How to Make Easy Cucumber Tomato Salad | The Stay At Home Chef

The key to making this salad is to select the best tomatoes and cucumbers at the grocery store. And I am also using one ingredient that makes salad special but you can omit it. Here is what you need:

  • Cucumber: I like to use either long English cucumber or pickle cucumbers. Select firm and plum ones.
  • Tomatoes: My preferred store-bought variety is tomatoes on the vine. During summer, any heirloom variety, beefsteak or Roma tomatoes in season will be great. Cherry or grape tomatoes are great too.
  • Onion: I prefer to use red onion or shallots in fresh salads, as they arent as harsh. But yellow or white onion would also work. Alternatively, you could omit it entirely.
  • Dill: Its a classic herb for Ukrainian cucumber tomato onion salad. Alternatively use parsley, cilantro, or scallions.
  • Olive oil: I like extra virgin olive oil for a more pronounced taste.
  • Toasted sesame oil: This is my secret ingredient that is reminiscent of unrefined sunflower oil we always used to dress up this salad. You can omit it and use more of olive oil, its not a deal breaker.
  • Salt and black pepper.

What Kind Of Cucumbers To Use

Rustic Tomato and Cucumber Salad

Im using the long English cucumbers in this recipe because the peels are nice and thin and the seeds are also really small and easy to eat.

If you dont have English cucumbers, you can easily use regular cucumbers that are peeled.

If the seeds are too coarse, feel free to scoop them out before chopping and adding to the salad.

Dressing For Cucumber Salad

Not much is needed here, as were really wanting to let the fresh flavors of the cucumbers, tomatoes and onions shine. Im using equal parts oil and vinegar because I simply adore how the vinegar really boosts the flavors.

  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper

PRO TIP: You can also use a white wine vinegar or apple cider vinegar in place of the red wine vinegar. Itll change the flavor slightly, but should still be amazing!

This is my all-time favorite summer salad. It’s easy to put together and highlights fresh homegrown tomatoes, cucumbers and herbs.

With a simple red wine vinegar and olive oil dressing, it comes together in just a few minutes. Tomato cucumber salad is my go-to for a barbecue or picnic.

This salad is so versatile. It’s easy to double or triple the recipe for a crowd and always gets rave reviews.

You can use whatever fresh herbs you have basil, mint, parsley or even cilantro. I used basil, but half basil and half mint is another favorite combination.

Appearance: Look for plump, heavy tomatoes with smooth skins. Avoid bruises, blemishes, or deep cracks, although fine cracks at the stem ends of ripe tomatoes shouldnt affect flavor.

Are they ripe? Ripe tomatoes should be fragrant. If they have no aroma at all, the tomatoes were probably picked too soon and will never ripen.

Storing: Fully ripe tomatoes are soft and yield to the touchyou should plan use them immediately. Cold damages tomatoes and stops ripening, so as a rule, dont refrigerate them, and dont buy tomatoes from a refrigerated case.

Ingredients For Cucumber Onion Salad

Any cukes will do the trick, but for best results, use English cucumbers . These are longer and thinner than salad or pickling cucumbers, and often come tightly wrapped in plastic. English cucumbers also have thinner skins and a sweeter taste then salad cucumbers, and the seeds are smaller.

If you are using regular salad cucumbers, you will want to remove all or most of the peel and seeds, as these tend to be bitter and a bit tough. Many people also dislike the wax coating that is used on grocery store cucumbers to keep the product fresh longer. Youll want to peel to remove this coating, or you can try soaking the cucumber in vinegar for several minutes and wiping the surface clean.

Vinegar

  • Rice vinegar is a good choice, its a little sweeter and less tangy than white or cider vinegar, and wont discolor the cucumber or onion.
  • Cider vinegar is a great option and adds a bit extra flavor and tang.
  • White Balsamic is also a way to boost the complexity of the flavors. It pairs well with tomatoes so feel free to toss a few in before serving and make it into a cucumber tomato salad.

Cucumber Salad is a delicious summery blend of cucumbers, dill, and dressing! With a dressing made of sour cream, mayo, and vinegar, youve got the basics down! Its just seasonings and a dash of sugar from there!

CUCUMBERS:

I prefer long English cucumbers for this recipe as they are thin skinned and dont require peeling .

If using regular field cucumbers, the skins can be tough so Id suggest peeling them or at least peeling some strips. The seeds on field cucumbers are larger so I often cut them in half and scrape the seeds out to keep the salad from getting watery.

ONIONS: White onions are optional but add great flavor to this cucumber salad. Pick onions with the white papery skin as theyre a little bit milder. Thinly slice the onion and soak it in cold water while preparing the salad to take off a little bit of bite from the onion.

For a heartier version, stir in some shredded cabbage. Scoop it into a wrap for a quick and refreshing vegetarian lunch!

How To Make Creamy Cucumber Salad

This creamy cucumber salad starts with fresh crisp cucumbers.

  • Peel the cucumbers if desired and seed if using field cucumbers.
  • Slice into ¼ inch pieces.
  • Mix together the remaining ingredients and gently stir in the sliced cucumbers.
  • Refrigerate one hour before serving. Garnish with chopped dill.

    TIP: While its optional, scraping out the seeds of the cucumbers will keep the salad from getting watery. If using smaller cucumbers, its not necessary to scrape them.

    I was given charge over babysitting all 30-something tomato plants this spring while my parents were on a two-week vacation. I didnt realize how important the tomatoes were until I almost killed the lot of them. Ok, it wasnt me, it was a very gusty wind!
