Hi Sylvia! This recipe makes about 20 servings . So, they 1/4 teaspoon of salt is spread out QUITE a bit. Each serving only has around 80mg of sodium, which is about 1/2 the salt in most bottled Ranch dressings. Of course, you could absolutely leave out the salt, but I find it really helps bring out the other flavors and, at 80mg sodium per servings, is still TOTALLY do-able for a low sodium diet!

Recently, according to a study, it has been shown that lettuce, which is low in its potassium content can be consumed by CKD patients without the need to soak the vegetable in water to reduce their potassium content.
The difference between LK lettuce and normal lettuce was also measured in terms of their taste and nutritional content. The LK lettuce had a significant amount of lowered potassium in comparison to normal lettuce.
