Is Peanut Butter Healthy

Peanut butter can be great for your health. Its high in fiber and protein. You can use it in place of protein shakes, protein bars, and other protein-based food products. Peanut butter can also be used to make low-carb and ketogenic diets a little easier. Many peanut butter snacks and bars are high in carbs. But if you look at the nutrition label, youll find that the carbs are usually listed as grams of sugar, not grams of carbohydrate. This is because the carbs are broken down into different components. One of these components is glucose, which is a type of carbohydrate. When you eat foods containing carbohydrates, the carbohydrates are broken down into glucose. For this reason, the carbs on a nutrition label can be different from the total carbohydrate count. If you eat foods that are high in protein and fiber, youre eating healthy foods. And peanut butter is no exception. This blog contains some relevant posts that will help you understand the health benefits of peanut butter. A great resource for learning about the health benefits of peanut butter is the Peanut Butter University page on the subject. Chicken Salad With Yogurt Is A Lighter Chicken Salad Its Also A Low

Chicken Salad with Greek Yogurt is the perfect recipe for a warm summer day, a healthier lunch, or a fresh delicious way to use up leftovers.

Up until now, I havent shared a lot of salad recipes like this light chicken salad recipe. The reason is that John has a major aversion to mayonnaise.

I grew up eating chicken salad sandwiches, ham salad, and egg salad, but once I married his highness I thought those days were over.

I bought a large package of boneless-skinless chicken breasts when they were on sale. Usually, Ill do this and put them in smaller packages before freezing them but didnt get that done this time. So, when I thawed them we grilled up the entire package with just a little olive oil, salt, and pepper.

We had a delicious chicken dinner but I had to get strategic using the rest of the leftovers. This Chicken salad no mayo recipe was a great choice!

Im really picky about chicken salad for some reason. It has to have distinct flavors and maybe thats why I like Chicken Salad with Yogurt. The thyme is a great contrast to the sweetness of the Craisins .

The texture is a thing with me too. Some salads are really kind of mushy. This no mayo chicken salad uses diced chicken, crunchy celery, walnuts, and fresh green onion and just enough yogurt to tie it all together. Not bathe in it.

How Do You Make Chicken Salad From Scratch

To make chicken salad you need to start with cooked chicken. You could use leftover rotisserie chicken or poach a chicken breast. Usually I poach chicken in water with celery and black peppercorns to make this recipe. It only takes the chicken 10 -12 minutes to cook and I can prep the other ingredients while that is on the stove.

While the chicken is cooking wash and chop celery, grapes and pecans. Add to a large bowl with dried cranberries. Set this aside while mixing the ingredients for the Greek yogurt dressing.

At this point chicken should be cooked and ready to chop. With a sharp knife chop chicken into very small pieces. When cooled add to bowl and pour dressing over top. Use a spoon to mix well coating everything with dressing.

Is Chicken Salad With Greek Yogurt Healthy

The BEST Greek Yogurt Chicken Salad

This answer of course depends on how exactly the recipe is made and what ingredients are used. Chicken salad can be a healthy option, however traditional chicken salad is made with mayonnaise that can be very high in calories. That is why I substituted the mayo for Greek yogurt. I opted for the whole fat variety which still has remarkably less calories and fat when compared to mayo!

Please note, this dish is slightly spicy but its not too hot. Omit the jalapeno if you want to remove a lot of the heat. Also, its important that when dicing the vegetables, you try to keep everything about the same size. That way, you get a little taste of everything in each bite. The only two items that are finely diced are the jalapeno and shallots.

Greek Yogurt Chicken Salad Tips

  • I always like to mix the seasonings into the yogurt before combining with the salad ingredients. This allows all of the seasonings to be very evenly distributed throughout the salad without having to over mix it.
  • Also, if you want to add some of the richness back into the salad, you can use 1/2 cup greek yogurt and 1/2 cup mayonnaise.
  • If you are making this for a potluck, picnic, brunch, shower or other group, I recommend making it the night before to let the flavors really combine well before serving.
  • This Greek Yogurt Chicken Salad will keep in the refrigerator in an air tight container for 3-4 days and works well for meal prep.

Can You Use Plain Greek Yogurt Instead Of Mayo In Your Healthy Chicken Salad Recipe

Short and simple answer, yes! Definitely try substituting some plain Greek yogurt for things like mayonnaise and/or sour cream.

We use plain Greek yogurt a substitute for sour cream on tacos and burritos, as our favorite topping on our Healthy Beef Chili Recipe or our White Chicken Chili. We also use it as a substitute for mayo on a lot of things like this healthy chicken salad recipe.

It works so well because of the tangy flavor and the similar creamy consistency. Basically, instead of an absurd amount of mayo or sour cream, some plain Greek yogurt in your chicken salad or other recipes gives you a boost of protein and probiotics along with a nice rich creamy flavor.

Make Chicken Salad With Leftover Chicken

Like most chicken salad recipes, using leftover chicken makes this come together quick and easy. Luckily, I have a local market that makes some of the best rotisserie chicken in the area. Its a great way to make this a rotisserie chicken salad with Greek yogurt in under 30 minutes.

When I have time, I usually roast 2 or 3 split chicken breasts and use them in this salad. I like breast meat because it is easy to flavor and low in calorie compared to other parts of chicken. If you need a foolproof recipe, be sure to try my Oven-Baked Bone-In Chicken Breast recipe.

With that being said, you can use an equal amount of roasted chicken thighs as well.

PRO TIP: For this recipe, I purchase about 3 large rotisserie chicken breasts, since one breast will give you roughly 1 cup of cubed chicken. If you dont mind a mix of light and dark meat in your salad, 1 whole rotisserie chicken will yield about 5-6 cups cubed chicken. You can either double the recipe or use the other half for another use.

Tips For Making Healthy Chicken Salad

As I mentioned above, I prefer cooking my chicken breasts in the Instant Pot. But of course you could poach, bake, or use rotisserie chicken as well.

If you dont have tarragon on hand, or arent a fan, use a flat-leaf parsley, dill, or thyme instead.

I used nonfat Greek yogurt because I like the tang it adds to the healthy chicken salad, but youre welcome to use low-fat or full fat as well. Just be sure to use plain Greek yogurt!
