    I originally posted this healthier red skin potato salad recipe all the way back in September of 2016 but wanted to give it a bit of an upgrade. While the recipe remains the same , I wanted to update the post with some new thoughts and pictures.

    For me, like chicken salad, potato salad can either be delicious or severely disappointing, no middle ground here. I like a lot of flavor and just the right amount of mayo. Bland potatoes drowning in mayo tends to be what I find in many store bought potato salads, although I tend to be overly critical and easily disappointed with foods.

    Since Im not a fan of store bought potato salad, I have to make my own. ButI hate peeling potatoes. I feel like it is a waste of the limited time that I have. Especially since we are all stuck in the house together due to the quarantine. My main duties now include entertaining a 3 year old all day, and keeping her away from my husband who works at home, and taking care of a newborn. Its not exactly how I envisioned my maternity leave going, but its much better than many other families are fairing right now, so I will count my blessings. I did end up purchasing a lesson plan from Busy Toddler for my 3 year old so I could have activities planned without having to think too much, and it has been really helpful. I got very tired of hearing her ask me what can she do next.

    Start with the dressing so its ready to go for when the potatoes are hot. That way they absorb the dressing and flavor really nicely.

    Combine mayonnaise, extra virgin olive oil, Dijon mustard, red or white wine vinegar, salt, and pepper in a bowl:

    I love the combination of fats here, with the fruity flavor and aroma of the olive oil, and the creamy classic flavor of the mayonnaise. Its so much better than a mayonnaise-only dressing.

    Also, if you have 10 minutes to spare, I recommend making some homemade mayonnaise for optimal flavor.

    I think red or white wine vinegars are by far the best acids here, but champagne vinegar, sherry vinegar, and apple cider vinegar work too.

    Potato salad is best eaten within 8 hours of making. It is best to make potato salad the day youre going to eat it. It tastes great if the flavors have some chance to meld together, but all potato salads can turn watery if they sit too long.

    If you want to make it in advance be sure to use red-skinned potatoes like this recipe calls for. Starchy potatoes or white potatoes dont hold up as well.

    Also you can toss the hot cooked potatoes in the vinaigrette mixture, but then let them cool before adding the sour cream/mayo mixture. This will prevent the potato salad from becoming oily.

    TIP: Toss the hot potatoes in the vinegar/sugar/seasoning mixture. But wait to fold in the sour cream/mayo mixture until the potatoes have fully cooled.

    How To Make A Good Creamy Potato Salad

    After the potatoes are cooked but while theyre still warm, I follow the same directions I give in my moms classic potato salad recipe and sprinkle the hot potatoes with a little white vinegar, imparting a bit of tang to the potatoes. Be sure to do this step while the potatoes are still warm so they absorb the light pucker of the vinegar flavor.

    This potato salad dressing is a simple mix of mayonnaise , and sour cream for the tangy bite. Its seasoned with garlic salt, freshly ground pepper, and fresh dilland plenty of it.
