Antipasto Pasta Salad Ingredients And Substitutions
- Rotini Pasta. The corkscrew shape holds onto the dressing. This means the dressing doesnt pool in the bottom of the bowl. Use regular or tri-color rotini. If you cant find rotini, mini-shells are a good substitute.
- Red Wine Vinaigrette. Use bottled or homemade red wine vinaigrette. Or your favorite Italian-style dressing.
- Grape tomatoes. This pasta salad is filled with grape tomatoes. Slicing them in half prevents them from bursting when you bite into one.
- Great Northern Beans. Rinse beans before adding them to the salad. Great Northern beans are small and tender. Any white bean works.
- Pearl Mozzarella. These mini fresh mozzarella balls have a delicate flavor and soft texture. Substitute them with either small mozzarella balls or diced fresh mozzarella. To make cutting fresh mozzarella easier freeze it for about 30 minutes before cutting.
- Banana Peppers. You can add banana pepper rings or chop them. Substitute with pepperoncini.
- Kalamata olives. Use sliced kalamata olives for a briny flavor. Sliced black olives add a milder flavor.
- Red Onion. Red onions onion is slightly milder than yellow onions. But both can be used.
- Salami. A little chopped hard salami is optional. If youd like to keep this salad meat-free, omit it.
- Herbs. If youre using bottled dressing, taste the salad after mixing. Add additional basil and oregano as needed.

How To Make Greek Pasta Salad
Start by bringing a large pot of salted water to a boil on the stove. Cook the pasta until it is al dente perfection. You dont want to overcook the pasta in this dish or it wont hold up to the dressing and other ingredients.
While the pasta cooks, prep the rest of the salad ingredients by chopping the veggies. Adding all of the dressing ingredients to a jar and shaking well until combined.
When the pasta is done, drain and rinse with cold water to stop the cooking process so it doesnt just soak up all the dressing as soon as it is added.
Combine the drained pasta in a large bowl with the tomatoes, green bell pepper, cucumber, red onion, kalamata olives, feta cheese, and parsley.
Pour the dressing over everything and toss to coat well. If you are making this Greek pasta salad recipe in advance, I recommend adding only half of the dressing. Then wait to add the rest of the dressing until right before serving since
the pasta will tend to soak up some of the dressing the longer it sits.

In this recipe, zesty pesto, mellowed and thickened with a little mayonnaise, makes a lovely sauce. I go all-out green by adding sweet peas to both the pesto sauce and the pasta. When choosing the pasta shape, choose something that will hold onto the dressing. Shapes that have nooks and crannies like elbow macaroni, small shells or even spiral shapes work nicely.

These ingredients, and their measurements, are pretty flexible.
- Bowtie pasta
- Tomatoes: Grape tomatoes sliced in half make an easy addition to this salad, but any chopped tomato will work. Garden-fresh ones are always best!
- Cucumbers: We like English or Persian cucumbers best because they dont need to be peeled first. These add a nice crispy, fresh crunch to the salad!

- Kalamata olives: Really any kind of olive would work, but the purple jarred Kalamata olives are our favorites.
- Red onion: If your red onions have a really strong flavor, soak them in ice water for 10 minutes first.
- Feta cheese: Go for crumbled feta cheese if you prefer the flavor of feta to be in every bite. Or do larger chunks for a slightly different taste and texture.
- Fresh parsley: Nothing lightens and brightens a salad like some freshly chopped herbs!

Never Overcook The Pasta
It’s best to cook your pasta to al dente, or to the tooth. A little bite to your pasta is what youre looking for, typically two minutes less than the package instructions, said Langan.
If you’re making a cold pasta salad, it’s OK to drain and quickly rinse your pasta in cold water once you’re done cooking it. This stops it from overcooking, said Langan. Rinsing away some of the starch also prevents it from congealing.

- Even with 3/4 cup of mayo, this pasta salad is not very heavily dressed so feel free to make additional dressing if youre a mayo fan and dress it a little heavier.

What Youll Need To Make Pasta Salad With Pesto
The best pasta to use for this salad is corkscrew-shaped fusilli, which has plenty of surface area and groves for capturing the pesto sauce. Rotini is another good option.
For the pesto, I use my Best Basic Pesto recipe, which is in my fridge practically all summer long, but store-bought will work, too.
For the cheese, use the real-deal imported Parmigiano-Reggiano from Italy domestic Parmesan pales in comparison. You can always tell if its authentic by looking at the rind, which is embossed with the name over and over. If the cheese is already grated, it should be labeled Parmigiano-Reggiano, not Parmesan.
