Once the potatoes have begun boiling, turn the heat to medium and simmer until the potatoes are tender, which usually takes around 10 minutes or so. Pierce them with a fork to test for doneness.

Second Step: As the potatoes are simmering, microwave the sugar and vinegar in s small bowl for 30 seconds or until the sugar dissolves. Using a food processor, add the vinegar and sugar mixture, mustard, one hard-boiled egg yolk, celery seed, and salt. Pulse until its mixed smooth then transfer to a medium bowl. Remove two tablespoons of the mixture and set aside.

Third Step: After the potatoes are done, drain them and transfer them to a large bowl. Drizzle the 2 tablespoons of dressing over the pot potatoes while using a spatula. Gently give them a few tosses to make sure they are evenly coated. Allow the potatoes to sit in the fridge for 30 minutes until they are cooled down.

I know everyone has their own special potato salad formulation but if you are open to experiment, this is a great one to try! I’ve seen this recipe posted online, but it was first sent to me by an Amish woman from the Ronks, Pennsylvania area. This is a potato salad with a classic Pennsylvania Dutch culinary influence. The apple cider vinegar and yellow mustard are tell-tale signs.

The big difference in this potato salad from others is one minor detail: size.

I mean, most of my life Ive had potato salads that are basically diced potatoes tossed in a mish-mash of mustard, mayo, eggs, sometimes both. But this Pennsylvania Dutch Chunky Potato Salad is almost like a deconstructed potato salad. In other words, you can see and enjoy the pieces because they arent all mish-mashed together. You can actually take a forkful of potato swimming in flavor and enjoy it. Theres nothing wrong with more traditional potato salads, but this just something a little different.

I used russet potatoes for my Amish potato salad. Theyre starchier than most potatoes and soak up the dressing quite nicely.

Because of the high starch, they do have a tendency to fall apart more easily, so you want to be extra careful you dont overcook your potatoes.

How To Cook Hard

For the eggs: I like to use room-temperature eggs to make hard-boiled eggs because they will peel a lot easier. If you have ever boiled cold fresh eggs, you will know what I mean when I say they are a pain to peel. I hate peeling an egg that falls apart when Im trying to remove the peels. So I usually let my eggs sit on the counter overnight so that they will be easier to peel. Boil the eggs, covered in water, for 9 -10 minutes. Remove from the heat, drain water, and chill them in ice water. Gently crack the eggs, peel, and rinse.

If you dont have an egg slicer, cut your eggs into little chunks with a knife. I like to use my egg slicer. I put the egg through both ways, creating little shreds of eggs.

When I mention this recipe, Im often asked the difference between Amish potato salad and regular potato salad.

Both versions use potatoes, hard boiled eggs, and a creamy mayonnaise dressing.

However, Amish potato salad has a sweet and tangy dressing. The ingredients are real mayonnaise , yellow mustard, vinegar, sugar, and smoked paprika.

I love mayonnaise but hate Miracle Whip, which has less vegetable oil and isnt qualified to be called mayonnaise .

I highly recommend using real mayonnaise, but if you prefer the taste of Miracle Whip, you can use that instead. Please note Miracle Whip is a bit sweeter than mayo, so you may need to taste and adjust the dressing.

You may refer to this recipe as simply, potato salad. However, we consider it our favorite type of potato salad. Plus the name has a special connotation for us.

You see, we live just one hour south of one of the largest Amish communities in the country. Over the past several years we would visit the area often.

And every time that we stopped at a local market, you could be sure to find a huge display of meat and deli salads. The most popular being, of course, Amish Country Potato Salad.

It is sold in a square plastic container and the bright yellow color quickly catches your eye.

And it seems like every visitor that walks picks up a package and places it in their cart.

On one of our many visits, we decided to try it out for ourselves. When we got home and took our first bite, we knew that it was something special!

Jim isnt a huge fan of potato or macaroni salad. In fact, he doesnt prefer anything mayonnaise based at all. However, he even went for a second helping of this potato salad!

And this week, since we havent been to Amish country in several months, we decided that we would make our own version!

What Potatoes Are Best For Amish Potato Salad

Well, for this salad, you will need potatoes that are starchy yet firm. So, the perfect choice is the russet potatoes. Furthermore, you can also use Yukon gold potatoes. Peel the potatoes cut them into equal cubes, and place them in boiling water. Let them boil for about 7 minutes or until they are cooked but not mushy. Drain the potatoes, cool them, and add to the salad.

Will Potato Salad Freeze Well

You can freeze potato salad, however, it likely wont retain the same consistency. You need to be especially careful when thawing it, because it can easily become mushy. Make sure you freeze it in an airtight container.

In order to thaw it, place the container in a refrigerator and allow it to defrost slowly in there.

How To Make Amish Potato Salad

Making the best Amish Potato Salad is easy! First things first, start cooking the potatoes.

The best way to cook potatoes is to put them in a large pot, cover them completely with cold water, add some salt, then bring to a boil.

This method ensures the potatoes are cooked all the way through. If you were to add them to boiling water like you do with pasta, the outsides would cook while the insides would still be hard. By the time the insides would cook, the outsides would be mush.

Once the water boils, turn the heat down to a simmer. Potatoes are fragile and if you continue to cook at a rolling boil, the speed of the water will throw them around, causing them to disintegrate and fall apart.

While you wait for the potatoes to cook, whisk together the dressing and prep the vegetables. By the time the potatoes are finished, everything is ready to assemble.

This is also the perfect recipe to use up those hard boiled eggs you may have leftover from Easter.

At this point, the potatoes need to be dry and cool. Rinsing them under cold water will not only help stop the cooking process, itll cool down the potatoes.

If the potatoes are too hot when tossed with the mayonnaise based dressing, the dressing will melt and split.

Make sure you leave enough time to chill! Refrigerate it for at least 24 hours to allow the flavors to develop. However, if youre in a hurry to serve, chill for at least 1 hour minimum.

Can You Make Potato Salad The Day Before

Yes, you can make potato salad a few days before serving. In fact, I recommend letting the potato salad chill in the refrigerator for 24 hours to allow the flavors to develop.

As long as its properly stored in an airtight container and not left sitting out for more than 2 hours, Amish potato salad can last about 3-4 days.
