Refrigerate salad for up to 5 days. I like to place it in a glass container or bowl with tight plastic lid.

I have not tried freezing chicken salad but I dont think chicken salad freezes well. It has a lot of fresh veggies to go limp once thawed. But maybe because they are coated in mayo and yogurt Let me know if you try. We never have any leftovers to freeze.

This healthy, no-mayo Greek yogurt chicken salad with celery, grapes, and pecans is perfect to meal prep on Sundays for a week’s worth of healthy, delicious lunches!

I don’t do meal prep often, but I do love having chicken salad around for healthy lunches throughout the week. My husband and I both love chicken salad, and it’s so easy to pull from the fridge and use in sandwiches or to eat with crackers. This is my easy, healthy, go-to chicken salad recipe. It uses no mayonnaise , and is loaded with yummy add-ins like grapes and pecans. Whip some up on a Sunday, or anytime you have leftover chicken!

How To Make A Buffalo Chicken Salad With A Greek Yogurt Ranch Dressing

Step 1: Season and saute buffalo chicken

To begin, slice chicken breast into thin small strips. Then, toss chicken in salt, pepper, garlic powder, and smoked paprika. Heat oil over medium heat.

When the oil is hot, add the chicken to the pan. Saute chicken for 7 minutes tossing frequently.

While the chicken cooks, melt butter and hot sauce together. Add butter and hot sauce mixture to the pan after 7 minutes and cook for another 2 minutes. Remove the chicken from the heat.

Step 2: Chop veggies and prepare ranch dressing

While the chicken cools, prepare the Greek yogurt ranch dressing by mixing the yogurt, mayo, lemon juice, onion powder, garlic powder, dried dill and dried parsley in a small bowl until a smooth, even mixture remains.

Then, chop romaine into thin shreds and cube celery, cucumber, and avocado.

Step 3: Assemble salads

To prepare the salads, plate the romaine with the buffalo chicken, cucumber, celery, and avocado. Top with chopped scallions and the ranch dressing.

Yes! I personally love that it is naturally balanced in fat, fiber and protein.
