What Goes In Caesar Salad Original Recipe


Today there are many different variations of Caesar salad. You will find Caesar salad with chicken, bacon, poached eggs, avocado, shrimp, mayo/no mayo, anchovies/no anchovies or even switch to kale. The list is endless!

However, the original recipe for Caesar salad is very simple.

Main ingredients included romaine lettuce, croutons, eggs, olive oil, lemon juice, Worcestershire sauce, parmesan cheese and salt and pepper.

The most controversial part of this list is that no one knows for sure if anchovies were a part of the Caesar salad original recipe.

Does All Caesar Dressing Have Anchovies

Anchovies are a traditional ingredient in this dressing, so most of the time when making, eating, or ordering Caesar salad/dressing, you should expect anchovies. There are certainly recipes out there that dont include it though. You could simply leave the anchovies out of my dressing recipe if you prefer!

Ina Gartens Caesar Dressing

JCs note: I add about half of the anchovies to the recipe that Ina calls for this is due to the fact that I enjoy the anchovy flavor, though dont desire it to overpower. With the same logic, I also double the amount of dijon mustard I love it! Adjust accordingly to your preferences!

Youll also need a food processor for this recipe. I have a Cuisinart and its one of the best investments that I have made in the kitchen.

Does the internet need another recipe for a basic Caesar Salad? No. No it does not.

Does the internet need another recipe for the Original Tijuana Caesar Salad? Absolutely.

Because Im just going to go out there on a limb and assume a few people out there are as unwittingly ignorant as I

Caesar Salad was one of those things I just assumed was Italian in origin primarily from its ubiquitous presence in the Olive Gardens of American as well as my own strange imaginings that history must have a documented account of Julius Caesars gustatory appreciation of anchovies and parmesan.

So my mind was appropriately blown when, after living in San Diego for five years, I found out Caesar Salad was actually created in Tijuana.

A Mexican salad, you say?

Ehhh not really.

While the salad was invented in Tijuana, the chef who is responsible for this salad perfection was actually a French-trained Italian chef living in America attempting to escape prohibition alcohol laws by opening a new restaurant in Tijuana called, simply, Caesars.

Caesars still exists and you can have the salad served in its traditional table-side manner if you make a trip down to Tijuana. I have yet to go, but it is definitely on my to do list!

In the meantime lets enjoy this recreation.

Where Did Caesar Salad Originate

Homemade Caesar Salad Dressing

The salad is not named after Julius Caesar, ruler of Rome. It is not that old.

The classic Caesar salad originated in Mexico. Yup, you read right. Tijuana in Northern Mexico, to be exact.

The story goes that chef Caesar Cardini was running short on a few ingredients in his restaurant and decided to put together this salad recipe at the last minute. Hence the name Caesar salad.

His customers eventually took a similar recipe back to LA, where it caught on popularity and then made its way around America and eventually around the globe to become the iconic salad it is today.

Cook The Bacon & Chicken

In a medium nonstick skillet over medium heat, cook the bacon.

Stir occasionally until crisp, 6 to 8 minutes.

Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain, leaving the fat in the pan.

Season the chicken with the salt and add to the bacon fat in a single layer.

Cook over medium heat, stirring frequently, until cooked through, 3 to 5 minutes. Using the slotted spoon, remove the chicken to a plate and set aside to cool.

Do We Need To Use Anchovies In Caesar Salad Dressing

Ok, I know many people have an adverse effect with anchovies. However, I dont quite understand as we love anchovies here.

So if the Caesar salad original recipe did not necessarily include anchovies, do we need to use anchovies in the modern-day creamy Caesar dressing recipe?

For me, it is a big YES! I feel the anchovies give the homemade Caesar dressing the true essence of umami flavour.

We are essentially making a mayonnaise base with egg yolks and olive oil, but the added anchovies and other ingredients make the emulsification much more. Without it, it just feels like cos lettuce with mayonnaise.

Of course, there are options to substitute anchovies, but if you can try once with anchovies in the homemade Caesar dressing, then please do.

    What Makes This A Classic Caesar Salad

    A true Classic Caesar Salad is made with whole leaves of Romaine, drizzled with Caesar dressing, and topped with croutons and freshly grated Parmesan cheese. The salad was originally meant to be eaten with your hands, leaf by leaf.

    The Origin Of The Caesar Salad

    In the 1920s, Caesar Cardini, a European restaurateur, chef, and hotel owner was operating a chain of successful restaurants in California. His primary restaurants operated out of Sacramento and San Diego that is, until the prohibition hit.
    With booze being a major no-no in America, Cardini decided to open a new restaurant in Tijuana, Mexico, where all of his regulars would go to drink. In no time at all, business for restaurants in Tijuana were booming in the 1920s, and Cardinis was one of the more prominent and successful of the get yo drank on crowd.
    So! How did Caesars famous salad come into being? According to Caesars daughter, on July 4th, 1924, Caesar was running short on supplies due to an unexpected rush of customers. Faced with turning customers away, he concocted on the fly a salad and dressing out of some of the remaining ingredients he had lying around. The salad was rather simple and certainly not a main entrée, so he decided to get all fancy pants with the selling point that.. *drumroll*This salad would be made TABLE-SIDE!
    While the concept of being catered to table-side and watching the chef make a yummy salad all for your onesie certainly kept business booming that day, Caesar actually managed to whip up a freaking amazing salad, that has stood the test of time.
    Me? I am personally a little too impatient to make the dressing from scratch when I can just buy it, pre-made to perfection at the local supermarket. Hehe.

    How To Make Caesar Salad Dressing:

    STEP ONE: Place the drained anchovy fillets and garlic cloves on a cutting board. Sprinkle lightly with kosher salt. Finely chop together, using the side of a knife to mash into a paste.

    STEP TWO: Place the egg yolks in a medium mixing bowl. Add the anchovy-garlic paste to the bowl, along with the Dijon mustard and Worcestershire sauce. Whisk together.

    STEP THREE: Slowly pour in the oil , whisking continuously with your other hand, until thick and emulsified. If you pour in the oil too quickly, it will break and not gain the volume weâre looking for.

    STEP FOUR: Stir in the lemon juice, finely grated parmigiano-reggiano cheese, and freshly ground black pepper. Season to taste.

    How To Make Easy Homemade Croutons

    Because every Caesar salad needs great crunchy croutons, I made a batch of crisp dark pumpernickel croutons to accent our salad. No recipe needed

    • Just cut whatever good bread you have around into cubes. They can be big or small.
    • Toss with a little olive oil, salt, pepper, garlic powder, and a bunch of fresh thyme leaves.
    • Spread out on a baking sheet and toast in a 375F oven for about 20-30 minutes, or until crisp. Give them a stir every now and again to crisp them evenly.
    • You can also toast them in a skillet on the stove top if you prefer.
    • I also make Everything Croutons, which have tons of flavor, just like an everything bagel, but with lots of extra crunch! I think theyd be great on this Caesar salad.

    Tips For The Best Caesar Dressing:

    • Anchovies These are usually found in the canned fish aisle of your store and sold in glass jars or flat tins. If you dont really want to use the fillet you can sub for anchovy paste. 1 anchovy fillet equals ½ teaspoon of anchovy paste. It will give a slightly different flavor, but still works.
    • Capers Still cant do the anchovies? You can use capers instead, still not quite the same flavor but it will work. Start with 2 Tablespoons of capers and a splash of Worcestershire Sauce. Add more to taste.
    • Egg Yolks If you are worried about the raw egg or youre pregnant be sure to use pasteurized eggs or you can use mayonnaise. Substitute 1 Tablespoon of mayo fo reach egg yolk.
