it and am always disappointed with how it tastes, and I fret that its not going to taste great.
