When I am asked, what to serve with grilled chicken or burgers, almost always I will say potato salad! Its a staple in our house during summer. My Instant Pot Potato Salad is always a hit! However, I do know that there are many people who just dont like mayo.

Can I Make Mayo

Potato salad actually tastes best if made in advance! Preparing your potato salad in advance allows the flavors a chance to meld and marry. Since the flavors will intensify with time, I recommend making potato salad at least 1-2 hours in advance.

However, waxy potatoes such as red skin or fingerling have less starch and retain their shape better during boiling. If you are using russet potatoes, make sure you do NOT continuously boil the chopped potatoes or they will fall apart.

    Why Does My Potato Salad Gets Watery

    There is nothing sadder than a watery potato salad! To avoid a water-logged salad, follow these tricks:

    • Cut the potatoes into chunks, halves or quarters. Cut potatoes will cook faster and more evenly than whole potatoes. Whole potatoes have a higher chance of the outside turning to mush before the inside is finished cooking which can result in a watery potato salad. With that said, do not cut your potatoes too small or they will have a higher chance of overcooking and turning mushy!
    • Drain the potatoes thoroughly. Make sure you thoroughly drain the potatoes in a colander before adding any dressing. If your potatoes still seem watery, drain the potatoes and then return them to the pot. Place the pot on stove over LOW heat for minute to cook out any extra water clinging to the potatoes. Make sure you stir the potatoes and be careful to not overheat the potatoes or they will turn mushy.
    • Add vinaigrette dressing to warm potatoes. Do not allow the potatoes to cool completely before adding the olive oil based dressing. Warm potatoes will soak up the dressing better than cool potatoes. Cool potatoes will repel the dressing and result in a watery salad.

    • Double the recipe. This one goes fast because it doesnt make a huge serving, and if youre feeding a crowd, you definitely need more than one batch of this goodness!
    • Make it ahead of time in pieces. This no mayo potato salad doesnt keep super well in the fridge, so I like to make it incrementally and store all the pieces until I can throw them together right before guests arrive. Hardboil the eggs and potatoes, then drain, cool and store them. Chop the celery and green onions. Make the dressing, too, and store everything in the fridge. About 30 minutes before guests arrive, let the dressing come to room temperature and right before youre serving food, throw the easy potato salad together.
    • Dont serve it too early. Because this potato salad has hardboiled egg in it, it cant sit out for hours on end. I like to throw it all together right before its time to eat, allowing my guests plenty of time to have a serving or two of it.

    Cook the potatoes. Slice them into ½ rounds, as if you were making potato chips. Place them in a saucepan full of cool water, then heat until boiling. Cook until fork tender, then drain and set aside to cool.

    Make the mustard vinaigrette. Combine the olive oil, vinegar, garlic, dill, mustard and honey in a mason jar. Shake to combine. Taste and season with salt and pepper, then set aside.

    Make the potato salad. Combine the cooked potatoes, eggs, celery and green onions. Toss lightly with tongs, and pour half of the dressing on top of them. Toss again, then add more dressing if desired, and serve immediately.

    This delicious vinegar based Potato Salad without Mayo was my grandmothers recipe. Passed down to my mom, whom passed it down to me. This classic potato salad recipe is sure to be a hit at your next barbecue!

    There is no denying it. I love potatoes, and when I made the bbq beef brisket I knew I wanted to serve a potato salad with it. I called my mother to find out how to make her moms Potato Salad without Mayo. My mother graciously told me what ingredients I needed however, its one of those unwritten recipes and because of this she had no measurements to give me. I had to figure it out on my own.

    Can I just tell you how excited I was when I nailed it on the first try! Because I was making the potato salad to accompany dinner I was able to lure my mother over for a late dinner once she was off from work. When she got to my home and saw the potato salad she then realized she forgot to tell me one extra ingredient! Mayonnaise.

    At first, I was angry that she failed to tell me that key ingredient however, I had already taste tested some of the potato salad and knew it was spot on. I could have sworn that I never remembered this potato salad having mayonnaise in it. But then again, it had been many years since my mom had last made it.

    After my mom took her first bite she was beyond pleased, and actually liked my version better than her own mothers. This recipe is perfect for the non-mayo lover in your life!

    How To Make Potato Salad Without Mayo

    Because we are using small red potatoes that dont need to be peeled, this no-mayo potato salad is a snap to make.

    Give the potatoes a light scrub to clean, then put in a pot of cold water covering them by about 2 inches.

    Bring to a boil, THEN season your cooking water with salt to flavor the potatoes as they cook. Adding the salt after bringing to a boil means the salt crystals dissolve quicker and reduces the chance of your pans becoming pitted.

    Tip: Dont cut your potatoes before boiling them. For potato salad, always cook your potatoes whole. Less surface area of the tender whites of the potatoes are exposed to the water so theres less chance of them becoming mealy or crumbly.

    Once cooked, slice the potatoes in half and while still warm, drizzle with white wine vinegar so the potatoes absorb the vinegar tang. Let the potatoes cool for 15-20 minutes and absorb the vinegar.

    Whisk the olive oil with the remaining vinegar and a touch of Dijon mustard, kosher salt and freshly ground black pepper. Drizzle over the potatoes then add the onion, freshly chopped herbs and toss to mix.

    Onion always adds a much-needed snappy bite to potato salad. Who wants bland? Not me. These onions just get sweeter and more delicious as they marinate in the olive oil dressing. This is a classic second day potato salad that stays good to eat for a lot longer.

    Enjoy the leftovers over a bowl of fresh spring greens with grilled salmon or grilled chicken for a simple lunch.

    Why Use Vinegar In Potato Salad

    Potato salad will taste bland unless the potatoes are properly seasoned. Adding acid, specifically vinegar, to potato salad will help brighten up the flavor. You should layer the vinegar and add it to both the cooking water and to the cooked potatoes while they are still warm.

    Pro-tip: Vinegar is especially needed if you are serving your potato salad cold! As a rule of thumb, cold foods need to be seasoned more generously than foods served warm.
