Simply Foods: veggie chicken salad with tofu ranch dressing

This recipe still has all the basics found in a classic chicken salad and adds a fun twist of bacon and ranch dressing!

  • Chicken: Use grilled chicken for that unmistakable outdoor flavor, or use leftover chicken from last nights roast chicken dinner, and get two meals for the price of one!
  • Herbs & Spices: Parsley, dill, and seasoned salt. Make your own homemade seasoned salt, or use Mrs. Dash or another favorite.
  • Mix-Ins: Bacon, green onions and celery. Celery is optional but adds a delicious crunch!
  • Dressing: Ranch dressing, mayo, and a bit of mustard make the creamy and zesty base.

Kale And Romaine For Delightful Texture

While leafy green vegetables are usually just a topping for traditional Tex-Mex cuisine, here we use them as more of a base. The darker the leaves, the more nutrient-rich the greens so our recipe specifically calls for kale and romaine lettuce. Mixed together, these leafy greens bring delightfully crunchy texture, hearty flavor and superior nutrition to the salad bowl.

The vitamin C and beta-carotene content of both make them disease-fighting functional foods. Theyre also rich in vitamin K, an underrated but incredibly beneficial fat-soluble vitamins that supports heart and bone health .

  • Allow grilled chicken to rest for at least 5 minutes before slicing.

How To Make Crispy Chicken Salad

Its not hard to make! Just mix up some buttermilk and spices with an egg, toss in your fried chicken, and let it marinate a while.

Then add all your dry ingredients to a ziplock bag. You only need to put it in a bowl if you plan to take a picture of it and post it on the internet so that people know what tempura mix looks like. The tempura mix is on the right in the bowl of dry ingredients, and looks just like flour. It gets you the crispiest fried chicken! But flour will do if you cant find it. Beside the bowl on the right is the dry chicken bouillon I used. It adds great chicken flavor!

Add the chicken to the bag of dry ingredients and shake it up. Then stick it in the freezer while you let your oil heat up! Cold batter going into hot oil makes for the crispiest fried chicken, especially when using tempura batter. It also helps the batter stick to the chicken a little better.

Then fry em up! Deep frying in a pan is not as intimidating as it seems. And it really only takes 20 minutes or so. And its SO GOOD.

Then chop up all your veggies and devour!!

I know that most chicken sandwiches sold in fast food restaurants dont have avocado, but thats only because avocados are expensive and it wouldnt make sense for them business-wise. I mean, right? Why WOULDNT you add avocado to your chicken sandwich if you could?? So into our sandwich-salad it goes.

    Recipe Tips And Tricks

    • How to cook chicken breast: If you don’t have any leftover chicken breast to top on this salad, you can easily make it. Just season both sides of the chicken generously with salt and pepper . Heat 1 tablespoon of vegetable oil in a cast-iron skillet over medium heat. Add the chicken and cook for about 4-7 minutes on each side, until the chicken is fully cooked and is no longer pink inside, and the internal temperature reaches 165F as read on a meat thermometer. Let the chicken cool for about 10 minutes and then cut it into slices.
    • Make ahead instructions: To make this salad ahead of time, I would suggest prepping and chopping the vegetables and storing in an airtight container . If you are making dressing from scratch, make it and store in a separate airtight container. When ready to serve, add croutons and pour the dressing on top and toss.
    • How to store: Chicken garden salad is best served fresh. If you happen to have any leftovers, store in an airtight container in the refrigerator for up to 3-4 days. Eat all the croutons before storing as they will get mushy.
