Chicken Breasts. Boneless skinless chicken breasts, are cut in half width wise so you have a thin piece of chicken. This makes it quicker and easier for cooking.
Romain Lettuce. Fresh crispy Romain lettuce is a must when making a Caesar salad.
Parmesan cheese. I prefer to have a block of parmesan cheese and shred it myself, but you can use pre shredded parmesan cheese found in the deli section of the grocery store.

Now that you have all the components ready, all thats left to do is compose the tacos!
- Measure out your chicken, lettuce and dressing.
- Toss. Take half your dressing and toss your chicken and lettuce in it until everything is lightly coated.
- Fill the taco shells. Fill the taco shells about ¾ of the way and drizzle with the remaining salad dressing.
- Sprinkle with bacon. Of course, Caesar salad wouldnt be complete without bacon on top!

This recipe is quick, easy, and filling. It can be served as a main dish, or you can omit the chicken and serve it as a side dish. For a short cut, rotisserie or leftover chicken can be used, if you have it.
Its a delicious alternative to a classic Caesar salad with all of the same flavors. Almond flour is used to make garlic flavored toasted crumbs to replace the croutons. You could also use low carb bread and make your own croutons, but its expensive and I dont often have it on hand. I always have almond flour, though.
The homemade dressing is made with all of the same ingredients as traditional Caesar salad dressing. This includes lemon, garlic, Parmesan cheese, anchovies, Dijon mustard, and a small amount of Worcestershire sauce. Mayonnaise is used in place of raw egg so there is no need to worry about salmonella.

Make the Parmesan crisps first. On a silicone mat , sprinkle little puddles of shredded Parmesan.
Place under a broiler and cook until melted, bubbly and starting to turn brown watch them carefully! Leave them to cool and crisp up, draining excess fat on a paper towel if necessary. If you want some more variations, check out these five Parmesan Crisps suggestions. You can also make them neater circles by making them in a mini muffin pan but if I’m just making this for me I don’t bother!
To make the dressing, combine mayonnaise, anchovy paste and Worcestershire sauce together in a bowl.
Mix some cooked chopped chicken into the dressing. Leftover roast chicken or cold rotisserie chicken is perfect for this recipe or you can also buy ready-cooked chicken.

- Whisk olive oil, oregano, and salt to a small mixing bowl. Place the chicken breast into a ziplock bag, pour the prepared rub, and seal the bag. Gently press the marinade around the chicken to coat evenly. Refrigerate and let marinate for at least 1 hour
- Make the dressing: Mix all the dressing ingredients to a bowl, cover and refrigerate until ready to use.
- Cook the chicken: Heat a large skillet or a grill over medium-high heat. Cook the marinated chicken for a cook for 8-10 minutes without moving. Avoid pressing and prodding. After 6-8 minutes flip the chicken and cook on the second side until golden brown, about 4-6 minutes more.

I love a good Caesar salad, especially come summer when I can use up some of our garden grown lettuce, which tends to grow in abundance, much like zucchini .
Caesar salad is traditionally a very simple salad of lettuce and croutons topped with a rich and creamy Caesar dressing. Parmesan cheese is often added, as well.
Being on a low carb diet, this salad would simply be lettuce or lettuce and Parmesan cheese, since croutons are off the table. Instead, I added grilled chicken to make it a more filling main meal, and garlicky almond flour crumbs to replace the croutons.
