I think chicken salad can get a bad rap because it has mayonnaise. Mayonnaise is high in calories and fat, but a little bit goes a long way. I like using avocado or olive oil based mayos and look for brands made with organic eggs and without added sugar. My personal favorite is Primal Kitchens avocado oil mayo.

This is not your ordinary curry chicken salad its a GODDESS CURRY CHICKEN SALAD. Which basically just means I feel like the summer goddess of health and wellness when I eat this. Especially on an everything bagel. So, yes, my definitely of health and wellness goes a little bit outside the box sometimes.

This really isnt all that different from a regular curry chicken salad, except no fruit none of this apples or grapes or blueberries business and no mayo. As you have seen from my love of Wild Rice Burgers, I have a healthy love and respect for good old fashioned mayonnaise. But if were getting into the summer goddess zone? Goodbye, mayo. Greek yogurt feels like such a basic stand-in, but thats because it works. Its good. It is thick, creamy, and the added tang is a welcome addition to this salad, IMHO.

Real Chicken Talk: THIS CHICKEN, you guys. I will never make another kind of chicken for salad toss-ins. I cut it in half horizontally, so the pieces were super thin, and then I loaded them with garlic powder, onion powder, curry powder, salt, and pepper. Sautéed in a little olive oil, and MWAH. Best quick chicken ever. I even let it get a little extra browned on the outside because I play by my own rules.

  • Chicken: I use boneless, skinless chicken breasts chopped into little, about half-inch, squares
  • Substitute: If you’re vegetarian, or not a chicken fan, you can use chickpeas instead!
  • Onions: I used 1 ½ onions in this recipe. Onions are one product I always have an ample amount on hand, I put them in everything!
  • Garlic: I used 3-4 fresh cloves of garlic. If you don’t have garlic, you can use 1 tsp of granulated garlic. If you don’t keep garlic in your spice cabinet, order that -ish right now.
  • Ginger: I used about ½ inch of freshly grated ginger. I’ve been on a huge fresh ginger kick with throwing it in smoothies and recipes, like this, wherever I can. If you don’t have fresh ginger, you can use 1 tsp ground ginger from your spice cabinet.
  • Curry Powder: Once you have this in your spice cabinet, you will add it to SO much. Joanna Gaines has a phenomenal Curry Chicken Salad recipe that will not disappoint.
  • Red Pepper Flakes: I only used ½ tsp, because I added a decent amount of Sriracha right at the end of cooking. Between those two spices, this chicken curry recipe carries a KICK.

  • Sriracha: Pour as much as your heart desires. Remember, you can always add more. I would say I used about a tablespoon.

    1 pound cooked boneless chicken breast halves, chopped
    ½ cup golden raisins
    ½ cup roughly chopped fresh cilantro
    ½ cup shredded carrots
    cup toasted cashews, roughly chopped
    ¼ cup finely chopped red onion
    1 cup plain Greek yogurt
    1 tablespoon freshly squeezed lemon juice
    1 tablespoon honey
    1 pinch sea salt and freshly ground black pepper to taste

    Steps:

    • Combine chicken, raisins, cilantro, carrots, cashews, and red onion in a large bowl.
    • Whisk Greek yogurt, lemon juice, honey, garam masala, ginger, turmeric, salt, and pepper together for the dressing. Taste and season as desired. Pour dressing over salad and toss to combine. Serve immediately or store in a sealed container in the fridge for up to 4 days.
