If youve got a few extra minutes, dressings you make yourself can be even more delicious than the store-bought kind, and you have total control over the ingredients. Here are recipes for two light salad dressings you probably wont see on the supermarket shelf.

Japanese Restaurant Salad Dressing

Journal as: 1 teaspoon oil

1/4 cup chopped onion 2 tablespoons canola oil or peanut oil 2 1/2 tablespoons rice wine vinegar 2 tablespoons water 1 tablespoon minced fresh ginger root 2 tablespoons minced celery 2 teaspoon light soy sauce 2 teaspoons light corn syrup or honey 2 teaspoons lemon juice 1/8 teaspoon salt 1/8 teaspoon ground black pepper

  • Add all the ingredients to a small food processor or blender. Pulse on high speed for about 30 seconds, or until well-pureed.
  • Pour into serving container, cover, and refrigerate until needed.

Yield: 14 tablespoons

Per 2-tablespoon serving: 48 calories, 0.3 g protein, 3.1 g carbohydrate, 4 g fat, 0.3 g saturated fat, 0 mg cholesterol, 0.2 g fiber, 79 mg sodium. Calories from fat: 73%.

Roasted Red Pepper Vinaigrette

Journal as: 1 teaspoon oil

3/4 cup bottled roasted red pepper pieces, drained 2 tablespoons olive oil 2 tablespoons fat-free sour cream 2 tablespoons red wine vinegar 1 tablespoons light mayonnaise 1 tablespoon shredded Parmesan cheese 1 1/2 teaspoons minced garlic 1/2 teaspoon dried basil Salt and pepper to taste

Yield: 1 1/4 cup

Another Sid and Lisa creation, this one will even impress your omnivore friends and leave them shaking their heads, saying, I cant believe its cashew. Hence the clever name.

How to Use It:

I think everyone knows how to use a Ranch dressing, but I love to throw this on big salads with roasted veggies, chickpeas, and tomatoes, and toss in some pumpkin seeds for crunch.

We also use it as a dipping sauce for veggies.

The Recipe:

  • 1/4 tsp fresh ground black pepper or, to taste
  • Optional: 1 tsp hot sauce

Blend all ingredients till creamy and smooth. Make sure not to blend so long that it gets hot. If too thick, add more water.

This dressing thickens in fridge, so add a little water as needed to thin before using.

All the recipes below make about one cup of dressingenough to last for a few days of salads, but not so much that it goes bad before you get a chance to use it up. Use up the dressings with dairy in them within a week. The vinaigrettes can last two or more weeks in the fridge in an airtight container.

Honey Mustard is often filled with sugar but my version is not! Its light, bright, and creamy thanks to the mustard and greek yogurt. My Healthy Honey Mustard Dressing does have honey but no added refined sugar.

There are endless rows of bottled dressings at the grocery store. Depending on the kind, they are usually high in fat, sugar or both and they all have too much sodium. You may think its wise to opt for the lower-calorie offerings but light and low-fat dressings often have even more sugar to make up for the lack of flavor.

To ensure youre getting real ingredients, homemade is the way to go, but watch those portions. How To Store Homemade Salad Dressing

I recommend storing your homemade dressing in a glass container in the refrigerator. I like to use mason jars! One thing to note: homemade dressings made with olive oil tend to harden and separate when stored in the fridge. This is completely normal! Take the dressing out of the fridge about 20 minutes before using so it can come to room temperature and then give it a quick shake to recombine the ingredients.
