    Like anything in life, a party can be as simple or as complicated as you make it. In this post, Ill share my recommendations along with other options so you can customize your party experience.

    The Star Of Your Taco Party Checklist The Meat

    Lets start with batch taco meat. I usually use ground beef seasoned with my homemade taco seasoning. You can also buy it pre-made in bulk at a restaurant or catering store like GFS.

    Other meat ideas are pulled pork, pork carnitas, and barbocoa . I figure about 15 pounds of meat per 100 people, but that may depend how hungry your guests are and what sides you serve at your party.

    You could think about steak too, but that could get pretty pricey depending on this size of your crowd!

    Okay, moving on to taco shells. Pick one type or several from the list:

    Then, decide on the quantity. Usually you can buy these inexpensively but Id plan on about 2-3 tacos per guest. If youre feeding teens, go with three!

    Some quantities will depend on what other side dishes youre servings as well.

    Tip: If youre planning this for a graduation party, consider if there are other parties going on the same day. Usually people wont eat quite as much food if theyre party hopping.

    How To Make A Taco Salad

    Now that you have your ingredients prepped, the rest comes easy.

  • First, cook the meat. In a pan over medium-high heat, add in the ground beef. Break it up into small bits and sauté for about 8-10 minutes until its mostly browned. Then drain the fat.
  • Season the meat. Add in the taco seasoning and mix everything together for another minute or two.
  • Assemble the salad. Add the chopped lettuce at the bottom of the bowl. Then layer the ground beef, beans, tomatoes, cheese, red onion, and avocado on top. And for the final touches, dollop the homemade salsa, sour cream, a squirt of lime juice and a few leaves of fresh cilantro.

  • Prep the lettuce and toppings.
  • Brown the meat, drain, and add taco seasoning.
  • Stir in the black beans and corn.

    Like all salad recipes, this one is great to play with. Swap in the veggies you have on hand or adjust the toppings to make something you really love. Here are some suggestions:

    • Switch the sauce. Any of the 3 versions of my cilantro lime dressing would work here. Omit the avocado and serve it as a vinaigrette, or use Greek yogurt instead of the avocado to make it creamy. You could also skip this dressing entirely and finish the salad with tomatillo salsa or chipotle sauce.
    • Change up the creamy component. I love avocado here, but guacamole is just as good. Alternatively, try adding crumbled Cotija or grated cheddar cheese, cashew sour cream, or Greek yogurt!
    • Make it fruity. Substitute mango or pineapple salsa for the pico, or use both!
    • Vary the veggies. Raw or sautéed bell pepper, charred poblano, corn, or green onions would all be great additions.
    • Make it a burrito bowl! Reduce the lettuce by half and add a scoop of cilantro lime rice to the bottom of your bowl.

    I get it, tortillas are tough to beat. But Im telling you, when you use the right ingredients and commit to making your own dressing, you will have a change of heart. You will go from thinking of taco salad as a second class healthy substitute to real tacos, to thinking mid-salad-chomp, Dang. This is legit amazing. And suddenly salad is no longer substandard.

    Here are my secrets to get yourself to the BEST taco salad situation:

    • you must make a dressing, even if its an easy one
    • avocados are required, either fresh or in guac form
    • Taco meat must be beef. Sorry turkey, but no, you are not the best.
    • Mix herbs in with your lettuce. Chop your lettuce into small easy-to-bite pieces.
    • Dont skimp on the cheese! Cheese is everything!
    • You must use Juanitas or Fritos. The end. Forever and ever amen.

    Tips For The Best Taco Salad

    Use Lean Ground Beef Ground beef with a higher fat content will release more fat. Tilt the pan for the fat to pool at the corn of the pan then spoon off the excess fat. If you dont skim it off, the fat will solidify on the meat when it cools and you dont want that.

    Assemble just before serving Mixed taco salad does not keep well as the salt in the pico and taco seasoning will wilt the lettuce over time. If you want to make this in advance, see the meal prep option below.

    How To Make Tortilla Bowls

    To make the healthier-than-the-fried-restaurant-tortilla-bowls for your taco salad, simply choose your favorite tortillas and make sure they are at room temperature so they are nice and pliable. If youre using refrigerated tortillas, wrap them in a slightly dampened dish towel and microwave for 20 seconds. Be careful not to overheat or they will go past soft to brittle. You can use either 8 or 10 tortillas, as well as either wheat or white tortillas, but dont try corn as they will fall apart.

    Next, spray the interior of your oven proof bowls with nonstick cookingspray then push your tortillas into the inside of the bowls then place ona baking sheet. Bake at 375 degrees F for about 15 minutes thenremove tortillas from bowls and broil both sides until nice and crispy.

    The removing the tortillas and broiling both sides is a little trick other taco/tortilla bowl recipes dont do, and I think it makes all the difference for all over crispy bowls. Remove your now crispy taco bowls from the oven and let cool then load up with the best Taco Salad!
