This recipe calls for a combination of yellow and red cherry or grape tomatoes. The combination of red and yellow makes for a bright and colorful salad, but you can also use all red, or all yellow. Its also possible to make this salad by using regular garden variety tomatoes that are diced, but the juiciness may make the salad watery and the presentation will not be as beautiful.

What Cheese Fresh Mozzarella / Bocconcini

Caprese Salad is made with fresh mozzarella cheese. This is different to the mozzarella cheese you grate and sprinkle onto things to bake and melt.

Fresh mozzarella is soft, and unlike most cheeses, it is not salty. It has a flavour similar to ricotta though the texture is different.

In this particular recipe, I have used baby mozzarella, also known as cherry mozzarella or bocconcini. They are just small fresh mozzarella balls. I like using small ones because they are similar in size to the cherry tomatoes.

How Do You Make Cherry Tomato Salad

The hardest part to this tomato and mozzarella salad is attempting to not eat it while making it. Place your fresh tomatoes, red onion, mozzarella balls, and herbs in a large bowl and set aside. In a separate bowl, whisk together the ingredients for your dressing and pour it over the top of the tomato mixture. Lightly toss and youve got a tasty snack or side that only takes minutes to make.

If you prefer grape tomatoes, those work just as well but cherry tomatoes are usually my go-to. I think its really fun to get the colorful cherry tomatoes you usually find at the Farmers Market and use those in this tomato and mozzarella salad. It makes for quite a gorgeous side dish with little effort involved.

If you dont have parsley on hand, you can use basil, dill or chives instead and the flavor will still be amazing. If you want to further liven up your cherry tomato salad, a light drizzle of balsamic glaze is a great addition!

You must make caprese salad at least once at the peak of summer, when tomaotes are in all their glory. This is definitely not the salad to make with sub-par tomatoes.

Tomatoes, straight from the garden, are the order of the day. Theyre the best tomato variety for caprese salad.

But, without garden tomatoes, whats a girl to do with a major caprese craving?

To make a platter for entertaining youll need grape or cherry tomatoes, fresh basil leaves, and fresh mini mozzarella balls. You can find mini cheese balls in most grocery stores these days. If not, just cut a large ball of fresh mozzarella into bite-sized pieces.

Layer a mini cheese ball onto a toothpick followed by a fresh basil leaf and half a cherry tomato.

While youre assembling the skewers, pour 1 cup balsamic vinegar into a saucepan then let it simmer for 10 minutes, or until its the consistency of maple syrup. Start with the best fruity olive oil you can afford. When it comes to sautéeing, a lower priced olive oil is fine, but for finishing a dish and salad dressings I always use the the best extra virgin olive oils that wont break the bank. For dressings, I prefer a light and bright extra virgin olive oil with fruity notes.

Golden balsamic vinegar: Whats the difference? I use golden balsamic vinegar in this dressing because its slightly sweeter than regular balsamic and has a less caramelized flavor. With its lighter color, its also better for this salad because it wont add that brownish tinge. Rice wine vinegar can be substituted, or use regular balsamic vinegar if you dont mind a bit of color.

Use a jam jar or a mason jar to mix the dressing. The simplest way to emulsify a salad dressing without any mess Is to simply shake it up. Or, go basic with a fork or small whisk to meld the flavors together.

One clove of garlic in this balsamic dressing is surprisingly plenty. Dont underestimate the power of the clove. Just one clove of garlic flavors the pasta perfectly. Use a garlic press or finely mince the garlic so it spreads evenly into the salad.

How Long Should This Marinate For

You can let the tomatoes and mozzarella marinate for a minimum of 2 hours or even overnight . I dont recommend marinating for longer than 24 hours as the balsamic vinegar will start to break down the cheese and potentially change the texture. I find that the sweet spot for this recipe is marinating for about 6 to 7 hours for the best taste! Basically Ill make this in the morning and serve it later in the day Just make sure to take it out about 30 minutes to an hour before serving so that the salad can come to room temp first. As I said before, olive oil solidifies while in the fridge, so allowing it to come to room temp will return the olive oil to liquid form.

Can This Caprese Salad Be Made Ahead

For sure! You can prep this salad up to 24 hours in advance.

First, add tomato and mozzarella to a medium-sized mixing bowl. Next, make the dressing in a separate dish with olive oil, vinegar, garlic, salt, and pepper.

Basil is best served when fresh and once you tear it or chiffonade it will become bruised. Assemble the salad and add basil right before you are getting ready to serve. Toss ingredients and voila! One delicious caprese salad
