Ina Garten Charlie Bird’s Farro Salad
The basic farro salad is made with cooked tender farro mixed with fresh diced veggies such as cucumber, tomatoes, radishes, and goes on. farro salad also includes greens like bay leaves, parsley, mint leaves mixed with some bright salad dressing like vinaigrette dressing. Some recipe includes pistachio or walnuts or even almonds.
But in This Ina Garten Farro Salad, we will use tomato, parsley, radishes, mint, and bay leaves. You are free to choose to add some other veggies or greens. After that, we will make the vinaigrette from olive oil, lemon juice, salt, and black pepper. This vinaigrette adds moisture and flavor to the greens. after all that you should cook the farro until becomes tender, just cook it in the water for 30 min. Now all your ingredients are ready you just mix the veggies and the farro with pistachios or any other nuts then top with chopped parmesan.
You can also pour some mayonnaise or garlic sauce it will be a great topping for farro salad.
How To Make Farro
Cooking farro is pretty easy and straightforward. Although the cooking time can depend on the type of farro you use and how long it was sitting out. Usually when I cook farro I like to use a three to one ratio. So for one cup of uncooked farro, I use three cups of liquid. I like to typically cook mine in some kind of broth or stock but vegetable works too. For this farro salad recipe, I used mainly chicken broth mixed with some water. If you are using stock or broth, be mindful of how much salt you add to the pot of liquid.
The main thing to do is that after about 20-25 minutes of cooking, taste it and see if it’s cooked to your liking. It should be chewy still. I personally like cooking it al dente. Once it’s cooked to your liking, go ahead and drain it through a sieve and then place it back in the pot until you’re ready to use.

Farro And Mushroom Gratin Recipe
In this elegant gratin, nutty farro and earthy mushrooms are baked with herbs and mascarpone into a creamy casserole topped with Gruyère. Its a rich, meatless meal that needs nothing more than a crisp green salad to round it out, though its also a satisfying side dish alongside roast chicken or fish. You can prepare the entire gratin earlier in the day , then bake it just before serving simply add a little extra time to ensure that it emerges from the oven steaming hot through and through. Note that if youre using tangy crème fraîche instead of mascarpone, you may not need the lemon. Taste before squeezing.

The Way To Generate Charlie Bird Farro Salad
Step 1: Blend farro apple cider vinegar, salt, water, and bay leaves in a medium saucepan. Bring to boil reduce heat and simmer for 30-35 minutes before the farro is still tender. Let cool.Step 2: Whisk together lemon juice and coconut oil in a big salad bowl.Step 3: Insert farro into the dressing and toss to coat.

Charlie Birds Farro Salad

Charlie Bird is the name of a restaurant in Soho, and this wonderful dish was created by Chef Ryan Handy. The farro is cooked in apple cider and bay leaves and is flavorful enough to eat on its own. But when combined with Parmesan, nuts, herbs, tomatoes and arugula it becomes something quite special.
Speaking of special, this recipe was recommended to me by a friend of 40 years that I admire greatly, Yvonne Deggelman. One of those women that seem to do twice as much as everyone else, while making it all seem easy and enjoyable.She juggles numerous work, volunteer and family commitments while throwing weeknight themed dinner parties, and is a dedicated sports fan of all Northern California teams. Charlie Bird’s Farro Salad Ingredients
- 1 cup pearled farro
- 1 cup fresh apple cider
- 2 bay leaves
- Kosher salt and freshly ground black pepper
- ½ cup extra virgin olive oil
- ¼ cup freshly squeezed lemon juice
- ½ cup roasted, salted pistachios, whole or chopped
- 1 cup roughly chopped fresh parsley
- 1 cup roughly chopped fresh mint leaves
- 1 cup cherry or grape tomatoes, halved through the stem
- cup thinly sliced radishes
- 2 cups baby arugula
- ½ cup shaved Italian Parmesan cheese
- Flaked sea salt
S A L A D / Preparation
in a large bowl, place the arugula, pistachios, parsley, mint and radishes. add the farro and parmesan cheese to your preference. drizzle on the lemon vinagrette with some lemon juice and salt and peper to taste.

Making This Charlie Bird Farro Salad My Own
It’s been about four years since I went to Charlie Bird and had that delicious farro salad. The original recipe calls for tomatoes, arugula and thinly sliced radish. It can also be served with squash as well . Anyways, I made it my own by changing a few things and making it a little easier to make. It’s still crazy delicious, and honestly it’s one of those salads that I could happily eat everyday.
For my version of the Charlie Bird farro salad I kept the arugula, the parm, the pistachios, the lemon and the flaky salt . If you don’t know, I LOVE flaky salt . I’ll add flaky salt to just about anything, especially, when baking. Check out my brownie cookies with flaky salt to see! And I used sweet potato because it’s easier to cook and more accessible year-round.
How To Meal Prep This Farro Salad Recipe
If you want to meal prep your farro salad, I have a few ideas to keep it tasting delicious as the days go on. Although if you will be eating it within one day, I personally just throw it all together. I don’t find that the arugula gets wilted too much and it’s still very enjoyable.
You can store the farro with the sweet potato. Then keep the dressing separate in a small container. Keep the arugula and mint separate along with the toasted nuts. When you want to have some farro salad, simply combine everything together in a big bowl.

I have had this apple cider-cooked farro recipe in my to-make file ever since tearing it from the November 2014 Bon Appetit. The recipe notes mentioned the apple-cider-boiling technique hailed from Charlie Bird, a restaurant in NYC, which meant nothing to me, but which sounded interesting all the while.
Over the years, Ive seen this farro salad pop up on various blogs and food sites, and when I read in Ina Gartens latest book, Cook Like A Pro, that Melissa Clark had written about the salad it in The Times in December 2013, things started to make sense. Sometimes I feel I live under a rock.
In any case, this salad has many admirers, me now included. Like many grain salads, it is endlessly adaptable to tastes and preferences as well as to whats in season. Unlike many grain salads, this one begins, as noted above, by cooking the farro in a well salted mix of apple cider and water. As the farro cooks, it absorbs the flavors of both the salt and the cider, and it emerges slightly sweet and very well seasoned.
Ina says she could happily eat this salad for lunch every day. I would agree, adding that it makes a lovely dinner as well aside a bowl of soup with a hunk of bread on the side.

Prep The Lemon Vinaigrette
The dressing itself couldn’t be easier. It’s simply a mix of extra virgin olive oil and fresh lemon juice with a pinch of salt.
And roughly chop the pistachios, no need to toast them . If you can’t use or don’t have pistachios, I think walnuts could work as well. However, pistachios are a little more traditional for this Italian inspired farro salad.

It’s seriously good, and I personally think it’s the best farro salad recipe out there. I wanted to put a little bit of my own spin on it and make it a bit easier. So here is my version of the Charlie Bird farro salad.
Adapt Famous Farro Salad For Your Own Palate
Last winter, I came across a recipe for the famous Charlie Birds farro salad from the namesake restaurant in New York City. With farro as the base, the salad was resplendent with fresh herbs and tomatoes, ingredients I usually have in my garden but not in December. I bookmarked the recipe, and put it on hold. This summer I finally got around to making it.
What merits this particular farro salads claim to fame? To start, the farro is cooked in apple cider and aromatics. This imparts a deep savory-sweet flavor to the nutty taste of the farro. It is then tossed with a zingy dressing of olive oil and lemon juice. This part of the salad can be done ahead of time, making it a great choice for a dinner party. Another option is to use the farro base to make individual weekday salads.
Right before serving, you add an array of ingredients crunchy nuts, sweet tomatoes and peppery arugula. A generous addition of fresh herbs rounds out the flavors. With an exuberance of so many colors and textures, the salad is almost a work of art.
The first time I try out a new recipe, I attempt to follow it as written. Sometimes, however, this is not practical. I have heirloom tomatoes from my garden, so running to the store for cherry tomatoes from Mexico seemed downright silly. I also found that the amount of salt called for in the original recipe was way too much for my taste.
