    You can absolutely make potato salad with russet potatoes! The type of potato you use in potato salad will depend on personal preference and taste.

    Russet potatoes have a grainy, fluffy, open texture and are fantastic at absorbing potato salad seasoning! However, waxy potatoes such as red skin or fingerling have less starch and retain their shape better during boiling. If you are using russet potatoes, make sure you do NOT continuously boil the chopped potatoes or they will fall apart.

    There is nothing sadder than a watery potato salad! To avoid a water-logged salad, follow these tricks:

    • Cut the potatoes into chunks, halves or quarters. Cut potatoes will cook faster and more evenly than whole potatoes. Whole potatoes have a higher chance of the outside turning to mush before the inside is finished cooking which can result in a watery potato salad. With that said, do not cut your potatoes too small or they will have a higher chance of overcooking and turning mushy!
    • Drain the potatoes thoroughly. Make sure you thoroughly drain the potatoes in a colander before adding any dressing. If your potatoes still seem watery, drain the potatoes and then return them to the pot. Place the pot on stove over LOW heat for minute to cook out any extra water clinging to the potatoes. Make sure you stir the potatoes and be careful to not overheat the potatoes or they will turn mushy.
    • Add vinaigrette dressing to warm potatoes. Do not allow the potatoes to cool completely before adding the olive oil based dressing. Warm potatoes will soak up the dressing better than cool potatoes. Cool potatoes will repel the dressing and result in a watery salad.

    How To Keep Potato Salad From Getting Watery

    There are a couple of reasons potato salad can become runny. Heres how to troubleshoot the problem.

  • Use the right potato. Yukon golds are our go-to and absorb the dressing well.
  • Be sure to add the dressing to cool potatoes before adding the creamy mayo dressing. Potatoes will sweat water as they cool, and that can contribute watery potato salad.
  • And then, reader Vicki sent in an email with her suggestion to avoid watery potato salad:I asked a renowned chef what I was doing wrong, and he told me NEVER to salt the potatoes either during cooking or preparing the salad. The salt makes the potatoes seep water. Ever since I took his suggestion, I have never had a problem with watery salad. You can season the salad with salt, pepper, and other seasonings just before serving and it wont affect the potatoes once they have been mixed with the mayo. Just an FYI.

Add in salt, sugar and vinegar. Reduce the heat to maintain a simmer and cook, stirring occasionally, until the potatoes are fork tender, about 10-12 minutes. Drain the potatoes in a colander and transfer to a large mixing bowl.

    Honestly, the main issue in traditional potato salad isnt the carb-o-licious potatoes, or even the fatcontent of the mayo. The root of the problem lies in the ultra-processed, inflammatory, store-bought mayonnaise, made with not-so clean ingredients.

    The main ingredient in most traditional mayonnaisesoybean oilis one of the WORST inflammatory foods that we can eat.     How To Cook The Potatoes

    We simmer potatoes whole in salted water when making potato salad. Here are our top tips for doing it:

    Salt the cooking water. Its important to add a generous amount of salt to the cooking water. By salting the water, the flavor of the potatoes comes out. They wont taste salty, only like excellent potatoes.

    Simmer, dont boil. When it comes to cooking potatoes for potato salad, theres no need to boil. When you do they violently bash against each other. Instead, bring the water with potatoes to a boil then reduce the heat to a gentle simmer. The potatoes cook just as quickly.

    Potatoes are cooked when you can push a fork through the center. When they are done, drain the potatoes and add them to an ice bath, which stops them from cooking. After 2 to 3 minutes they are cool enough to handle.

    While I love using skin-on potatoes for mashed potatoes, I like to remove the peel from the potatoes for this. Since I use small potatoes, peeling them before cooking would be a frustrating task.

    Instead, I cook my potatoes with the peel on, let them cool, and then peel. Since the potatoes are cooked, the peel comes off easily .

    If you google potato salad on the internet you will quickly discover that there are several ways this recipe can be made. It all depends on who you ask and what part of the country they were raised in. A majority of them, I have found, include eggs. And a good majority have bacon.

    What surprised me though was how many of them had pickles or sweet pickle relish.
