- Assemble just before serving: Italian pasta salad, like most pasta salads, tastes best the same day it is made. It will keep longer than that, but the textures and flavors are better when freshly combined.

- Play with amounts: We think our version of Italian pasta salad is just right, but you can easily double the dressing amounts, add more salami or mozzarella balls, or toss in Â½ cup of freshly grated parmesan cheese for even more cheese flavor if you feel like it.
Allow The Pasta To Cool Before Dressing It
Again, I used to be doing it wrong. When making potato salad, were told to dress it while its still hot so it soaks up the flavours. But pasta is a different starch and becomes gummy and dry when dressed while it is still warm. This is why we always hold back some pasta water when making a sauce for hot pastait helps re-hydrate the pasta and loosen the sauce.
My foolproof method: Drain the pasta transfer to a large mixing bowl and immediately drizzle with olive oil and season with salt. Stir until all the pasta is well coated in oil. This will prevent it from clumping. Allow the pasta to cool for about 15 to 20 minutes, giving it a few occasional stirs while it sits.

My personal favorite part about this topping is the little sesame seeds in this mix. They just add a subtle crunchy texture to this pasta salad thats so good.
Again, this is totally optional but usually gets people talking about how yummy the pasta salad is so its a bit of a secret ingredient if youre looking for amazing flavor.
