I personally like to use Kewpie mayo, it’s the richest mayo you can get! Dukes or Hellmans are also other good options. DO NOT USE MIRACLE WHIP or a mayo listed as “SALAD DRESSING” it’s not the same.
  • Parmesan Cheese: You’re going to want to use freshly grated off the block parmesan cheese here. I know it’s tempting to use the bottled shaker cheese, but it’s not the same. Your dressing will only taste as good as what you put into it.
  • Anchovy Paste: I like to use anchovy paste vs. buying whole anchovies, it makes things easier and the fish smell isn’t as strong . This dressing can be made without it, but I promise it doesn’t have the same savory flavor! Every really good caesar dressing you’ve ever had definitely had anchovy, so don’t skip it!
  • Lemon Juice: Please make sure to use fresh lemon juice. The bottled lemon does not taste the same!
  • Garlic: I use 3 whole cloves minced finely. If you have jarred garlic it will work, but again fresh is best. If you think that will be too much for you, just use 2 cloves to start.
  • Worcestershire and Dijon Mustard: These ingredients, along with salt and pepper if desired really bring the dressing together! They add that final bit of savoriness and tang!

    Ive been friends with Caesar salad since high school, when I took my first bite of a really good homemade version.

    We all know the dressing is king. It is the deal maker vs. breaker. Outstanding Caesar dressing has to be creamy, savory, garlicky, full of parmesan, and infused with anchovies.

    Dont worry, you dont have to go face to face with anchovy chunks. We use anchovy paste, which has wonderful flavor. Plus, if you use the tubed kind, it measures easily and keeps fresh longer.

    Do I Need To Use Anchovies

    Classic Caesar Salad with Homemade Mayonnaise/Dressing and Croutons

    These salty little fish definitely fall into the love-it-or-hate-it category, but even if youre not so keen I highly recommend still using them in this dish. Anchovies dont make Homemade Caesar Dressing taste fishy, but instead lend the dressing a complex, savory flavor that makes it really special.

    You do not use anchovies when making this homemade recipe. Although as stated above it will not hurt the recipe.

    Certain brands of anchovy are saltier than others, so make sure to check your dressing before adding any more salt.

    How To Make A Mayo

    First, gather your ingredients:

    Traditionally, Caesar salad is made with romaine lettuce but you can easily make it with kale, spinach, or iceberg lettuce whatever you have on hand or prefer.

    Preheat oven to 400F.

    Cube the bread crusts and coat with 2 Tablespoons or so of the oil, just until moist. Season with salt and pepper and distribute on baking tray leaving space between the croutons so they dont crowd each other. Kids can help with all of these steps!

    Bake for 8-12 minutes until crispy and browned.

    Set the croutons aside to cool as you prepare the dressing and wash the lettuce. These croutons will last for a couple weeks if stored in a dry, cool place.

    I love to save our bread crusts and then when I have enough make a quick batch of homemade croutons, bread pudding, or our One-pot French Onion Soup.

    Next, add the anchovies, oil, salt and pepper, garlic, and lemon juice to a mason jar. Firmly screw the lid on and pass it to your kitchen helper for a vigorous shaking!

    Perfect! Make sure to taste the dressing and adjust the seasoning as needed.

    Rinse and chop up your lettuce, and then toss everything together in a large bowl lettuce, croutons, dressing, and that handful of Parmesan.
