This homemade caesar salad dressing without raw anchovies puts store-bought dressings to shame! You can whip it up in a few minutes in your food processor using ingredients you probably already have on hand and create the best salad ever before you know it.

I created this to remind me of the kind of caesar salad dressing you get at a restaurant when they make it right at the table. EXCEPT, I wanted that same great taste but without anchovies.

Since I became a vegetarian about six years ago, Ive really missed out on good caesar salads when I cant find a good recipe without anchovies. So, I decided to make my own!

I got a new KitchenAid Food Processor and I used it to whip up this homemade caesar salad dressing in just a few minutes.

And let me tell you this dressing has BROUGHT ME LIFE!!!

How To Use This Homemade Caesar Salad Dressing

Its a staple in my kitchen. Not only do I use it with romaine for a caesar salad, it also makes a great dip. My favorite is dipping Gardein seven-grain crispy tenders into it. Yummmm!

I like keeping a mason jar of this dressing in my fridge so I can grab it and use it whenever I want.

Ive also made a Caesar pasta salad with it a few times and its one of my favorite meals.

I used rotini noodles, romaine lettuce, croutons, plant-based chicken, and lots of dressing to create the perfect meal ready to eat hot or cold.

I love that this is the kind of thing you can keep in the fridge to enjoy all week. Its also a crowd-pleasing meal because its a pretty universally liked dish!

How To Make Caesar Salad Dressing

Begin by whisking together the garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce. Next, whisk in the mayonnaise, Parmigiano-Reggiano, salt, and pepper. Thats all there is to it.

Dont Fight The Anchovies

Anchovies Or No Anchovies

I know, I know anchovies can be a bit off-putting. Normally I shy away from using them in most of my cooking, but for this dressing, it really adds a great depth of flavor. Without the anchovies, the dressing can taste really flat and one dimensional sort of like if you forget to salt your food while cooking it.

Instead of using anchovy filets, I use anchovy paste! You can usually find it in major grocery stores, and its shelf-stable .

Use Not One But Two Oils

When making a classic vinaigrette, using straight olive oil is highly recommended extra-virgin, if we are being specific. Youll truly enjoy the nuance of the oil when it has nothing but the vinegar to compete with. But thats not the case with Caesar dressing, which has garlic, additional fat from the egg yolk, and even the Parmesan cheese at the end to mask the flavor of a really nice olive oil.

For this dressing, were using a small amount of olive oil and then finishing with a neutral oil of your choice. Vegetable oil is called for below, but you can easily use grapeseed, canola, or any other neutral oil instead.

Make an anchovy-garlic paste.

Homemade Caesar Dressing Ingredients:

We all have Chef Caesar Cardini to thank for the inspiration for this recipe, whose famous salad used to be dramatically prepared table-side for guests at his restaurants back in the 1920s. The original Caesar dressing was said to have been made with Worcestershire sauce, but modern versions have amped up the flavor with the addition of whole anchovies, which I agree are an essential flavor in the more modern Caesar salad that I fell in love with growing up.

3 pasteurized large egg yolks
2 garlic cloves
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard

Its a lot more convenient to just buy all of those bottled Caesar dressings. After all, you can easily buy them at any grocery store. But lets be honest, theres nothing quite as tasty as a homemade dressing. I could have stopped making dressings after I made my ranch dressing and blue cheese dressing, but this collection wouldnt be complete without one of my top favorite Caesar Salad Dressing. Here are just three of the very few ingredients that you need to have:

Anchovies. These little guys can be off-putting at times, but a great Caesar dressing wouldnt be the same without that bold-flavor anchovy taste. Though many will claim that the original Caesar salad doesnt use anchovies, it certainly adds that depth of flavor. So to tone down a bit of the fishy side taste of anchovies, I decided to pair it with Worcestershire sauce, too.

Mayonnaise. The very reason why I had my doubts in making this dressing at home is due to RAW EGGS. But eventually I decided to drop the raw eggs out and replace it with mayonnaise as it contains lots of eggs, too.

Parmesan Cheese. For best results, I highly suggest that you use fresh and real Parmesan cheese to bring out that nice salty, tangy, nutty taste which is essential in this homemade dressing. If for some reason, you fail to secure some parmesan, you mayreplaceit with Dry Jack or Grana Padano.

Using Raw Egg Yolks Freaks Me Out What Can I Use Instead

If raw eggs give you the heebie-jeebies, swap the two egg yolks for three tablespoons of sour cream/mayonnaise. Make sure to use 6 tablespoons if you use mayonnaise!

Please keep in mind that if youre nursing, pregnant, or feeding this to small children, I suggest substituting the raw egg yolks for sour cream or mayo!

Though most people buy Caesar salad dressing in a bottle, homemade is incredibly easy to make and tastes so much better than store-bought. There are many variations but this rich and creamy version is the one my whole family loves. Its not too garlicky and not too fishy its just right.

Unlike authentic Caesar dressings which are made with olive oil and thickened with raw eggs, this one has a mayonnaise base, which means no raw eggs so you dont have to worry about giving it to your kids. And speaking of kids, mine love this dressing so much that theyve learned to make it themselves. They dont even wait for me to make a salad while I cook dinner, they sit at the kitchen table with a big head of romaine and dip the leaves in.

By far the most delicious Caesar dressing Ive ever tried . Its fantastic paired with this caesar salad. This recipe produces 1 1/2 cups of dressing . I bet it would make an awesome marinade too.

CREAMY CAESAR SALAD DRESSING EVERYTHING SAUCE RECIPE ...

To make this classic Caesar dressing recipe start with crushing the garlic into a soft oily paste and put it in a bowl.

Add the Worcestershire sauce, lemon juice, and the Dijon mustard. Take a whisk and stir it thoroughly until it is well combined.
