In my humble opinion, there is no store bought Macaroni Salad that would ever compare to the homemade version. This really is my favorite macaroni salad and the only macaroni salad recipe I ever make.

- How long does macaroni salad last? Macaroni salad with egg should be stored in an airtight container in the refrigerator and will keep for 3-5 days. Do not leave this salad out at room temperature or, worse, out in the sun. If you think it might have been left out for too long, your best option is to toss it. Mayo-based dressings do not do well in the heat.
- Can you freeze macaroni salad? I dont recommend it. Salads with a mayonnaise base tend not to freeze well, as the sauce may separate. You can technically freeze the salad and the dressing separately but I just prefer to make it fresh each time. Then theres no need to worry about flavors or textures changing and youre guaranteed a fresh, flavorful salad.
How To Make The Best Creamy Macaroni Salad Recipe
Cooking the macaroni correctly is essential to a good mac salad. Overcook it and youll end up with mushy bites that wont stand up to the mixing with the vegetables. Cook the macaroni al denté as you would your favorite Italian pasta. Watching your cooking time and cooking to the package directions should ensure the perfect bite. And to be sure, taste test every minute or so when coming to the end of your cooking time.
After cooking, rinse the macaroni so it doesnt stick. The macaroni salad trick I learned from my mom is to rinse the pasta after cooking and drain it really well so theres no residual water lurking in the pasta nook and crannies. Rinsing the pasta under cold water stops the cooking time and removes some of the starches created from cooking. As the pasta cools, toss it a bit with your hands or a spoon so it stays loose and doesnt clump together.

How To Make The Best Macaroni Salad:
Prepare macaroni according to package directions. Drain macaroni well, and rinse with cold water until pasta has cooled.
Meanwhile, in a large bowl, combine mayonnaise with chicken stock.
Whisk together well and season with a bit of salt and pepper. I do enjoy about a tablespoon or so of freshly ground black pepper in this.
Add in drained pasta along with green pepper, radishes and onion.
Stir well until combined. Cover with plastic wrap.
Now, this next step is really important. You need to put it in the refrigerator and let it cool for at least 3 hours.
This really helps the flavor come together and give the pasta a bit of time to soak up the mayonnaise mixture.
Dressing For Pasta Salad
When making a pasta salad, its best to toss it in A LOT of dressing to prevent it from drying out and getting pasty. Instead of using all mayo, we add in a bit of sour cream to cut through the fat, making it less oily. You can also use yoghurt or Mexican crema.
WHAT TYPE OF MAYONNAISE? I suggest using whole egg mayo as it tends to be less sweeter and creamier than regular mayo.VINEGAR: adds a kick of tang! You can use white vinegar, apple cider vinegar, or white wine vinegar. Substitute with lemon juice for a citrus kick.DIJON MUSTARD adds MORE flavour, making it nice and thick.MINCED GARLIC completes the flavour profile. You can use garlic powder, onion powder or minced shallots if you prefer.

How Long Does Macaroni Salad Keep
Macaroni salad is best served the same day it’s made. If you’re serving this at a picnic, be sure to only let the salad sit out for a maximum of two hours.
Refrigerate all leftovers the leftovers will get a little dried out, but will still be good for 2 to 3 days. We do not recommend freezing this salad.

This salad is a mashup between Greek and Italian pasta salad. Greek because we add both Kalamata and green olives and Italian because we throw parmesan and fresh mozzarella cheese into the mix.

What Do I Need To Make Macaroni Salad
- Pasta: though you can use any small shape of pasta you like, it is usually made with elbow macaroni. Some other pasta shapes that would work: ditalini, cavatappi, cavatelli, shells, and farfalle.
- Pimientos: are cherry peppers that are sweet and almost like a more flavorful red bell pepper. Theyre usually found in the condiment or pickled pepper aisle sold either diced finely or in strips. If you cannot find them, you can replace them with a fresh red bell pepper thats been finely chopped. Or even better, replace with fire-roasted peppers that come in a jar!
- Shredded carrots: I use a box grater and finely shred the carrots myself for this recipe but you could also use store-bought matchstick carrots.
- Chopped celery: Use fresh finely chopped celery so the flavors carry all the way through.
- Chopped onions: I like to use sweet onions for this recipe. They are usually sold where all the other onions are kept at the store but marked as sweet. You could use red onions if you prefer a stronger, more pungent flavor.
