- Soak the Salad leaves in cold water– Salad looks and tastes amazing only if the ingredients used are fresh. Though we may prefer and want to use beautiful ingredients, it’s not always possible. The time in the refrigerator wilts most salad leaves. You can make these sad leaves vibrant again by soaking the salad greens in ice water for a few minutes.
- Avocados– The other nifty tip is how to use avocados in salads. Usually, avocado tends to darken and look unappetizing when exposed to air. To help this situation and make sure the avocados stay pretty till its eaten, make sure you add them towards the last and sprinkle generous amount of lime juice on them to keep them looking fresh.
- Quinoa-To cook quinoa, always wash it in running water to remove the bitter coating from it. Boil it in water for about 15 minutes till the quinoa curls loosen and but there is still a bite to it. Or pressure cook the quinoa in the instant pot.
- Once mixed, the salad will last for 1-2 hours before it starts to wilt. If you are carrying this salad for lunch, keep the dressing and the rest of the ingredients separate.
How To Make Balsamic Vinaigrette
If you plan to serve this up for a crowd, vigorously whisk together the oil, balsamic vinegar, honey, mustard, salt, and pepper in a small bowl for everyone to use. The vinaigrette should be slightly emulsified.

You cant go wrong with extra virgin olive oil, which I use 95% of the time.
Or choose a light, flavorless oil like grapeseed oil, canola oil, or vegetable oil. Avocado oil can be delicious, too. For some extra flavor, you can even swap in a touch of nut oil like walnut oil or hazelnut oil or a bit of sesame oil adds a nutty vibe that complements Asian foods nicely. Just use a light touch with the more potent oils.
It goes without saying that higher quality oil is going to taste the best. But personally, as you can see by the photo, Im not opposed to a little Costco generic brand love. Tastes pretty great to me!

This dressing is very thin, and it doesnt require much effort to mix, so all you really need to make it is a mason jar with a good lid. Add your ingredients, shake until theyre combined, and refrigerate until youre ready to use it. It is that simple! You can use a blender or food processor if you want, but its definitely not necessary.

Make the dressing first. The raw shallot needs to sweat a bit in the vinegars and ooze it’s oniony oils out.

I consider this recipe one of the simplest yet most delicious dressing recipes. If you want to make a ‘top-shelf’ dressing, make sure you are using top quality oil, and top quality balsamic.
For example real olive oil, is less processed, unrefined and rich with flavor. Other oils like avocado oil are neutral and maintain their quality when emulsifying vinaigrettes. If you want to use olive oil, use a more neutral tasting olive oil – not necessarily extra virgin, as the flavor of such will overhaul the vinaigrette, instead of harmoniously working together with the balsamic. For this recipe I chose avocado oil because of it’s neutral characteristics. The small addition of olive provides the necessary slight olive taste of a classic balsamic vin.
There are also some balsamic aged options out there that would take this recipe to a whole new level. Now, I’m not telling you to use your $300 balsamic bottle to make a dressing — that would be a dishonor to that bottle. But if you have a good bottle of balsamic at your disposal , you may want to consider using it.
