Homemade French Salad Dressing with olive oil and garlic

If youre just making a single serving of dressing, you can just mix it up in a bowl and serve immediately. But if you eat a lot of salads you can make a larger serving for the week. Put all the ingredients in a mason jar, close the lid tightly and give it a shake. Dressing done, keep it in the fridge.

As olive oil solidifies a bit in the refrigerator, you might get some solids in the jar. Just run the closed jar under warm water until they break up. Then, give it a good shake to incorporate the ingredients, as the oil and vinegar will separate.

Heres All That You Need:

  • Aged balsamic vinegar Its important to buy very good aged balsamic vinegar. The longer the vinegar has been aged, the sweeter, milder, and richer it becomes.
  • Extra virgin olive oil My personal favorite for making vinaigrettes, but you can substitute it with avocado or any other light flavored oil you prefer.
  • HoneyYoull need less honey in this recipe if you use an older vinegar and/or if you prefer a more savory and less sweet dressing.
  • Dijon mustardFor that perfect tangy element that brings out the boldness of the balsamic.
  • Dried thymeThis balances the sweet and zesty notes of the dressing with a mild earthy flavor.
  • Minced garlicBecause every good vinaigrette needs garlic!

How To Make Vinegar & Oil Dressing From Scratch

The popular formula for vinegar and oil dressing is one part vinegar to 3 parts oil. So for one cup of dressing, that would be ¼ cup vinegar and ¾ cup oil. If you find this ratio too oily, try using equal amounts of vinegar and oil, which makes for a more tangy dressing. You may need to experiment a little to come up with your favorite proportion of oil to vinegar.

Difference Between Traditional Balsamic And White Balsamic

Olive Oil & Vinegar Dressing

Traditional balsamic vinegar is a dark, Italian vinegar made from pressed white grapes. It is cooked, then aged in wooden barrels, typically 12-25 years. The longer it ages, the thicker it becomes. It has a strong and complex taste. Very high quality aged balsamic is sweet with the consistency of syrup, and is delicious as a dessert topping or for sipping as an aperitif.

White balsamic vinegar is a golden-white colored vinegar which is also made from white grapes. It undergoes a different cooking process and is not barrel-aged. It has a milder flavor and color than traditional balsamic, and won’t overpower the taste of a salad or cooked vegetables when used as a topping.

Choosing Storing And Using Extra Virgin Olive Oil

Light, heat and air are enemies of olive oil freshness. Look for containers made from dark glass tin or even clear glass placed in a box, or mostly covered by a label advises the UC Davis Olive Center.

Store olive oil in a cool, dark place, such as inside a cupboard in a cooler location away from the stove and oven. Refrigeration will cause olive oil to become cloudy and harden. Olive oil returns to its normal color and consistency when returned to room temperature. If you bought olive oil in bulk, you may wish to refrigerate a portion to prolong its quality until you’re ready to use it.

To enjoy EVOO at its best, UC Davis Olive center recommends buying an amount that will be finished in about six weeks after being opened. If you limit exposure to light, heat and air, it will likely maintain a satisfactory quality beyond this. Properly stored, unopened EVOO may maintain its quality for two or more years.

EVOO, because of its more pronounced flavor compared to other forms of olive oil, is most often used to flavor salads and dressings as a base for marinades and is drizzled on foods, such as pasta, just before they are served. The flavor profile of EVOO varies from robust to more subtle and fruity. Match the flavor to the ingredients red meat, for example, may support a more intense flavor. More delicate foods, such as white fish and veggies, may pair better with a milder EVOO.

How To Store Homemade Salad Dressing

I recommend storing your homemade dressing in a glass container in the refrigerator. I like to use mason jars! One thing to note: homemade dressings made with olive oil tend to harden and separate when stored in the fridge. This is completely normal! Take the dressing out of the fridge about 20 minutes before using so it can come to room temperature and then give it a quick shake to recombine the ingredients.

Why Olive Oil And Lemon Salad Dressing

We make this dressing, or some variation of it, every single day with our salads.

This is partly because olive oil and lemons are something we almost always have on hand.

Lemons are a fantastic food, and full of Vitamin C!

We add a little Oregano to this dressing because we love the flavor of oregano, but feel free to leave it out if you do not have any on hand, or dont like it.

A little fresh parsley can also be a nice addition to this recipe.

What you wont find in this recipe is any added salt, gluten, dairy, or things you cant pronounce. The simplest way is the best way when it comes to food! As a bonus, this olive oil and lemon dressing is also vegan and low sodium.

Taste Adjust Seasonings And Serve

Homemade Italian Salad Dressing

Once its mixed, just taste and adjust the seasonings if you like, and youre good to go. Tasting tip: For the most accurate idea of what the dressing will taste like on your salad, dip a leaf into the dressing, shake off the excess, and try.

If youre not serving your vinaigrette right away, you may have to shake it again right before serving. But heres where the bonus of a couple of the add-ins come into play: both Dijon mustard and honey help emulsify the dressing, which keeps it together longer. So consider adding one or both of these if youre entertaining and dont want the embarrassment of a broken-down dressing or if you are just plain tired of shaking.

And thats it!

Here’s Why Italian Olive Oil Isn’t The Best

Don’t get fooled into thinking Italian olive oils are the best. Or, other oils from around the Mediterranean.

I used to think that Italy and Greece had the best extra virgin in the world. While that might be true sometimes, often it’s not.

Walk in to any supermarket. Pick up a bottle of extra virgin from Italy.

Does it have the harvest date?

If the harvest date was 2016, the oil is probably past mature and therefore on the verge of becoming rancid.

What about an EU certification label?

Chances are, it won’t. And, if it doesn’t, you’re throwing your money away on very poor quality oil. Which, at the end of the day, defeats the purpose of using this balsamic vinaigrette recipe to make a healthy salad dressing.

Does the bottle cost under ten bucks?

And does it just say “imported from Italy” and that’s all the information divulged? Then, it’s likely fake extra virgin olive oil.

Does the bottle say that the olives come from several countries?

If so, don’t buy it.

What Ingredients Do I Need For These Dressings

Olive Oil and Lemon Salad Dressing Recipe

Below, Im sharing fifteen of my favorite simple, easy, and healthy salad dressing recipes that you can make at home. Honestly, you probably have most of the ingredients to make most of the dressings already in your pantry and fridgethere are no fancy pants ingredients that youll have to track down at a specialty store.

For most salad dressings, youll need:

  • Something acidic. Lemon juice, lime juice, balsamic vinegar, red wine vinegar, apple cider vinegar, or white wine vinegar are all good choices.
  • Some fat. Oil is a standard ingredient in most vinaigrette-style dressings. With a few exceptions , you want a mildly-flavored oil that wont stand out in the dressing. Extra virgin olive oil or avocado oil are my favorites.
  • Something sweet. A little sweetness can bring all the flavors together and round out the dressing. Honey is my go-to, but maple syrup, agave, or even a bit of granulated sugar will work as well.
  • Salt, pepper, garlic, and other herbs and spices. Salt and pepper will enhance the flavor of the other ingredientsdont skip them where they are called for!

All of these recipes can be made using the jar-and-shake method. Just grab a jar with a tight-fitting lid , toss in all the ingredients, and shake the dickens out of it until its well-blended. There are a couple of recipes below that could be made smoother if you use a food processor or a blenderbut you dont have to if youre fine with a chunkier dressing.
