This past weekend I made Ninja Foodi Pork Ribs and wanted to make an easy side dish to go with them. One of my favorite side dishes for anything barbecue is potato salad. Growing up, my family ate a lot of potato salad!

Theres just something so good about cold, fresh potato salad. This is my familys recipe. Its a bit different than the pre-made potato salad that you can buy at the grocery store. The main difference is the addition of sweet pickles. Every single time we make potato salad, my dad will add extra pickles..I think thats our favorite part! If youre not a fan of pickles, you can use celery instead. Both give a great crunch to the dish.

One of the nice things about making potato salad in the Ninja Foodi is that the diced potatoes keep their shape better than they do in a pot on the stove. When I cook the diced potatoes on the stove, I stir the potatoes to make sure they dont burn. The stirring causes the potatoes to crumble a bit. In the Ninja Foodi, there is no need to stir so they stay in perfectly cut cubes!

Potato salad can be served right away, or refrigerated until ready to serve. It’s best served the same day it’s made, but leftovers will keep for about 3 to 4 days .

How Long To Cook Potatoes For Potato Salad

Figuring out how long to cook potatoes for potato salad is the most challenging part of the process. In general, most potatoes boil in a specific cooking time range.

Keep the information in the back of your mind, though, that some types of potatoes are better for potato salad than others.

Baking potatoes, such as russet potatoes, Idaho potatoes, and sweet potatoes have a flour-like texture and disintegrate more quickly than others. These types are best for making mashed potatoes or a baked potato.

All-purpose cooking potatoes are somewhat ideal for making potato salad. These types of potatoes include Yukon gold and red potatoes. Boiling potatoes of this type lets them hold their shape without falling apart.

Waxy potatoes are lower in starch and excellent for potato salad, soups, and casseroles. Potatoes in this category are round red potatoes, fingerling potatoes, and new potatoes. If you are concerned about your carb intake, its nice to discover that the carbs in parsnips vs potatoes are much less and make a great substitute.

No matter what potato you decide to go with, there is an average length of time each one takes to cook. The size of the potatoes that you boil determines how long they cook.

If you boil red potatoes for potato salad or decide to go with other types of potatoes, the cook time is from 12 to 30 minutes.

What Are The Best Potatoes For Boiling

Because the starch content in potatoes differs from type to type, some are better for boiling than others depending on what you plan to make with them. The amount of starch in the potato can affect the texture, so use the right type of potato for the dish youre making.

    • High-starch Potatoes: Potatoes such as the Russet or Idaho, have a light, mealy texture. Once boiled, they are ideal for mashing.
    • Medium-starch Potatoes: Varieties such as the Yellow Finn and Yukon Gold, contain more moisture so they don’t fall apart quite as easily as high-starch tubers. They work well for mashing, adding to soups or casseroles, and serving as a side dish. They can also be used for potato salad.
    • Low-starch Potatoes: Potatoes such as the Round Red, Round White, and New Potatoes, are often called waxy potatoes. They hold their shape better than other potatoes when boiled, making them perfect for potato salads or tossing with seasoned butter as a side dish.

Test Kitchen Tip: Many people like to substitute sweet potatoes for standard spuds in their favorite recipes. Learn the best way to boil sweet potatoes to make the swap.

How To Boil Potatoes For Potato Salad

Now that you know roughly how long it takes to make cooked potatoes, youre ready to create the perfect side dish for your cookout. When learning how to boil potatoes for potato salad, always start by prepping the veggies.

The best way to clean potatoes is to scrub the potato skins with a clean produce brush to remove dirt and rinse them under cold water. Once the potatoes are clean, use a potato peeler or paring knife, if desired, to remove the outer skin.

Some people keep the skin on, which is also okay for most potato types. Once your potatoes are scrubbed and peeled, cut them into one-inch cubes to speed up the cooking time.

It only takes a few extra minutes for larger diced potatoes to cook through. Now that you have prepped them, its time to cook. Fill a large pot with water while the potatoes are in it.

Bring the water to a rolling boil and cook them for 12 to 30 minutes until cooked. The easiest way to tell if your potatoes are tender is to use a fork and stick it in the potato.

Drain the cooked potatoes in a colander and set them out of the way in a large bowl to thoroughly cool before using them in your potato salad recipe.
