Ingredients You Will Need
The key to making this salad is to select the best tomatoes and cucumbers at the grocery store. And I am also using one ingredient that makes salad special but you can omit it. Here is what you need:
- Cucumber: I like to use either long English cucumber or pickle cucumbers. Select firm and plum ones.
- Tomatoes: My preferred store-bought variety is tomatoes on the vine. During summer, any heirloom variety, beefsteak or Roma tomatoes in season will be great. Cherry or grape tomatoes are great too.
- Onion: I prefer to use red onion or shallots in fresh salads, as they arent as harsh. But yellow or white onion would also work. Alternatively, you could omit it entirely.
- Dill: Its a classic herb for Ukrainian cucumber tomato onion salad. Alternatively use parsley, cilantro, or scallions.
- Olive oil: I like extra virgin olive oil for a more pronounced taste.
- Toasted sesame oil: This is my secret ingredient that is reminiscent of unrefined sunflower oil we always used to dress up this salad. You can omit it and use more of olive oil, its not a deal breaker.
- Salt and black pepper.

If the seeds are too coarse, feel free to scoop them out before chopping and adding to the salad.

How To Make The Best Tomato Onion And Cucumber Salad
Adam came up with this salad at the beginning of summer, and weve been making it ever since. If you meal prep, this is the perfect salad to have in your fridge to add crunch, color, and flavor to meals. You can serve it with just about anything. Really. Take a look below for some suggestions.
The salad is simple to make mix finely diced tomatoes, sweet onion, and cucumbers. Stir in lots of fresh parsley and finish with a simple vinegarette.
Start with some vinegar then whisk in a bit of Dijon mustard, honey, salt, pepper, and olive oil. Its fresh, light and works beautifully with the juices from the chopped tomatoes and cucumber.
The salad keeps covered in the fridge for two to three days. As it sits, juices from the tomatoes, onion, and cucumber mingle with the dressing, making it taste even better. I love the juices at the bottom of the bowl so much I eat it with a spoon.
Weve been making this all summer long. Its delicious on its own, but our favorite way to enjoy it is as a salsa. We eat it for breakfast, lunch, and dinner.

Tips For Choosing And Storing Tomatoes
Appearance: Look for plump, heavy tomatoes with smooth skins. Avoid bruises, blemishes, or deep cracks, although fine cracks at the stem ends of ripe tomatoes shouldnt affect flavor.
Are they ripe? Ripe tomatoes should be fragrant. If they have no aroma at all, the tomatoes were probably picked too soon and will never ripen.
Storing: Fully ripe tomatoes are soft and yield to the touchyou should plan use them immediately. Cold damages tomatoes and stops ripening, so as a rule, dont refrigerate them, and dont buy tomatoes from a refrigerated case.

Any cukes will do the trick, but for best results, use English cucumbers . These are longer and thinner than salad or pickling cucumbers, and often come tightly wrapped in plastic. English cucumbers also have thinner skins and a sweeter taste then salad cucumbers, and the seeds are smaller.
If you are using regular salad cucumbers, you will want to remove all or most of the peel and seeds, as these tend to be bitter and a bit tough. Many people also dislike the wax coating that is used on grocery store cucumbers to keep the product fresh longer. Youll want to peel to remove this coating, or you can try soaking the cucumber in vinegar for several minutes and wiping the surface clean.
- Rice vinegar is a good choice, its a little sweeter and less tangy than white or cider vinegar, and wont discolor the cucumber or onion.
- Cider vinegar is a great option and adds a bit extra flavor and tang.
- White Balsamic is also a way to boost the complexity of the flavors. It pairs well with tomatoes so feel free to toss a few in before serving and make it into a cucumber tomato salad.
Cucumber Onion Salad pairs nicely with spicy meats, such as marinated chicken or lamb skewers or even Chicken Curry.
Whats In Cucumber Salad
Cucumber Salad is a delicious summery blend of cucumbers, dill, and dressing! With a dressing made of sour cream, mayo, and vinegar, youve got the basics down! Its just seasonings and a dash of sugar from there!
I prefer long English cucumbers for this recipe as they are thin skinned and dont require peeling .
If using regular field cucumbers, the skins can be tough so Id suggest peeling them or at least peeling some strips. The seeds on field cucumbers are larger so I often cut them in half and scrape the seeds out to keep the salad from getting watery.
ONIONS: White onions are optional but add great flavor to this cucumber salad. Pick onions with the white papery skin as theyre a little bit milder. Thinly slice the onion and soak it in cold water while preparing the salad to take off a little bit of bite from the onion.
For a heartier version, stir in some shredded cabbage. Scoop it into a wrap for a quick and refreshing vegetarian lunch!

Yes Mayo Really Does Make The Best Dressing For Cucumber Salad
This salad is somewhere in between a tangy, vinegar-based cucumber salad and a rich and creamy one made with sour cream dressing. And thats all thanks to the mayonnaise-based dressing. Mayo has a delightfully sweet tang thats different from the tang of sour cream or Greek yogurt and a little goes a long way. This salad needs just a little bit of dressing to coat the vegetables. When left to sit before serving, the liquid from the cucumbers and tomatoes thins the dressing and mellows it slightly.

I was given charge over babysitting all 30-something tomato plants this spring while my parents were on a two-week vacation. I didnt realize how important the tomatoes were until I almost killed the lot of them. Ok, it wasnt me, it was a very gusty wind!
The tomato plants were brought to my house in a portable greenhouse. I noticed that the wind was picking up so I set David down to play with some toys and went outside to pull the greenhouse into the garage.
You can imagine my horror when I saw that the whole greenhouse had tipped over, all of the plants had come out of their pots and were scattered across the lawn. The entire families organic vegetable crops ruined!! I frantically tried to rescue the tomatoes, but realized I couldnt do it myself, not with David in the house by himself who knows what kind of wails he would be producing. Anyway, I called my sisters to come help.
We replanted them best we could they looked rather limp. I even prayed over the tomatoes that night . Long story short, all but two of the tomato plants survived. Funny though, the cucumbers and melons looked the same, so when they got planted in the garden, there were some cucumbers springing up with the melons.

Different variations of this Cucumber and Tomato Salad have been floating around forever some with parsley instead of dill, some where you sweat the cucumbers to draw out any excess moisture, and some even with a creamy dressing instead of a vinaigrette. But I love this version the best.
Heres what youll need:*Scroll down for the complete printable recipe card.
- Cucumbers Persian, English, or Waxy cucumbers all work for this salad. Use your favorite or whatever is most available. You can leave the skin on or peel them, which is a personal preference.
- Tomatoes I prefer Roma tomatoes because they contain less water than beefsteak tomatoes, but either work. You could even use cherry tomatoes, cut in half.
- Red onion Red onions are milder in flavor than yellow onions when raw, plus their deep color is so pretty in salads, like this one.
- Apple cider vinegar This is used for the brine and provides a tangy flavor. Rice vinegar can be substituted.
- Granulated sugar Sugar lends balance to the vinegar. Without it, the dressing will be too harsh.
- Kosher salt, pepper, and fresh dill Fresh dill is the way to go for this salad for optimal flavor. Skip the dried.
- Feta cheese, optional Sometimes we add feta cheese for another layer of texture and flavor, but this salad is wonderful without it.
Light and refreshing, its always a hit at gatherings! This salad pairs perfectly with grilled chicken!
