Serving: You can serve this chicken salad however you like! We like it on a sandwich or a salad, but its also great on top of apple slices, in lettuce wraps, or even as a healthy dip.

How Do I Make Healthy Chicken Salad

To make chicken salad healthy, start by substituting the mayonnaise for plain Greek yogurt. It is a much healthier base and doesnt contain mega-transfat or unhealthy oils.

To the Greek yogurt, add cooked, diced chicken, lemon juice, garlic salt, green onions and diced celery and stir together to coat. Add in halved red grapes, mandarin oranges and sliced almonds. These are all optional add-ins but really add to the flavor and texture of the chicken salad.

What Chicken Should I Use For Chicken Salad

I use and recommend Costcos pre-cooked hand-pulled rotisserie chicken breast meat. It is wonderfully convenient and a great time-saver. You can also roast chicken breasts in the oven. Check out my tutorial for How to Bake Chicken at Food.com.

There are so many different options for adding flavor to this chicken salad with veggies, spices, herbs, and more. Here are some of my favorite options:

  • Add extra crunch with carrots, red onions, cucumbers, or even chopped cabbage.
  • Add fiber by folding in some drained chickpeas. This turns this salad into a super filling option and is delicious over some salad greens.
  • Make your salad spicy by adding some fresh or pickled jalapenos. You can also try pepperoncini peppers for a milder option. And for a simple option, just add some red pepper flakes or hot sauce.
  • If you love fresh herbs, toss in some chopped dill, tarragon, chives, or cilantro.
  • For some sweetness, try adding chopped apples, red grapes, dried cranberries, or raisins.

Whats In This Healthy Chicken Salad

The essential ingredient in any chicken salad is, of course, chicken. I prefer shredded chicken over chunked in my chicken salad so cooking a few chicken breasts in my Instant Pot is a really quick and easy way to prepare it. I cooked just about 1 pound of skinless, boneless chicken breast to yield 2 cups of shredded chicken.

Because Plain Greek yogurt has that distinctively fresh tang, I mellow the tartness of the yogurt with a mash of avocado and a bit of fresh lemon juice mixed into this creamy mayonnaise alternative. It doesnt hurt that avocado contains many important nutrients in itself, providing an average of 4 grams of protein per avo and boosting the nutrition factor even more.

I used sliced red grapes in my mix to give the salad a bit of sweetness, but you could substitute sweetened dried cranberries or pomegranates, or use a bit of both.

The distinctive crunch factor of any great chicken salad is delivered with celery and chopped pecans. I prefer a big celery bite so I give mine a generous cut, but if youd like a more mellow munch, dice yours instead.

Last but certainly not least, I LOVE the herby flavor of fresh tarragon with chicken and so its always included in recipes like this.

Tarragon Chicken Salad Made With Greek Yogurt

This recipe was inspired by a sandwich I’ve had several times at Julienne’s in San Marino. As a low-fat option, the chef offers a chicken tarragon salad that’s made with Greek yogurt instead of mayo. I’m not one to shy away from heavier fare but with this dish you really don’t miss the fat. The salad lasts for 2-3 days in the refrigerator so it’s an excellent weekday meal.

And about the bread …

I’ve tried serving my chicken salad on everything from wheat to sourdough, but the marriage made in lunch heaven is olive bread. The saltiness of the olives with the sweetness of the pecans – so good. At Julienne’s they serve the sandwich on soft rosemary currant bread which is also fantastic. My advice is to be creative since the chicken salad shines with bread that has a little something going on.

Recipe Tip

If you’re going to make the chicken salad a day ahead, save any extra yogurt dressing in an airtight container. I’ve found that the salad absorbs some of the moisture overnight and usually benefits from a couple extra spoonfuls of dressing. You should only have to make this adjustment once.

How To Make Chicken Salad Without Mayo

This chicken salad is quite simple to make. In general, chicken salad is made my stirring together cooked chicken, some spices, maybe some diced veggies, and a binder of some sort like mayo, yogurt, or cottage cheese .

To get the consistency of mayo, you need to blend your cottage cheese I like to use a mini food processor. Once you’ve done that, mix it all together, and you’re good to go. It’s best to make it in advance to give time for the flavors to blend, but it can be eaten immediately if needed. Here are the step by step instructions:

Time needed: 1 hour and 15 minutes.

To make this simple no mayo chicken salad, you’ll blend cottage cheese with honey, lemon juice, and spices. Then you’ll mix the sauce with shredded chicken and celery.

  • Put chicken to a bowl. Set aside.
  • Blend the cottage cheese, honey, lemon juice, and spices in a food processor until completely smooth.
  • Grate the onion, and add to the food processor.
  • Blend together until there are no remaining larger pieces of onion.
  • Pour the cottage cheese mixture into the bowl with the chicken.
  • Using a fork, stir to completely coat the chicken with the mixture.
  • Stir in celery. Refrigerate.

    Best to refrigerate for at least one hour.
