How To Make The Pasta Salad From Scratch

This is SUCH an easy recipe and so quick to make! Its just chopping up fresh veggies, boiling some gluten-free pasta, and tossing everything together in one BIG bowl!

  • Boil the gluten-free rotini according to package directions, minus about 2 minutes to keep the noodles from getting mushy.
  • In the meantime, chop ALL the vegetables and toss them into a bowl.
  • Drain and rinse the pasta to stop the cooking process and quickly cool the noodles down, before adding them to the chopped veggies.
  • Measure out the Italian dressing ingredients, pour and sprinkle them into the bowl, and give everything a really good toss to coat and combine.
  • Let the pasta salad marinate and chill in the fridge for at least 30 minutes before serving. Preferably let the cold pasta salad sit in the fridge overnight and serve it the next day for optimal deliciousness.

    What Is Xanthan Gum

Let me start by saying that this is an optional ingredient for this recipe and I give instructions on what to do if you dont have it, so no need to worry if you dont want to pick it up!

Xanthan gum is a natural thickener that most grocery stores carry . Its often used in gluten-free bread products, but it works really well for dressings, too! I love that it not only thickens this dressing , but it also keeps it from separating in the fridge!

A little goes a long way and I was just eyeballing it before , which worked perfectly fine, but I saw this neat measuring spoon set and had to pick it up! It includes odd measurements like a spoon measuring 2 teaspoons, a 3/4 teaspoon and a 1/16th teaspoon!

    Olive Garden Italian Dressing Recipe

I thought I would bring you a little restaurant indulgence this week and I am really excited to finally share this recipe with you! It is one that I have been tweaking and working on over the last couple years and this fall I finally got it.

Olive Garden probably isnt the fanciest restaurant in the world, but I think everyone would agree they totally nailed it when they created their house salad dressing. It is so addicting! And conveniently too, considering they do that whole all you can eat salad thing before your dinner comes!

When they started selling their famous salad dressing by the bottle I used to save up to buy it . But really that bottle that I thought I was being so healthy pouring over a nice salad for lunch, was full of blood sugar spiking high fructose corn syrup, and toxic, rancid soybean oil, among other additives.

I started making my own salad dressings when I started my real food journey years ago, and as it turns out, many popular dressings at the store like Ranch, French, and Thousand Island are so fast to make at home with safer, more nourishing ingredients. This dressing comes together super quick and truly tastes just like the one from the restaurant! Dont be afraid to serve it to the kids too I pack it in my kindergarteners lunch and my 3 year old devours it and likes to use it for dip with veggie sticks.

People that we know have warned us not to dine here but we had to try this restaurant to see for ourselves. Well we arrived in mid- afternoon for a early dinner and the restaurant was very crowded but we only waited about 15 minutes to be seated. When we were seated the table was not properly set up and the floor around the table was dirty. When our waitress came to the table we were not told about the specials or offered wine which was strange for a Olive Garden Resturaunt. The waitress asked us if we knew what we wanted for dinner and took our order. She returned with our drinks, soup and breadsticks but did not bring bread plates. It was not soon after that she brought our dinners and we had not yet finished our soup and salad. After she served our dinners the waitress never returned to check on us, clear our soup and salad plates until she came with the check. Needless to say we will never return to this resturant because of the poor service.

Paying the price for eating Minestrone soup and salad at Olive Garden tonight! Wheezing and lung congestion! Hopefully I wont pay a higher price later tonight! My regrets! Next time I will say pass on this restaurant as there is such a limited menu! Tried to satisfy my 88 year old mother that is tired of her lockdown at the assisted living home.

Ive enjoyed eating dairy-free at Olive Garden a few times now. I usually get some sort of pasta with the meat sauce Im not vegan, just have a milk protein allergy. So yesterday I decided a little more meat was in order and asked for 3 meatballs. Found out this morning at the mirror that Id obviously gotten into some dairy somewhere. Googled, found your site, and the culprit is the meatballs. Oh well, live and learn! Also, if you are eating in the restaurant, they usually bring the salad already tossed with their signature dressing. The dressing is NOT dairy-free, so youll need to ask them to bring it on the side.
