Trust us you will not be biting down into a large piece of anchovy. They get well blended and add the most wonderful flavor. Try it as written before omitting.

However, if you are fresh out of anchovies, you can substitute with 1 tsp anchovy paste.

My recipe makes roughly ~ 1 ¼ cups of homemade Caesar salad dressing.

Leftover Caesar salad dressing can be kept in the refrigerator for up to three days.

Whenever we go out to a restaurant, I always order a caesar salad with my meal. No other side salad comes close for me! Now that Ive perfected the homemade dressing and croutons, its a staple around here as well.

To me, no salad is complete without croutons and garlic croutons, well, that just makes everything better!

Why Youll Love This Salad

It has been a very long time since I made a Caesar salad. In my early uni days, it was like my grown-up thing to order at popular cafes and restaurants. Anchovies and all. Then for some reason, it disappeared from cafes and was replaced by smashed avo as the fashionable menu item.

Caesar salad popped up recently on a menu at a local restaurant, and we decided to order it. Oh, the memories and flavours all came rushing back.

Creamy.Briny, but in a good way.Umami.Addictive.

All good food memories, not nightmares. There is a reason why Caesar salad is a classic salad recipe.

After that day, I decided I needed to make this iconic salad again at home.

How To Assemble The Salad

Wash and tear up cos lettuce into small bite-sized pieces.

Add cos lettuce leaves to your mixing bowl with the salad dressing.

Toss lettuce until well coated with salad dressing. I like to use my hands with Caesar salads to ensure all the leaves are covered with the delicious dressing.

Add remaining grated parmesan to salad.

Add homemade croutons and toss again to cover with salad dressing.

Transfer to a serving plate.

Finish with grated parmesan and cracked black pepper.

Serve.

Anchovies Or No Anchovies

I know, I know anchovies can be a bit off-putting. Normally I shy away from using them in most of my cooking, but for this dressing, it really adds a great depth of flavor. Without the anchovies, the dressing can taste really flat and one dimensional sort of like if you forget to salt your food while cooking it.

Instead of using anchovy filets, I use anchovy paste! You can usually find it in major grocery stores, and its shelf-stable .

Where Did Caesar Salad Originate

The salad is not named after Julius Caesar, ruler of Rome. It is not that old.

The classic Caesar salad originated in Mexico. Yup, you read right. Tijuana in Northern Mexico, to be exact.

The story goes that chef Caesar Cardini was running short on a few ingredients in his restaurant and decided to put together this salad recipe at the last minute. Hence the name Caesar salad.

His customers eventually took a similar recipe back to LA, where it caught on popularity and then made its way around America and eventually around the globe to become the iconic salad it is today.

What Youll Need To Make Caesar Salad Dressing

For the cheese, its important to use imported Parmigiano-Reggiano from Italy domestic Parmesan pales in comparison. You can always tell if its authentic by looking at the rind, which is embossed with the name over and over. If the cheese is already grated, it should be labeled Parmigiano-Reggiano, not Parmesan.

If you have leftover bread, making homemade croutons is a great way to use it up.

Preheat the oven to 180°C or 350°F.

Tear or cut up bread into 2-3 cm chunks.

Toss bread with 1 tbsp olive oil and place on a baking sheet.

Bake in the oven for about 10 minutes or until golden brown.

Once done, remove from the oven to cool down.

You can use a full size food processor to prepare this recipe but I like to use a smaller unit like the Cuisinart Mini Prep Plus for small jobs like this.

  • Place the garlic in a food processor and pulse until finely chopped.
  • Add the remaining ingredients, except the oil, and pulse until well combined.
  • With the unit running, add the olive and vegetable oil through the feed tube of the food processor. Process for a minute or two until creamy and emulsified.
  • Add additional water, a teaspoon at a time, to thin to desired consistency.

The classic way to make Caesar dressing is to use raw eggs, but lets be honest the easiest way is to use commercial mayonnaise. This recipe replaces the mayonnaise with Greek yogurt. Do not substitute the Greek yogurt for any other yogurt. The dressing needs the fuller body and creaminess of Greek yogurt to keep the correct consistency. The other key opponent is the anchovy paste which adds a salty, savory deliciousness. I recommend making the dressing at least 2 hours ahead. The longer you allow the flavors to marry the better the results.

Do We Need To Use Anchovies In Caesar Salad Dressing

Ok, I know many people have an adverse effect with anchovies. However, I dont quite understand as we love anchovies here.

So if the Caesar salad original recipe did not necessarily include anchovies, do we need to use anchovies in the modern-day creamy Caesar dressing recipe?

For me, it is a big YES! I feel the anchovies give the homemade Caesar dressing the true essence of umami flavour.

We are essentially making a mayonnaise base with egg yolks and olive oil, but the added anchovies and other ingredients make the emulsification much more. Without it, it just feels like cos lettuce with mayonnaise.

Of course, there are options to substitute anchovies, but if you can try once with anchovies in the homemade Caesar dressing, then please do.

How To Make The Best Vegan Caesar Salad

  • If youre making your dressing and croutons from scratch, prepare those first. The croutons take a little while to bake but the dressing comes together really quickly.
  • Next, roast your chickpeas. Drain and rinse the chickpeas and then pat them dry. Place them on a baking sheet and toss with olive oil and spices. Bake until chickpeas are nice and crispy. Let cool a little bit before you add them to the salad.
  • Start assembling the salad by thoroughly washing your lettuce and kale and ripping it or chopping it up into bite size pieces. Traditionally Caesar salad uses whole leaves of lettuce but you could also do a chopped version if you like. I like to cut the kale pretty thinly since it is a little tougher than the romaine lettuce.
  • Add your lettuce and kale to a large bowl. Pour your dressing over and then use a wooden spoon, or your hands, to mix well. You want to make sure that all the lettuce and kale is equally coated with the dressing. Some salads I just pour the dressing right on top at the end but with a Caesar salad its important to make sure the dressing is completely incorporated into the salad.
  • Add in the croutons, chickpeas and parmesan cheese and gently toss everything together. I like to serve mine with a little extra cracked black pepper on top and a squeeze of fresh lemon juice.
  • You could also put a serving of lettuce into a bowl and then top with desired amount of croutons and chickpeas.

    Add Oil And Emulsify The Sauce

    Now it’s time to add the oil. Here you have a choice: both olive oil and neutral oils work. It just depends on the flavor you’re going for . Want your dressing to have a rich olive flavor? Use olive oil. Want to temper the olive flavor a bit ? Use a combination of olive oil and neutral oil, or just go with neutral oil altogether.

    When you’ve finally decided what oil to use, measure out a full cup. Now add the oil to the bowl of dressing in a slow stream, whisking the ingredients together constantly so that the oil gets fully incorporated into the sauce . After you’ve added all the oil, continue mixing the dressing for another minute or so, just to ensure that the fats and acids properly come together for a thick, creamy, beautiful dressing.

    In the U.S., anchovies get a bad rap, where people squirm at the thought of eating them without ever even trying them. In reality, anchovies mash to a smear and are the salty ingredient that gives Caesar salad its signature flavor. Or instead of whole anchovies, try a good quality anchovy paste.

    If you really cant go for the anchovy flair, substitute the anchovies for an additional 1 teaspoon of Worcestershire sauce and 1 teaspoon of lemon juice instead.

    How To Make Caesar Dressing:

    In a medium bowl, combine two egg yolks, Dijon mustard, garlic, anchovy paste, salt, pepper, and lemon juice:

    I am currently expecting so Im using pasteurized eggs here, which you can either purchase or make yourself.

    But ordinarily I would use raw eggs .

    I prefer to use anchovy paste instead of chopped anchovy filets because it distributes well and doesnt have any bone fragments, but you may chop some filets instead, and whisk that in, if youd like.

    Whisk everything together to combine, then slowly drizzle in a light olive oil, whisking vigorously to aerate:

    You want to start with just a few drops at first, then slowly drizzle in more oil over a minute or two.

    Going slowly will give you a thicker and creamier texture.

    Eventually the dressing will look thick and creamy, like this:

    It should still have a flowy texture to it, but with a thickness and richness from the spoon:

    To finish the dressing off, add a touch of grated parmigiano reggiano cheese:

    Caesar salad is always served with shavings or a shower of grated parmigiano reggiano cheese, but its important to have a little bit in the dressing as well, evenly coating the leaves of romaine.

    Chill the dressing in the refrigerator until youre ready to use it for your Caesar Salad.

    Use Not One But Two Oils

    When making a classic vinaigrette, using straight olive oil is highly recommended extra-virgin, if we are being specific. Youll truly enjoy the nuance of the oil when it has nothing but the vinegar to compete with. But thats not the case with Caesar dressing, which has garlic, additional fat from the egg yolk, and even the Parmesan cheese at the end to mask the flavor of a really nice olive oil.

    For this dressing, were using a small amount of olive oil and then finishing with a neutral oil of your choice. Vegetable oil is called for below, but you can easily use grapeseed, canola, or any other neutral oil instead.

    Make an anchovy-garlic paste.

    What Can I Substitute Anchovies With

    If youre strictly opposed to using anchovies or anchovy paste, or maybe you just need that Caesar salad dressing NOW and dont have any anchovies on hand well, you can still make a modified Caesar dressing without it.

    • Try using extra Worcestershire sauce in place of the anchovy paste. This is a great option because Worcestershire sauce actually has anchovies as part of its ingredients.
    • A few dashes of fish sauce will give it that umami flavor youre after.

    Does Real Mayo Go Bad

    An unopened jar of mayonnaise is shelf-stable for 3-4 months after its best by date. You can see the date written on the side of the mayonnaise jar.     After years of whisking Caesar dressing by hand, I figured out a few years ago that it is much easier to make with a traditional blender which is what I always use nowadays. That said, I have included instructions in the recipe box below for how to make Caesar dressing with a traditional blender, a hand blender, or 100% by hand. So choose whatever works for you!

    To make this recipe with a traditional blender, simply

  • Blend base ingredients: Blitz everything but the olive oil in the blender for a few seconds.
  • Add olive oil. Then while the blender is still running, carefully remove the small cap from the blender lid and gradually stream in the olive oil until the dressing is completely blended and smooth.
  • Adjust seasonings/consistency. Add in a few tablespoons of water, as needed, until the dressing achieves your desired consistency. Then taste and add extra salt and/or black pepper, if needed.
  • Serve or store. Serve the dressing immediately or store in the refrigerator for up to 8 hours.
