This Healthy Cranberry Almond Chicken Salad will quickly become your favorite lunch time meal and with about 200 calories per serving, it’s so much better for you than traditional mayo heavy chicken salad.

So I have a friend who is completely obsessed with this cranberry almond chicken salad that she buys in Costco religiously. She eats it almost daily for lunch and she has served it at every party she has ever had. The only problem is that her chicken salad habit is actually pretty expensive and since she is trying to make more food at home, we set out one weekend to recreate her favorite chicken salad. After a few attempts, we came up with a version we actually like more than the version she usually bought. With cooked chicken breast, dried cranberries, celery, sliced almonds, and a simple yogurt based dressing – it’s really delicious. She likes it with a bit of honey to sweeten it up and she sometimes switches out the cranberries for sliced red grapes. Yum.

Chicken Salad With Cranberries And Almonds

This chicken salad came about when I was trying to think of a simple summer meal for my family. Perfect for lunch or light dinner! Serve on toasted bread for sandwiches, or inside of a scooped-out tomato.

2 boneless, skinless chicken breasts
salt and ground black pepper to taste
1 bay leaf
1 Granny Smith apple, finely chopped
1 cup sliced almonds
2 green onions, thinly sliced
½ lemon, zested
¼ teaspoon ground black pepper
1 cup creamy salad dressing , or more to taste

Steps:

  • Place chicken breasts in a saucepan season with salt and pepper. Cover with 1 inch of water and add bay leaf. Bring to a boil. Reduce heat to low, cover, and simmer until chicken is no longer pink in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F .
  • Drain chicken and cool until easily handed. Shred with 2 forks.
  • Mix chicken, apple, almonds, cranberries, green onions, lemon zest, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in a bowl. Add creamy salad dressing and mix until combined.

What Can I Use Instead Of Lemon Juice

If you are out of lemon juice, you can use orange juice, white vinegar, white wine vinegar, or apple cider vinegar. This will alter the flavor a little so we really recommend to use lemon juice for the best flavor.

I like to serve this chicken salad in a wrap. Look for a low carb or gluten free wrap at any grocery store.

    Ive had chicken salad on a few occasions where the chunks were way too big, and you end up eating a cube of chicken, followed by a whole pecan, then a grape. I dont see the salad in that. I like to have a decent distribution ingredients a little bit of everything in each bite. Call me crazy.

    I dont usually keep slivered almonds on hand, so I just run whole almonds through the food processor along withthe cranberries. I dont dust the almonds completely, just break them up a bit and spread the cranberries out some too. Just do as much or as little as youd like. I trust you.

    I use canned chicken because its convenient and the consistency is perfect for chicken salad. It breaks up easily, but doesnt get too fibrous while stirring it like shredded chicken can.

    If you prefer or have some to use up, cooked chicken may be subbed, just aim to chop it so the pieces are managable

    The last thing Ill mention is to not be shy with salt & pepper, especially the pepper, it really works here.
