    Self-serve salad bars have long been a boon for grocery retailers. Customers love the convenience of creating just-to-their liking combinations of fresh greens, vegetables, toppings and dressings, and retailers appreciate the pay-by-the-pound profits.

    While sales had been declining in the years before the pandemiclargely due to the rise of fast-casual salad chains such as Sweetgreenssalad bars continued to bring in significant revenue. In the year before the shutdowns, according to Chicago-based market research firm IRI Integrated Fresh, total U.S. multioutlet dollar sales for the deli salad bar category totaled $436 million and volume sales reached 63 million pounds.

    What Will Become Of The Salad Bar

    The salad bar in the main cafeteria at Reading Hospital in West Reading, Pa., was serving 600 to 800 people a day before the COVID-19 pandemic hit. And despite social distancing and eliminating self-serve, it continues to dish up 450 salads daily.

    Like foodservice operations everywhere, Tower Health, under whose banner Reading Hospital falls, was forced to shutter its salad bar last spring. Since then, operators have had to be ultra-vigilant about safety and sanitation, and most salad bars have remained in disuse. But not all.

    Tower Health switched to a served salad bar, placing two foodservice employees inside the oval-shaped serving area and adding Plexiglas and safety-glass barriers. We decided the demand for healthier options would outweigh the risks, says Dennis Brennan, manager of retail food operations.

    Operating this way is much slower, he says, because customers can be indecisive and are reliant on staff. However, at peak times, he moves extra staff to the salad bar to speed up service. Hes also reduced the number of options from around 50 to 30. The salad bar features the favorites, but also rotating items so guests can have a different combination every day.

    Still, Brennan expects this style of salad bar to stick around. I cant ever see the self-serve model coming back, he says.

    As they focus on packaged meal sales in the short term, retailers are also thinking about half-sized salad bars and new concepts like fresh protein stations.

    Nearly a year into the pandemic, the self-service prepared food stations that long played a central role in drawing customers to grocery stores remain largely shut down or significantly altered to accommodate safety protocols a highly visible reminder of how profoundly an unseen contagion has rewritten the rules of retail.

    But even as the rollout of COVID-19 vaccines ramps up, the extent to which people will want to return to helping themselves to salad and other items in grocery stores remains far from certain. That’s prompting industry officials, retail designers and equipment suppliers to rethink the role self-service will play in stores going forward.

    “I think consumers are going to have a hard time going back to the way salad bars are perceived to be there’s a mental barrier there that I’m not sure we’re going to get past,” said Robyn Novak, vice president and retail practice leader at Nelson Worldwide, an interior design, brand strategy and architecture firm that has worked with retailers including Kroger, Target and Whole Foods. “But at the same time, what a great opportunity for a brand to think about how do you create the theater that they create now in the bakery, in the cheese shop, in the deli, in the sushi counters.”

    Acknowledging the shifting landscape in foodservice, equipment companies are modifying stations to provide increased flexibility.

    Hussman, which supplies food retailers with salad bars, refrigerated cases and other units to store and display food, has developed a kit that can be used to retrofit salad bars so they can display products in tiers instead of on a flat surface, said Francie Dannemiller Jenks, a business development manager for the company. New salad bars Hussmann sells come with the extra hardware built in.

    Hussmann is also working with retailers to install doors on refrigerated units that house bagged salad ingredients and other items that used to be out in the open.

    “It should be a huge thing, especially if we’re going to be going to pre-packaged, because putting something behind a door actually should make the lifespan longer because that product is sitting inside an refrigerator,” said Ryan Petrick, another Hussmann business development manager.

    Jack Sjogren, a design center specialist for refrigeration and display case supplier Hillphoenix, said the company has modified equipment in response to the shift away from self-service. It has made food bars convertible and developed merchandising ideas to help its customers display pre-packaged items more effectively, he wrote in an email.

    No small goal for any foodservice operator, increasing check averages represents a constant, front-of-mind effort. Managers achieve this with limited-time-offer items and upsell options like adding grilled shrimp, a lobster tail, or a specialty house sauce. If your guests are already spending a good amount on their meals, some of these upsell options may seem over-the-top making them a harder sell. However, a salad is different because of its healthy positioning and the perception that its part of a complete meal. If you have a beautiful salad bar, youre in a better position to increase your check averages because:
