How To Make Crispy Chicken Salad
Its not hard to make! Just mix up some buttermilk and spices with an egg, toss in your fried chicken, and let it marinate a while.
Then add all your dry ingredients to a ziplock bag. You only need to put it in a bowl if you plan to take a picture of it and post it on the internet so that people know what tempura mix looks like. The tempura mix is on the right in the bowl of dry ingredients, and looks just like flour. It gets you the crispiest fried chicken! But flour will do if you cant find it. Beside the bowl on the right is the dry chicken bouillon I used. It adds great chicken flavor!
Add the chicken to the bag of dry ingredients and shake it up. Then stick it in the freezer while you let your oil heat up! Cold batter going into hot oil makes for the crispiest fried chicken, especially when using tempura batter. It also helps the batter stick to the chicken a little better.
Then fry em up! Deep frying in a pan is not as intimidating as it seems. And it really only takes 20 minutes or so. And its SO GOOD.
Then chop up all your veggies and devour!!

- 6 boneless skinless chicken thighs
- 1/2 cup Balkan-style yogurt or buttermilk
- 2 cloves of garlic , minced
- 1/2 teaspoon salt
- 1 1/2 teaspoon cumin seeds , crushed
- 1 1/4 teaspoon ground coriander
- 3/4 teaspoons chili powder or ancho chili powder
- 1 head Boston or Bibb lettuce , torn
- 1 bunch watercress
- 4 cocktail tomatoes , cut in wedges
- 3 mini cucumbers , cut in spears
- 3 hard-cooked eggs , quartered
- 1/4 cup thinly sliced red onion
- 2 tablespoons olive oil
- 3 tablespoons each chopped chives , dill and parsley
- 1 teaspoon Dijon mustard
- 1 teaspoon white wine vinegar
- 1 small clove garlic , minced
- 1/2 teaspoon pepper

Method
Preheat oven to 425°F. Line baking sheet with foil.
Combine chicken, yogurt, garlic and salt in shallow baking dish. In small skillet, stir together cumin seeds, coriander and chili powder cook over medium-low heat, stirring, until fragrant, 1 to 2 minutes. Sprinkle spice mixture over chicken, stirring to coat. Let stand for 20 minutes.
Ranch Dressing Meanwhile, in small bowl, whisk together buttermilk, mayonnaise, chives, dill, parsley, mustard, vinegar, garlic, pepper and salt until combined. Refrigerate.
On large platter, arrange lettuce, watercress, tomatoes, cucumbers, eggs and red onion. Cover and refrigerate.

- How to cook chicken breast: If you don’t have any leftover chicken breast to top on this salad, you can easily make it. Just season both sides of the chicken generously with salt and pepper . Heat 1 tablespoon of vegetable oil in a cast-iron skillet over medium heat. Add the chicken and cook for about 4-7 minutes on each side, until the chicken is fully cooked and is no longer pink inside, and the internal temperature reaches 165F as read on a meat thermometer. Let the chicken cool for about 10 minutes and then cut it into slices.
- Make ahead instructions: To make this salad ahead of time, I would suggest prepping and chopping the vegetables and storing in an airtight container . If you are making dressing from scratch, make it and store in a separate airtight container. When ready to serve, add croutons and pour the dressing on top and toss.
- How to store: Chicken garden salad is best served fresh. If you happen to have any leftovers, store in an airtight container in the refrigerator for up to 3-4 days. Eat all the croutons before storing as they will get mushy.

Here is what you need:

- bacon again, I love ButcherBox for pasture raised and Whole30 bacon
- romaine
- dried parsley

First start off by cooking the bacon. Heat a large nonstick saute pan over medium heat and add bacon and sprinkle with pepper. Cook for 10 minutes, flipping once halfway through, until crispy.
Set the bacon aside to cool and remove all but one tablespoon of the bacon grease from the pan.
Next mix together the garlic powder, dill, parsley, and salt and pepper in a small bowl. Season the chicken with the spice mixture. Add chicken to pan and cook for 15 minutes, flipping once halfway through, until golden brown and cooked through. Set aside to cool.
