Do I Have To Peel Red Potatoes

The type of potato you use in a salad recipe really determines if you should peel it or not. If I’m using a Russet potato, I always peel them because the skin is tough and tends to separate from the flesh of the potato and ends up making the salad look brown and sad. However, with red potatoes, the skins are soft and tender, and honestly, help the potatoes to maintain their shape while cooking. For this recipe, it is best to cook the potatoes halved, and then wait until they are cool before you cut them into cubes. Trying to cut warm potatoes will result will a mushy mess.

How To Make Red Potato Salad

Ive always loved potato salad, but I wanted something a little different than the traditional potato salad. I like red potatoes because I enjoy their firmer, less starchy taste. It makes the potato salad taste clean and fresh. Adding a bit of vinegar, mustard, and lemon juice lends a great tang that jumps right out of the creamy sauce. Finally, chopped celery and onions give the dish a lively crunch.

This easy recipe begins by chopping your red potatoes into half-inch chunks and then boiling them for ten minutes in a large pot of boiling water. While the potatoes are cooking you can prepare the remaining ingredients.

In a large mixing bowl combine the mayo, sour cream, vinegar, Dijon, sugar, lemon juice, chopped onions, and celery. When the potatoes are done boiling they can be drained from the water and added to the potato salad mixture, however, I recommend letting the warm potatoes cool to room temperature first. Place your potato salad in the refrigerator to cool, then serve.

The problem with store-bought, and even some homemade, potato salads is hard potatoes. But, if you let them cook too long, they get mushy. They start to look like mashed potatoes. Well, you want them to be soft little cubes of dill-flavored potatoes!

This recipe uses steamed potatoes to give it the silky, soft texture from perfectly cooked potatoes. A creamy dill red skin potato salad will vanish from your table in no time. Now, get the burgers and dogs ready. I mean hot dogs!

A potato salad with whole, soft potatoes really tastes best. Sometimes, when potatoes are overcooked, they break open in the pot and the water penetrates them making them mushy. However, steaming the potatoes avoids mushy potatoes.

    How To Serve Potato Salad

This Creamy Red Potato Salad can be served right away, but it is best if the flavors are allowed to meld in the refrigerator overnight. You will be amazed by how much the flavor evolves.

Potato salad is the perfect accompaniment to serve at picnics, summer cookouts, and potlucks, but the problem with these events is that food is often left outside in the hot weather for hours on end. Since potato salads are dairy based, that is just asking for food poisoning. However, I found the coolest outdoor serving bowl that can be filled with ice to keep your cold food chilled while you focus on enjoying your time with friends and family.

How Do I Avoid Soggy Potatoes

No one likes soggy potatoes in their potato salad. Here are some tips for avoiding this:

    • When cooking your red potatoes, make sure to not leave them in the pot for too long.
    • Overcooked potatoes can become mushy and break up when mixed with the rest of the ingredients.
    • Cook the red potatoes until, when pierced with a fork, are just tender. This should take around 20-25 minutes.

Summer is potato salad seasonDoes anything say summer more than potato salad?

I have a true love affair with potatoes, particularly the red skinned variety and therefore redskin potato salad. Also, I believe that everyone should have at least one go to potato salad recipe that they love and can rely upon.

There are many different potatoes and ways to make the dressing, and you might have your own preferences, but here are mine:

Ingredients for Red Skin Potato Salad

Potatoes: I use red potatoes, baby-sized if possible. The

reason? Its such a bother to peel potatoes! I leave the thin red skins as part

    of the salad.

Eggs: Yes, mandatory for me. I use a ratio of 3 eggs to 2

    pounds of potatoes.

Celery: Some feel this is optional, but I like the crunch.

Onions: I do not include onions but you can easily add some as preferred.

    Dressing for potato salad

There are so many ways people make the dressing! Mayo is the base, some add yellow mustard and many variations of spices. I simplify all that and just use mayo, Italian salad dressing, salt and pepper. Simple! Works every time.

    Cook the potatoes and eggs

Boil the eggs in a separate pan for 10 minutes.

Once potatoes are cooked, drain them in a colander. Fill the pan you used for boiling with very cold water , then place the potatoes in the cold water to stop the cooking. You can also submerge the boiled eggs in this ice water to cool them down

    Mix the potato salad dressing

    Put the potato salad together

    Picking The Best Potatoes

The number one concern when making potato salad is picking and cooking the potatoes. This is potato salad after all! Waxy potatoes are really the best choice here they hold their shape after cooking and have a soft, creamy texture. Red-skinned potatoes like Red Bliss are my stand-by for salads, but check out this list of 16 Kinds of Potatoes for some other ideas. For a slightly softer mashed texture in your salad, you can also try using any all-purpose potato these have a good balance of waxy and starchy characteristics.

When it comes to cooking the potatoes, I take the traditional approach: chop them up and simmer them in water until tender. I usually leave the skins on when I make potato salad I like the spots of color they add to the dish, plus theyre thin enough that theyre usually quite tender. If youd prefer to peel your potatoes, its easiest to boil them whole, then peel them and cut them into chunks.

What Makes This Recipe The Best

Seasoning the water By seasoning the boiling water heavily with salt, just like when you make pasta, that allows the salt to penetrate the potato. This is great because it seasons the potato on the inside. It tastes so much better!

A knockout dressing Well make a quick homemade dressing that has a great balance of creaminess and tang. Its delicious!

Fresh herbs and vegetables to add crunch and texture Because potatoes are so neutral, its important to add other ingredients for flavor. The bits of celery, scallions, chives, and more add both texture and flavor that is absolutely heavenly.

Its actually easy to accomplish this with relatively minimal ingredients!

When I go to parties in the summer or on a picnic, Ill almost always bring some sort of sturdy salad like this.

Salmon Salad, Cranberry Chicken Salad, Caprese Pasta Salad, and Egg Salad are some of my other go-tos. Its truly one of my favorite recipe categories! This is also a great side for dishes like Buttermilk Fried Chicken or Oven BBQ Pork Spare Ribs.

    Redskin Potato Salad Recipe

I originally posted this healthier red skin potato salad recipe all the way back in September of 2016 but wanted to give it a bit of an upgrade. While the recipe remains the same , I wanted to update the post with some new thoughts and pictures.

For me, like chicken salad, potato salad can either be delicious or severely disappointing, no middle ground here. I like a lot of flavor and just the right amount of mayo. Bland potatoes drowning in mayo tends to be what I find in many store bought potato salads, although I tend to be overly critical and easily disappointed with foods.

Since Im not a fan of store bought potato salad, I have to make my own. ButI hate peeling potatoes. I feel like it is a waste of the limited time that I have. Especially since we are all stuck in the house together due to the quarantine. My main duties now include entertaining a 3 year old all day, and keeping her away from my husband who works at home, and taking care of a newborn. Its not exactly how I envisioned my maternity leave going, but its much better than many other families are fairing right now, so I will count my blessings. I did end up purchasing a lesson plan from Busy Toddler for my 3 year old so I could have activities planned without having to think too much, and it has been really helpful. I got very tired of hearing her ask me what can she do next.

How To Make It Step By Step:

Start with the dressing so its ready to go for when the potatoes are hot. That way they absorb the dressing and flavor really nicely.

Combine mayonnaise, extra virgin olive oil, Dijon mustard, red or white wine vinegar, salt, and pepper in a bowl:

I love the combination of fats here, with the fruity flavor and aroma of the olive oil, and the creamy classic flavor of the mayonnaise. Its so much better than a mayonnaise-only dressing.

Also, if you have 10 minutes to spare, I recommend making some homemade mayonnaise for optimal flavor.

I think red or white wine vinegars are by far the best acids here, but champagne vinegar, sherry vinegar, and apple cider vinegar work too.

Whisk that together until creamy and smooth:

Can I Make Potato Salad In Advance

Potato salad is best eaten within 8 hours of making. It is best to make potato salad the day youre going to eat it. It tastes great if the flavors have some chance to meld together, but all potato salads can turn watery if they sit too long.

If you want to make it in advance be sure to use red-skinned potatoes like this recipe calls for. Starchy potatoes or white potatoes dont hold up as well.

Also you can toss the hot cooked potatoes in the vinaigrette mixture, but then let them cool before adding the sour cream/mayo mixture. This will prevent the potato salad from becoming oily.

TIP: Toss the hot potatoes in the vinegar/sugar/seasoning mixture. But wait to fold in the sour cream/mayo mixture until the potatoes have fully cooled.
