How To Make Chicken Curry Salad With Grapes And Greek Yogurt
To begin making chicken curry salad, you must first cook your chicken.
You can do this by boiling the breasts in super salty water. Or you can cook them in your instant pot on high pressure for 12 minutes.
Once the breasts are cooked through, let them cool down so you can shred them without burning yourself.
Once the chicken is shredded, it’s time to make the dressing.
If you taste it at this step, just be aware that this will not taste the same after you toss everything together! The flavors need time to sit and develop so don’t second guess yourself!
Once the sauce is made, add chopped grapes, celery and red onion to the shredded chicken breasts then cover in the sauce.
Next, toss everything together and season with more salt or lime juice if needed. You can also add more sriracha if you like it hot!
After that, simply place the curry chicken salad in the fridge and let it sit. Not only will this help the flavors develop and enhance, but it also firms everything up and makes it oh-so delicious!

Ill admit I probably havent had a classic chicken salad in about 10 years. But after whipping up this recipe, Im convinced that it only gets better with age. And when lightened up with some Greek yogurt in lieu of mayo, Im convinced it may be even better than the original. )
To make it, just chop up a bunch of cooked chicken , celery, grapes, shallot, walnuts, dried cranberries, Greek yogurt, and lots of salt and pepper.
Toss it all together until everything is evenly coated with the Greek yogurt
and then within minutes, your lightened-up chicken salad will be ready to enjoy. Serve it up on some sandwich bread with lettuce, serve it in an avocado shell, serve it on a simple bed of arugula, serve it with an extra side of grapes you know, you decide. ) However you serve it, I hope you love it as much as I did.

This chicken salad is SO versatile. You can easily customize it with whatever you like/dont like or have on hand. Here are some ideas for you:
Chicken You can sub chicken for tuna if youd like. We also have a Greek Yogurt Tuna Salad recipeI have not tried canned chicken in this recipe but I think it would work.
Yogurt I like to use plain, unflavored, non-fat greek yogurt in this recipe. You can use 1%, 2%, or full fat yogurt if you like. We dont recommend using a flavored/sweetened yogurt in this recipe.
Parsley- If you dont have fresh parsley, you can sub with 1/4 the amount of dried parsley. If you dont have or like parsley you can substitute with some fresh dill, thyme or even basil!
Dairy Free I have not tried this with dairy free yogurt, but I think it would work. Make sure that your yogurt is unsweetened, plan yogurt.
Grilled Chicken This salad is great with leftover grilled chicken. We love it with this balsamic chicken!Fruit- You can omit the fruit if youd like to. Apples can also be subbed for grapes or berries. If youre going to use a dried fruit like raisins or cranberries Id recommend cutting the amount in half.
Weight Watchers The only points in this recipe for the blue plan come from the pecans. You can omit them or cut back on the amount to save points
Keto If you are following a strict keto diet its best to omit the apples from this recipe.

How To Make Greek Yogurt Chicken Salad
In a medium dish, make the Greek yogurt chicken salad dressing by combining the Greek yogurt, mustard, sweetener, vinegar, celery salt, and black pepper. Stir to combine.
Place the chicken, celery, pecans, cherries, and onions in a large mixing dish. Toss the chicken mixture with the dressing to coat it thoroughly.
Allow the flavors to combine for 1 hour in the refrigerator before serving.

This chicken salad recipe is definitely keto friendly , but it’s very high in protein and the keto diet focuses on having the majority of your calories comes from healthy fats.

Ive been eating a lot of chicken salad lately. You can make so many delicious variations! But my experimentation lately has been taking me away from the mayonnaise based chicken salads that Ive been making for years.
I recently tried making chicken salad with cottage cheese, which was a huge hit with my family. Then I got to thinking why not try making it with Greek yogurt? I love the tangy flavor of Greek yogurt. Its thick consistency makes it a great substitute for mayonnaise. Its also an excellent way to lighten up your chicken salad. Greek yogurt has far fewer calories and fat than even light mayonnaise.
Make Ahead And Storage Suggestions For Chicken Salad
If desired, you can make this chicken salad recipe up to one day in advance if youre planning to serve it for a party or event. But see my tip below about celery!
Just dont add it to the croissants or buns until right before you plan to serve it if youre making classic chicken salad sandwiches with it.
If you find yourself with leftover chicken salad, it will keep airtight in the fridge for up to 5 days.
Its not a great one frozen and then thawed so I dont recommend that. Find a way to use it up!

Chicken Salad With Grapes
- 3cupscubed or shredded chicken-rotisserie chicken works great
- cuppecans halves-or chopped
- 1cupgrapes-halved, red, green, or combination of both
- croissants, sandwich rolls, bread, or wraps for serving
light and creamy chicken salad dressing
- cupnonfat Greek yogurt
- ½teaspoonsalt-or to taste
- ¼teaspoonblack pepper-or to taste
- Stir together all dressing ingredients until smooth, set aside.
- In a large bowl combine chicken, celery, pecans, and grapes.
- Pour dressing over chicken salad. Toss well to combine and coat evenly in the dressing.
How To Make The Best Chicken Salad
Ingredients youll need to make this delicious salad:
Chicken. Youll need four cups of cooked chicken that you shred or chop, depending on the texture that you prefer. You can easily shred the chicken in your stand mixer or with an electric hand mixer if you want. Shredding with two forks also works great.
For the chicken, you can use baked chicken that you cook ahead or make Instant Pot chicken. You can even use rotisserie chicken if you wish.
Celery. Chopped celery adds the perfect amount of crunch and freshness.
Grapes. Halved seedless grapes add a touch of sweetness. I love to use red seedless grapes as they add another bit of color to the salad.
Dried Cranberries. Sweet and yet a little tart, the dried cranberries are a delicious addition as well.
Roasted Pecans. Chopped roasted pecans are a great addition. Omit them if allergic to nuts or if you are serving at an event and do not know if there are nut allergies.
Mayonnaise or Greek Yogurt. You can use all mayo or all Greek Yogurt in your salad or even a little bit of each. Greek Yogurt will help to lighten up the recipe, but it is definitely a matter of preference.
Seasonings. Salt and pepper are the perfect seasonings for it.
Celery leaves. Chopped celery leaves add so much flavor, but if you dont have them just omit.

Do I Need To Use Mayonnaise And Sour Cream In Chicken Salad
Theres no way to have classic, creamy, comforting chicken salad without mayo and sour cream. So yes, they are necessary.
You can use lite or reduced fat versions of both mayo and sour cream if youre trying to shave some fat and calories noting your chicken salad wont have quite the creamy factor.
Plant-based mayos such as avocado mayo and dairy-free sour cream are also fine if youre trying to avoid dairy.
Salad In A Jar With Greek Yogurt Dressing On The Side
In a mason jar, place a bed of chopped Boston lettuce in the bottom. Then top with the salad, drizzle with the remaining Greek yogurt dressing, and place another handful of chopped Boston lettuce on top.
