Buffalo Ranch Pretzel Chicken Caesar Salad. Spicy, saucy buffalo chicken fingers, breaded in salty pretzel crumbs, oven-baked and tossed together with fresh greens, avocado, and crispy bacon. Add a creamy Caesar salad dressing and lots of parmesan for a colorful salad thats anything but boring. Beyond delicious. Its that salty, spicy pretzel chicken and creamy dressing. The combo is hard to beat.

If my family had a house salad, this would be it. Its a dinner-style house salad, but one I could easily make on repeat.

We love buffalo chicken. Many of you have already heard this story . Buffalo chicken really was one of the very first dinners I made for my family that they become obsessed with. So much so that in the early, early days, I would make it once or twice a week. They LOVED my baked buffalo chicken.

I used to make 2 sheet pans worth of chicken. Anything leftover I would turn into quesadillas for the boys lunch the following day. Im not joking, they were truly obsessed with buffalo chicken.

Yes, certainly not your typical salad. But those salads inspired many of my recipes.

Why It Needs Anchovy Paste Despite What Food Historians Will Tell You

One of the great controversies in the culinary world is about the inclusion of anchovies in Caesar salads.

Most recipes, including this one, will contain anchovies in some form or another, either as whole anchovy fillets diced or just anchovy paste.

The very first, original Caesar salad, however, did not contain anchovies, and the creator, Caesar Cardini, was adamantly against the inclusion of anchovies.

In the original recipe, the salty intensity of anchovy flavor came from the addition of Worcestershire sauce.

However, pretty much all Caesar salad recipes include anchovies, and the reason is that it makes it taste really, really good.

While you could simply use extra Worcestershire sauce instead of using anchovies, especially if you are trying to make this vegetarian, but there is a lot of extra flavors you can add if you use anchovies as well.

Ignore the purists and include some anchovy paste you wont regret it.

How To Make Homemade Croutons

There is nothing better than homemade croutons! The best part about them is you can customize the flavor however you like!

I like to use leftover sourdough bread , lots of butter, garlic, and parmesan cheese! But you can also use olive oil and herbs, or even add some red pepper flakes. It’s up to you!

Simply toss all the ingredients together, spread on a baking sheet, and bake until crispy! You can then store them in an airtight container for up to 2 weeks!

Homemade croutons are delicious in salads but can also be added to soups or made into stuffing!

How To Make Chicken Caesar Salad Step By Step

STEP 1: Start with marinating the chicken the longer it marinates the more tender it will be but 20-30 minutes already gives good results.

In a large bowl, whisk together olive oil, lemon juice and zest, herbs, pressed garlic, salt, and pepper.

Cut the chicken breasts in half horizontally so that you have 4 thinner fillets . Place a thick plastic bag over the chicken and pound its thickest part with a meat mallet so that the chicken fillets are more or less of even thickness.

Add the fillets to the marinade and toss to coat.

Leave to marinate while youre preparing other ingredients .

STEP 2: Make the croutons

Preheat the oven to 400°F .

Cut the bread into 3/4-inch cubes .

In a large bowl, stir together olive oil, grated cheese, garlic powder, herbs, salt, and pepper.

Add the cubed bread and toss until evenly coated.

Line a baking sheet with parchment paper and spread the bread on it. Make sure the bread cubes are spaced out a bit.

Bake for about 15 minutes or until golden on all sides.

STEP 3: Prepare the dressing

Add all the ingredients into the food processor and pulse until smooth. Season the dressing with salt and pepper.

You can also use a hand blender. If you dont have either of these appliances, simply finely chop the garlic and anchovies, grate the Parmesan , then stir thoroughly with the remaining ingredients.

  • If you can have bread feel free to just make regular croutons. The method I used to use was to melt together butter and olive oil in a skillet. Then add cubed or torn up bread and season with sea salt. Then cook over medium heat until golden brown and crispy, but not rock hard.
  • Polenta also makes absolutely incredible croutons. I first had them in San Fransisco, and Ive been a huge fan ever since! To make polenta croutons, cube up leftover polenta thats been refrigerated and is solid. Then sauté in a mixture of olive oil and butter. Then season with sea salt, and cook until the sides are browned.
  • And now on to the dressing, aka the best part. This isnt the most traditional dressing out there. But I think youll be won over by its incredible creaminess and depth of flavor.

    It comes together quickly in the blender. The only tip I have here to make it fool proof, is to make sure you dont put the salt or lemon juice into the blender, until you know youre ready to blend within 5 minutes.

    The reason for this is that both salt and lemon juice will break down the egg. And when that happens the dressing wont be as thick and creamy. Or in the worst case scenario it wont emulsify if they sit together too long before blending in the olive oil.

    Romaine is always a the best and classic choice for a Caesar. But if you want to mix things up a bit, go ahead and grill your romaine for another fun variation.
