Copycat Chick Fil A Carrot Raisin Salad Recipe

Eating your veggies was never so tasty.

Moms, I know youll hear what Im saying: kids and veggies dont always get along.

Yeah, my kids love most vegetables and will sometimes eat them happily, with no sauce or anything. But frankly, sometimes they need a little encouragement.

One of the best ways I know to make veggies go down easier is to mix them with fruit. Since fruit is healthy too, a mixed veggie-fruit salad is something I can feel good about giving my girlsand since it tastes sweet and delicious, its something theyll actually be happy to eat.

One of the best fruit-and-veggie salads I know is the carrot raisin salad from Chick-Fil-A. You know, with the shredded carrot and raisins and pineapple, all in this sort of creamy, tangy-sweet dressing?

But I cant exactly go out to Chick-Fil-A every time I want to feed my kids some veggies, so I did a little experimenting and whipped up my own copycat version. Turns out, its not that hard the only part that takes time is grating all those carrots. And the way my girls gobble it down makes it well worth the effort.

This salad isnt about to replace coleslaw in my heart but it comes in a close second.

How To Make Simple Fruit Salad

Step 1: Prepare the fruit. Slice or halve the strawberries depending on the size. Cut the grapes in half and chop one fresh pineapple into chunks.

Place the strawberries, blueberries, grapes, and pineapple in a large bowl.

Step 2: Mix together the dressing. Stir together the zest of one lime, plus the lime juice and honey.

Step 3: Pour the dressing onto the fruit salad and stir gently to combine. Cover and refrigerate for a few hours, or until ready to serve. Stir again right before serving.

All you need is just 6 ingredients!

Many similar recipes call for sugar, but this fruit salad is made without sugar and is instead sweetened with honey.

Fruit itself is natures candy, so a touch of honey is all you need!

I used pineapple, strawberries, blueberries and grapes for my fruit salad recipe, but you have so many choices here!

Use whatever fresh fruit you have on hand.

How To Make A Chick

  • Wash all the fruit thoroughly.
  • Juice the lemon and put the lemon juice is a large mixing bowl. I like to us a citrus press to get out as much juice as possible. Remove any seeds from the bowl.
  • Cut each of the apples into quarter, remove the cores. Place Chopped pieces of red apple and green apple pieces in the bowl with the lemon juice. Toss them to coat the apples in the lemon juice.
  • Remove all the stems from the strawberries. Quarter them and add them to the mixing bowl with the apples.
  • Remove any stems and leaves from the blueberries. Then add the blueberries to the large bowl as well.
  • Loss the fruit in the bowl to thoroughly combine them together. Then gently stir in the mandarin oranges, being careful not to smash them as you mix them in.
  • Serve immediately or store in the refrigerator until ready to serve.

Step 1: Gather ingredients. You will need apples, oranges, blueberries, strawberries, and a lime.

  • The lime is used to prevent the cut apples from turning brown. Its super important!
  • Apples are tasty, but also much less expensive than its counterparts. Theyre a perfect as a tasty filler for this salad!
  • Ive used jarred mandarin oranges in this recipe, only because kids LOVE them. Feel free to substitute your favorite fresh citrus!

Step 2: Wash produce.

Step 3: Quarter and core apples.

Step 4: Slice quartered apples.

Step 5: Chopped sliced apples into small pieces.

Step 6: Juice one lime and pour over apples.

Step 7: Stir.

Step 9: Cut and quarter strawberries.

Step 10: Drain mandarin oranges.

One of the reasons I love this fruit salad recipe is because its healthy. In my home things most foods need to be gluten and dairy free for my son and this recipe is perfect for us, especially because he loves fruit.

This is a great side dish to bring to get-to-gethers, especially when kids are involved. Kids love this fruit salad but its also allergy friendly, meaning most kids can eat it.

Of course, this recipe is also wonderful for all stages of pregnancy and postpartum. To lower the sugar content (hello gestational diabetes, substitute fresh oranges for the jarred mandarin oranges, and stick to Granny Smith apples. Make sure to pair it with some protein so as to not spike your blood sugar levels!

Also, fruit is always helpful to manage morning sickness. If you feel nauseated in the morning, eat some of this fruit salad, and as soon as you can, pair it with protein.

    Strawberries grow well down here in Florida, from around December through March. Florida blueberry season is in the summer, right around Fathers Day. For peak flavor, make this recipe when ingredients are fresh, in season, and local.

    How Long Can You Keep Fresh Fruit Salad In The Fridge

    Once you are finished making the fruit salad, transfer it to an airtight container and store in the fridge.

    For best freshness, enjoy within 3-4 days, if it lasts that long!

    If youre making this for a party, I recommend making it ahead of time and letting it chill in the fridge for at least an hour to let the fruit get cold and the dressing to marinate.

    That will give it time for all of the delicious flavors to blend together!

    The chicken is presented in an interesting way. Chick-fil-A slices its grilled chicken for salads VERY thinly. To recreate this I refrigerate the chicken after cooking. With a sharp knife, the chicken is so easy to slice thinly.

    Salads at Chick-fil-A are a healthy option and easy, but theyre also rather expensive. With just a bit of prep work you can make a large bowl of this salad for a summer bbq or picnic without spending nearly as much money. Plus you wont be tempted by the crazy delicious lemonade and waffle fries.

    How To Make

    Gather the fresh fruit, and drain the canned mandarin oranges.

    Pinch off the strawberry leaves. To hull the strawberries, take a wide plastic straw and insert from the top and push the straw through to the bottom. Discard the hull.

    Once all the strawberries are hulled, cut each strawberry into quarters from the top down. Place all the sliced strawberries in a bowl, cover with plastic wrap, and chill.

    Remember to not cut the strawberries more than 4 hours in advance, as they can go mushy quickly.

    To juice the lemon, use a wooden reamer to squeeze out all the juice into a small bowl. Make sure to strain out any seeds.

    To slice the apples, cut them in quarters lengthwise, then cut out the core. Continue by cutting each quarter in half again, and then cut each slice into three bite-sized pieces.

    Toss the apple with 1 tablespoon of the lemon juice, cover with plastic wrap, and chill.

    Chill the prepped fruit in individual bowls covered with plastic wrap for 1 to 4 hours.

    If you prefer to have the fruit on a large platter instead, arrange it on the platter, cover with plastic wrap, and chill for 1 to 4 hours.

    When ready to serve, toss the green and red apples first, then gently toss in the rest of the ingredients. Serve on a large platter to feed up to 16 people, or in 8 individual bowls.
