We use white potatoes, or Yukon Golds, in our familys recipe. Because they have a thinner skin, theyre easy to peel after boiling and taste creamier, a little sweeter, and hold their shape well after cooking. Avoid using starchier potatoes like russets that too easily turn to mush in salads like this.
Also remember to choose potatoes of the same size for the most consistent cooking.

Tips For Making The Best Potato Salad
- Boil the potatoes the same day you are serving the salad. Boiled potatoes are not as nice the next day.
- To check that the potatoes are properly cooked you can pierce them with a knife. The knife should go through the potato smoothly.
- Do not cook the potatoes too much otherwise, they will mash when stirring the salad.
- Cut the potatoes in small squares about 1 in – 2.5 cm the have the perfect balance between potatoes and dressing. Too big and the potatoes will not be nicely seasoned.
- Let the potato salad rest for at least 1 hour so the potatoes have the time to absorb the flavours
- Instead of boiling the potatoes you can also steam them. I steam the potatoes in the pressure cooker or the microwave

Grandma Cookie doesnt specifically say what kind of potatoes to use in her classic recipe for potato salad.
Technically, a great potato salad recipe should use waxy potatoes for potato salad .
But I think you could probably get away with whatever type of potatoes you like the best, or even a mix of Russet and Yukon Gold Potatoes.
Ive used Russet and Yukon Gold and had success with both, but think that Yukon Gold yield the best results in this easy recipe for mayo potato salad.

Tips For Storing Potato Salad:
Dont double dip silverware, serving utensils, or stick hands or fingers in the bowl of potato salad. Any contamination can transfer germs that will breed bacteria.
Refrigerate potato salad as soon as the meal is over, preferably within an hour of serving. Letting the potato salad sit out for ours at room temperature is unsafe and will cause it to spoil faster.
Store leftovers in an airtight container or at least cover the bowl of potato salad tightly with plastic wrap.
