For this recipe, I mixed a simple Greek salad with spinach and grilled chicken and the combo was super delish. But you can change that with your favorite veggie salad as most of them go perfectly with the other two ingredients.
I topped everything with a delicious Greek dressing that is suitable for any salad. And you can make a large batch and refrigerate it in a lidded jar, or bottle, for up to 5 days.
That will come handy especially if you do meal planning, but make you sure you add the dressing to your food only before serving.

How To Make Grilled Teriyaki Chicken
Lets fire up the grill and get cooking! Well, after the chicken is marinated of course!
Make Marinade: Combine the garlic, ginger, honey, tamari, sesame oil and rice wine vinegar in a small bowl. Set aside half a cup of the mixture for later.
Soak Chicken: Add the chicken thighs to a medium-sized bowl and pour the marinade overtop. Toss to coat all of the chicken thighs in the marinade. Cover the bowl and let the chicken soak in the fridge for at least 30 minutes, or up to 4 hours for maximum flavor.
Heat Grill: Heat the grill to medium-high heat, approximately 350-400°F.
Cook Chicken: Place the marinated chicken thighs onto the grill. Grill each side for 3-4 minutes, or until char marks appear.
Make Sauce: While the chicken is grilling, pour the reserved teriyaki marinade into a small saucepan. Add the cornstarch and water to a small bowl, stirring them together to make a slurry. Pour the slurry into the saucepan with your marinade. Bring the mixture to a simmer over medium-low heat, stirring the entire time. Let it simmer until it has thickened, then remove it from the heat.
Garnish & Serve! Immediately brush each chicken thigh with a generous amount of sauce after you remove them from the grill. Sprinkle on the sesame seeds and chopped green onions.

How Long To Grill Chicken
A typical 4 ounce boneless skinless chicken breast will need to grill for 4-5 minutes per side. If your chicken breasts are larger or smaller, you will need to adjust the cooking time accordingly. You can also make this recipe with boneless skinless chicken thighs, which will cook for 6-7 minutes per side.
How To Know When Chicken Is Done
The easiest and most accurate way is to use a meat thermometer. The internal temperature should be 165 degrees.
Make sure to insert the thermometer into the thickest part of the chicken breasts. This will ensure accuracy.

- The chicken should marinate for at least an hour, but you can really leave the chicken in the marinade for up to 8 hours.
- This dressing calls for finely minced shallots, which taste like a cross between garlic and onion, except theyre milder. Shallots can be found with the rest of the onions at all grocery stores.
- You can use fresh, canned or thawed frozen corn in the salad. If its summer and corn is in season, try tossing cobs of corn on the grill alongside chicken, then cut the kernels off to go in the salad.
- I make this salad all year round, with an outdoor grill in the warmer weather months and an indoor grill pan during the winter.
- The chicken can be cooked up to 2 days before you plan to make your salad. You can heat the chicken up or place it cold on the salad, whatever you prefer.

- Preheat your grill. It needs to be over medium high heat .
