This light and fresh Thai cucumber salad is one of my warm weather staples. The dressing is tangy, salty, and sweet and the juice from the cucumbers seeps into the dressing, giving it a delicious cucumber flavor. This salad is satisfying all on its own for lunch, thanks to a generous handful of peanuts. For dinner, you can serve it with Grilled Thai Curry Chicken or Honey Lime Sriracha Chicken, or as a side to jazz up any simply grilled meat or fish dish.

4 for food, 3 for service. I’ve been to CPK many times & thought this location was OK. It is small compared to the other ones I’ve been to. We received prompt service as soon as we arrived. It was after 8PM so may explain why. Food was brought quickly too, but then again restaurant wasn’t crowded at all. We ordered: Fried Mac & cheeseRoasted artichoke & spinach pizza The salads were bomb, as always. The pizza is awesome too, I recommend it! Garlicky & cheesy. Fried Mac & cheese looked better than it actually tasted. You aren’t missing out. Same with the dumplings. Let an actual Chinese restaurant make those for you. Also awkward moment was when our waiter told us they were out of bread for table. Bummmmeeerrr. Our waiter was ok. She had a bit of an attitude & you could tell she wanted to be off work. I don’t blame her for being tired but I really wanted to tell her to get rid of the bitch face while taking our orders. Good food as usual & expected but I enjoy the service at my local CPK better…JUST SAYING.

Topped with crispy rice sticks and Thai peanut dressing.” You can plan ahead for this amazing salad clone by first grilling the chicken and chilling it, then preparing the cilantro-lime dressing and the peanut sauce in advance. The menu description says that the salad is topped with “crispy rice sticks,” but they look to me like crispy bean threads, cooked in a flash when dropped into hot oil for a few seconds. The crispy wontons are made from frying thinly sliced wonton wrappers in the same hot oil. For the edamame , look in the frozen food section, and if they’re still in their pods, be sure to take them out before measuring and tossing them into the salad. Once you’ve got everything chilled and chopped, building each dish is a breeze, and you’ll have four huge dinner-size salads that will each be enough for an entire meal.

  • Preheat oven to 375 degrees F. Spray a baking dish with non-stick spray. Season chicken with salt and pepper, then place in the baking dish.
  • Combine chili sauce, vinegar, coconut milk, sugar, garlic, ginger, peanut butter, soy sauce and lime juice in a saucepan, whisking to combine. Bring to a boil, the reduce to a simmer and cook for 3-4 minutes until slightly thickened. Remove from heat and pour half of the sauce over the chicken, turing chicken to coat completely. Set remaining sauce aside to dress the salad with.
  • While chicken is cooking, combine all salad ingredients, except for peanuts, in a large bowl and toss. When chicken has finished cooking, let cool for a few minutes then either shred or cut into chunks. Serve salad, top with chicken, top with peanuts, then top with dressing.

Making This Healthy Chicken Salad

For convenience, this recipe uses shredded chicken from store-bought whole rotisserie chicken. You can, of course, roast a chicken at home and use that meat for this salad. Try my Lemon Herb Roast Chicken or Air Fryer Whole Chicken.

Im A Little Sheepish About Admitting That I Spent Hours Working To Recreate A Salad That I Ate At A Massive Chain Restaurant Next Time Ill Let Them Do The Work Again

Some weeks ago, I took a half day off for an excursion to the Chicago suburbs. A good friend and I took our toddlers to the Picture People to get some portraits of the kids. In this digital age, I am finding that I never take the time to print photos of my daughter. I always loved flipping through the album my mom made of me that included an annual 8 x 10 inch photo starting from age 1 going through my decade of school pictures. So, we planned to hit the suburban mall for some photos, shopping and lunch.

The ninety degree day and the fun but busy photo sessions drove is straight through the doors of the first restaurant we could find The California Pizza kitchen. We shared a pizza and the Thai Crunch Salad. A few days later, I was surprised to find that I couldnt stop thinking about the peanuty, cilantro, crunchy salad!

I decided I would try to recreate the Thai Crunch Salad at home. A quick web search turned up many variations of the California Pizza Kitchen favorite. Chopping, using my julienne slicer and two dressings later I was wishing I had a few of the prep chefs from the California Pizza Kitchen! I even skipped the wontons and rice sticks because I couldnt handle another step! The result was very tasty but I find after an overly laborious process, it is sometimes hard to fully enjoy a meal.

This recipe was inspired by the popular Thai crunch salad served at California Pizza Kitchen. Its made with crisp Napa cabbage, crunchy vegetables and edamame, but its the creamy peanut dressing that makes it so good. I guarantee youll want to put it on everything!

Serve this salad as a light lunch or pair it with grilled chicken for a more substantial meal. Its excellent with my Honey, Lime & Sriracha Chicken Skewers.

Thai Peanut Dressing From Cpk’s Thai Crunch Salad

California Pizza Kitchen has a Thai Crunch salad that combines the Thai Peanut Dressing and a Lime Cilantro Dressing. I prefer to use only the recipe for the Thai Peanut Dressing, found in the CPK cookbook, to accompany my Chinese Chicken Salad . It is absolutely DELICIOUS and very easy to make. I usually double the recipe and store any leftover dressing in the fridge.

2 tablespoons creamy peanut butter
1 tablespoon rice vinegar
1 1/2 teaspoons soy sauce
1 tablespoon sugar
1/4 teaspoon scant cayenne pepper
1 pinch crushed red pepper flakes
1 tablespoon canola oil
  • Whisk together peanut butter, vinegar, honey, water and soy sauce.
  • Stir in sugar, salt, cayenne and red pepper flakes.
  • Add oil and continue whisking until smooth.
  • Use immediately or refrigerate for up to five days. Bring to room temperature and whisk before using.

How To Make Thai Crunch Salad With Peanut Dressing

Begin by making the dressing. Simply combine all of the ingredients except for the cilantro in a blender and process until completely smooth. Its best to roughly chop the garlic and ginger beforehand, as most blenders arent able to process large pieces.

Add the cilantro and process for a few seconds until the cilantro is finely chopped.

It will look like this.

Next, make the salad. I typically use a blend of Napa cabbage, cucumbers, red bell peppers, shredded carrots, shredded purple cabbage and edamame, but you can use any crunchy vegetables that you like.

If you use cucumbers, be sure to remove the seeds, as they can make the salad watery.

Combine all of the vegetables in a bowl along with the chopped spring onions and cilantro, and toss to combine.

If youre serving the salad right away, drizzle the peanut dressing overtop and toss otherwise serve the dressing on the side so the salad doesnt get soggy.
