  • Split avocado in half, remove the
  • Pull meat from the avocado peel with a tablespoon.
  • Pour the avocado pulp into a food processor or blender.
  • Add remaining ingredients into a food processor or blender: Vinegar, garlic, water, honey, lemon peel, coriander, lemon juice, salt, and pepper.
  • Place lid and process or blend for one minute until smooth and creamy.
  • Add an additional splash of water if you want thinner.
  • When the mixture is creamy and homogeneous, pour the mixture in a bowl or glass jar.

    Today, I want to share a similar technique for building salads, only with healthy, homemade, oil-free dressings instead of sauces.

    The technique goes, if you learn a few simple dressing recipes, then you can shape nearly anything in your kitchen into a delicious salad of your choosing.

    But before we get to the recipes, lets talk about why Im going oil free with these seven staple recipes.

    I Cant Believe Its Cashew Ranch Dressing

    Just when you thought youd never get to enjoy ranch dressing without a bunch of a processed substitutes!

    I think everyone knows how to use a Ranch dressing, but I love to throw this on big salads with roasted veggies, chickpeas, and tomatoes, and toss in some pumpkin seeds for crunch.

    In a blender or food processor, blend or pulse together the beans, mustard, honey, salt and pepper, and vinegar. Once its good and smooth, add one tablespoon of water at a time and keep blending in between additional tablespoons of water until you reach the consistency you want in your dijon salad dressing.

Just add the lemon juice, dijon mustard, nutritional yeast, and agave or maple syrup to a jar or bowl, and shake it, or whisk it up!     This recipe makes a smooth and creamy raspberry vinaigrette dressing that goes well with any mixed green salad. The taste is out of this world good! You can make it with fresh raspberries or frozen raspberries.

    In order to get a more concentrated flavor I also like to use freeze dried raspberries, it makes such a huge difference!
