Blackened Chicken Salad Wraps

Sometimes I try things at restaurants, grocery stores, or whatever, and thinkWow! This is terrible! But its a really good idea

Is that weird? Such is the case with this chicken salad. Last week, I grabbed a container of blackened chicken salad from the refrigerated section of Whole Foods. I couldnt believe what a great idea it was, and that I hadnt thought of it, myself. But then I tasted it and it was bad, and flavorless, and too mayonnaise-ysuper disappointing. But I was sure that blackened chicken salad could be good, hence this blackened chicken salad!

Its everything the Whole Foods version wasnt: seasoned, less mayonnaise-y, and full of much yummier mix-ins! Chicken breasts are coated in blackening spices and grilled to produce a great smokiness that permeates the whole salad. Skillet-browned corn and red bell pepper add a hint of sweetness and awesome crunch, while green onion and cilantro lend freshness and bite.

My personal favorite way to enjoy this chicken salad is in a wrap, but you could totally eat it over some lettuce, with some crackers, or by the forkful. Its hard to go wrong.

If youre not a mayo person, I would suggest replacing the mayo with Greek yogurt. I havent actually tried this myself, but I think the added tang would be nice!

Instructions

  • Place your chicken breasts on a cutting board and cover them with plastic wrap. Lightly pound them until they are uniform thickness.

    How To Make Blackened Chicken Salad Sandwiches

    Add olive oil to a medium sized pan on medium-high heat.

    Season chicken with blackening seasoning.

    Add chicken to hot pan and stir chicken regularly, for about 10 minutes until the chicken browns from the seasoning and cooks completely.

    Mix blacked chicken with carrots, corn, tomatoes, and blue cheese dressing.

    Chill until ready to assemble on mini Hawaiian buns.

    If any of you live close to a Whole Foods Market then you will know exactly what I am talking about Whole Foods=Food Heaven! Sure its expensive its nickname is Whole Paycheque after all.. but that doesnt stop me from filling up my basket with all things healthy and delicious. Its easy to rack up a hefty bill when you say you are just going to stop in there for a quick snack especially when you find things as unique and delicious as thing. Blackened Chicken Salad.

    My man and I discovered this one day after a Crossfit workout and became addicted instantly. Its not cheap and its not light either so a medium sized container costs around $20 and in my house only lasts about 5 minutes! Its because of this I decided to try and recreate it and I did!

    Ingredients:

    3 chicken breasts -3/4 cup of mayonnaise

    -1/4 cup dijon mustard -1/4 cup apple cider vinegar

    -1 large carrot grated -1/2 red onion diced

    -4-5 scallions chopped -1/3 cup of blackening seasoning

    -olive oil

    Method:

    Season all chicken breasts on both sides with blackening seasoning. Fry chicken in a hot skillet until fully cooked and set aside to cool. Once chicken has cooled dice the chicken into bite sized pieces. The chicken can be as messily chopped as you like, there is no need for the pieces to be a uniform size, so dont stress.

    For the dressing, mix together mayonnaise, apple cider vinegar and dijon mustard. Set aside.

    Garnish with some extra green onions and enjoy!!

    • Tomato cups: For a fun presentation, you can carefully hollow out tomatoes and serve this chicken salad inside the hollowed out tomatoes. It’s also a lower carb way to enjoy it.
    • Cucumber boats: Similar to the tomatoes, you can also scoop out the inside of a cucumber using a spoon and fill it with the tuna salad. It adds a nice crunch to the dish and is a really fun way to serve it.

  • First of all, you have to cook or boil the chicken.
  • Cooking chicken in sauce and spices make the dish even better. Take a few tablespoons of oil in a pan and heat this oil at a low flame.
  • Add the chicken breast to it and fry it. To add flavor to your chicken sprinkle some black paper, 1 tbsp of apple cider vinegar, and 1 tbsp of soy sauce.
  • You can also add a tablespoon of chili sauce to spice up your chicken.
  • Once your chicken is done, set it aside.
  • Stir fry the carrots, onions, and celery after chopping them.
  • But do not over fry because you have to retain the crunch of these veggies.
  • Bring yourself a medium-sized bowl to prepare a mixture.
  • Add apple cider vinegar, grainy mustard, Dijon mustard, mayonnaise, and honey. Mix or blend well until a uniform mixture is formed.
  • Then add the Cajun seasonings and garlic. Mix well.
  • Add the remaining ingredients and stir the mixture.
  • Mix the cooked veggies with chicken once you shred the chicken or slice it into smaller cubes.
