- Tuna: I like to use white albacore as it has a great chunky and firm texture that doesnt disappear when you mix it with the other ingredients
- Celery: Celery adds a wonderful crunchy texture as well as a hit of freshness.
- Red onions: I prefer to use red onion in salads as it is much milder than white. Mince it finely so that its not overpowering.
- Greek yogurt: I use Greek yogurt rather than mayonnaise, to make this wonderfully creamy. Greek yogurt is also a great source of protein and probiotics.
- Lemon juice: Use freshly squeezed lemon juice for a wonderful zingy taste that cuts through the yogurt.
- Dijon mustard: Mustard adds some tang and spice and works so well with the other ingredients.
- Salt and pepper: To help bring out all of the other flavors.
- Parsley: Fresh parsley really lifts this dish and makes it light and fresh tasting. You can use other fresh herbs like cilantro or dill.
How To Make Tuna Stuffed Avocados
One of the things I love about this recipe is how easy it is to make.
Just add the tuna, mayonnaise, celery, onion, herbs, Dijon mustard, salt and pepper to a small mixing bowl. Use a fork to break up the tuna and thoroughly mix all of the ingredients together.
Then use a large knife to cut your avocados in half and remove the seed. Add a few dollops of tuna salad onto each avocado half and thats it so easy. To eat the tuna stuffed avocados, just use a spoon or fork to scoop out a bite of the tuna salad with a chuck of avocado. Its creamy, savory, herby and slightly crunchy from the celery and onion. Totally delicious.

After testing a few ways to make this, I find that using a food processor creates the best texture. It becomes light and fluffy, resembling grains of rice.
But if you dont have a food processor, using a blender or knife works just fine.
- Blender Method: Cut the broccoli into small pieces and place in the Vitamix. Then pulse until it resembles grains of rice. Scrape down the sides along the way to make sure everything is blended.
