Yowzer! This is about as far as you can get from bland, boring salads. Im a huge fan of Asian salads because they are typically much lighter and fresher than many Western ones, and the dressings pack a great flavour punch.

And this one is no exception. Its a chilli-lime Thai dressing that has that South East Asian signature sweet-salty-tangy balance with a little buzz of heat from chilli.

I know it looks really spicy because its red. But actually, its not that spicy because I make this using a store bought Chilli Garlic Sauce. You wont find me eating this by the spoonful but actually, its not that spicy, it looks more dangerous than it is in reality. Go on, have a taste test! 1 teaspoon of this doesnt even have the same amount of spiciness as 1 Thai or Birds Eye Chilli.

Chilli Garlic Sauce is a terrific trick for thickening dressings / sauces in the same way mustard does in Western dressings, as well as adding spiciness / garlic + some tang because its not just made with garlic and chilli. Its pretty common nowadays, sold at all the supermarkets here in Australia in the Asian section. But dont worry if you cant find it, Ive provided plenty of alternatives in the recipe , fresh chillies, chilli paste, sambal oelak loads of options!).

Ah yes, I almost forgot. The spice-adverse may be alarmed to see yet more chillies in the photo above the finely sliced red chillies.

    The Asian salad dressing I use in this salad is based on a recipe by David Chang of Momofuku. Its made with all manner of Asiany ingredients soy sauce, rice vinegar, sesame oil, garlic and ginger but theres plenty of flex here which Ive jotted down in the recipe notes.

    I love the fresh hit of ginger and garlic in the dressing but I quite often make this salad using my standby simple Asian Sesame Dressing. Made with just soy sauce, sesame oil, vinegar, oil and sugar, it keeps for days, weeks even. It would be unusual if I didnt have a jar of this lurking in the dark depths of my fridge at all times!

    I think the thing that really seals the deal for me about this Chinese Chicken Salad are the crunchy noodles. I just use Changs Fried Noodles which are often on sale at the supermarket for around $1. Any brand will do the thin ones Ive used or even the wider ones. Just as long as theyre crunchy!! Nagi x

    PS This is a terrific do-ahead meal. The chopped veggies stay fresh for days in the fridge Ive kept them for 5 days in an airtight container and shredded chicken can be frozen. The only thing to add fresh is the ginger and garlic in the dressing.
