What Type Of Potato Is Best For Potato Salad

HOW TO MAKE HOMEMADE POTATO SALAD FROM SCRATCH

If you are making potato salad I love using red potatoes or Yukon potatoes.

Both of these varieties tend to hold up a little better, but in reality you can really use any type of potato youd like.If youre planning on using Russets make sure to peel the skin before boiling because it is thicker than red potatoes or Yukon.

In the recipe below I used Idaho Red Potatoes. They are a little bigger, but taste just as good!

The best potato salad Ive ever tried is my grandmas recipe below! Its really easy to make with some secret touches that make it delicious!

Ingredients

  • 5 lb bag red potatoes boiled in a large pot until tender then diced
  • 5 hard boiled eggs peeled and diced
  • 1 cup celery chopped
  • 1 can whole pitted olives
  • 1 lb bacon
  • 1 tbs red wine vinegar
  • 1/2 cup brown sugar

If youre shopping for a party or potluck, they have everything you could need from food, drinks, plates and napkins, charcoal you get the idea.

How To Make Potato Salad With Celery

Cut the potatoes into 1 inch cubes. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 20 minutes. Drain and let cool slightly. Meanwhile, in a large bowl, whisk the olive oil with the vinegar and mustard, then season with salt and pepper.

Gently blend in the warm potatoes and the celery. Let cool to room temperature.

Fold in the scallions and thyme, and adjust seasonings to taste.

Serve at room temperature.

How To Store Potato Salad

In my opinion potato salads are just the best when they are eaten the day they are made, and never see the inside of a fridge. If thats what your timing allows, you are in luck. However, potato salad is also a perfect make ahead side dish. The potato salad can be stored for up to two days, covered, in the fridge. If you are planning ahead, its best to store the potato salad without the scallions and thyme added in. Allow the salad to come to room temperature before adding those final ingredients.

Choose The Right Type Of Potato

This depends on your personal preference. If you like your salad with contrasting texturesthink firm potatoes and creamy dressinggo for waxy potatoes like Yukon gold or red potatoes. These will hold their shape better after theyre boiled. If you prefer creamier, starchier potatoes that will absorb more dressing , Russets are where its at.

What Kind Of Potatoes To Use In Potato Salad

There are different schools of thought on this. Most people choose waxy potatoes or new potatoes, which have a thin skin, and hold their texture better during cooking. All-purpose potatoes are also an option, though they tend to fall apart a bit, so if you are less interested in discrete chunks of potatoes and more interested in a creamier potato salad, these are a good choice.

And to that end, some people also like a firmer potato salad with potatoes that have a more al dente texture, and some like their potato salad a little on the mushier side. This not only depends on the kind of potato you choose, but also how long you cook the potatoes, and how vigorously you mix the potato salad, vs. folding the the potatoes into the dressing and the other ingredients more gently. I like both. This one turned is right in the middle, which is pretty perfect in my opinion.

Speaking of which. The only thing worse than a mashed potato salad is a crunchy one. To avoid undercooking your potatoes, make sure you start boiling them in coldwater. Why? Because dropping raw spuds in boiling water allows their outsides to get mushy before the insides are cooked through . On the flip side, to make sure you dont overcook them, remove your potatoes from the boiling water when theyre al dente, meaning just fork tender.

I live in Atlanta, where he grew up. He came to the South to visit his family a few weeks ago, and we got together to eat chips and dip and talk about octopus, lemon pepper and life. Eric is the smart guy who came up with a way to make chicken breasts tender using pineapple juice, but you might know him from his wildly popular sheet-pan bibimbap.
