    I make this salad a lot in summer. It is an easy dinner, and it also makes a great side dish for a BBQ. Here are a few tips I have learnt over the years of making this salad:

  • Beetroot become impossible to peel if they are allowed to cool completely. Peel them as soon as they are cool enough to handle. Trust me on this one.
  • If you have let your beetroot cool too much, a small serrated knife will help you prise the skin off. This is a slow, painful process. I suggest you adhere to the point above.
  • Taste the beetroot before tossing it with the dressing, as some beetroot varieties can be quite sweet. If the beetroot is very sweet, add a little more vinegar to the dressing to balance out the flavours.

  • If it is too hot to turn on your oven, then beetroot can also be successfully roasted in a covered BBQ .
  • The beetroot can be roasted up to three days ahead. If you are going this route, peel and cut the beetroot as soon as it has cooled slightly, and toss it with a third of the dressing. Cool and refrigerate until required. On the day, proceed with the salad as detailed in the recipe. This is how I make this beetroot salad for Christmas Day.

    Peel the beets with a vegetable peeler. Then cut them into ½-inch cubes. Try to make them as close to the same size as possible so they roast up evenly in the oven.

    Coat the beets with oil, salt, and pepper by tossing everything in a large bowl. Avocado oil or another high smoke-point oil is recommended.

    Bake at 400°F on a parchment paper lined baking sheet for 30-40 minutes. Use a spatula to flip them halfway through.

    Beet Salad With Goat Cheese

    This is a delicious and easy salad which takes little time and is a great meatless main course. It uses beets, goat cheese, candied walnuts and baby greens. For a main dish salad, add chicken. Feel free to include more of your favorite vegetables too.

    • 4 medium beets – scrubbed, trimmed and cut in half
    • cup chopped walnuts
    • 1 package mixed baby salad greens
    • ½ cup frozen orange juice concentrate

  • Wash beets, pat dry and cut off the stems. SEE PIC. 1
  • Pour water into the pot of your Instant Pot Use 1 cup of water for a 6-qt and 1 ½ cups for an 8-qt. Instant Pot. Place trivet inside of the Instant Pot.
  • Place beets on a trivet in one layer. Make sure to not pile them on top of each other. Do not peel them! SEE PIC. 2
  • Using Instant Pot manual mode or the steam button, set time manually for 15 minutes
  • Lock the lid and turn the valve to the sealing position, cook beats for 15 minutes. Larger beets will need more time to cook.
  • Remove them from the Instant Pot using tongs. SEE PIC. 3 Peel them, remove ends, and cut as desired. SEE PICS. 4 & 5 For a cold salad, chill beets for at least 30 minutes.
