Which Potatoes Make The Best German Potato Salad

With so few ingredients, each one plays a huge part in the success of the recipe, but none so much as the type of potatoes you choose. Keep your potato salad from becoming too gummy by selecting a waxy potato variety. Waxy potatoes are the best choice due to their low amount of starch, which tends to turn into an unappetizing gloopy paste when boiled.

Traditionally, most home cooks prefer unpeeled red potatoes when they make German potato salad due to their thinner skin and unique flavor profile. Smaller varieties of red potatoes such as Superior, Kennebec, and Atlantic are ideal because they tend to be sweeter than larger types, like Red Bliss. If you dont like, or your local supermarket doesnt carry red potatoes, feel free to use any type of new potatoes, Pee-Wees, or even Fingerlings. Yukon Gold is a decent substitution, but you will want to peel them and get the best result by slightly uncorking them.

Tips For Making Potato Salad

  • First, you gotta make a good hard boiled egg! Place eggs in the bottom of a saucepan add enough cool water to cover eggs. Bring to a boil cover, remove saucepan from heat, and let stand 15 minutes. After 15 minutes, drain the water then fill the saucepan with cold water and ice. Allow to sit for 5 minutes. Tap each egg firmly on the counter until cracks form all over the shell. Peel under cold running water. Slice eggs in half lengthwise, and carefully remove yolks.   • Don’t overcook the potatoes. They should just be fork tender – not falling apart.
  • As this cools the potatoes will continue to soak up the dressing. So, if you notice your salad is just a little dry when you are ready to serve, add a little more milk or chicken stock and some mayonnaise and it will restore the creaminess of your potato salad.

Hot German Potato Salad

Another favorite, this is based upon the recipe in Betty Crockers Cookbook . It goes really great with bratwurst. The dinner you see pictured here includes bratwurst and sauerkraut, but neither of those are in this potato salad recipe. Just sayin.

3 pounds cooked potatoes, peeledI peel and then boil the potatoes, but as long as theyre cooked it shouldnt matter how its accomplished. The potatoes work best if theyre then cooled.

In a large skillet, fry 6 slices of bacon until crisp.

Remove bacon and place on absorbent towel to drain.

Cook and stir 3/4 cup chopped onion in bacon drippings until tender and golden brown.

Stir in 2 Tbsp. flour, 2 Tbsp. sugar, 1 tsp. salt, 1/2 tsp. celery seed, and dash of pepper. Cook over low heat, stirring until bubbly.

Remove from heat stir in 3/4 cup water and 1/3 cup vinegar . Heat to boiling stirring constantly. Boil and stir 1 minute.

Chop bacon, thinly slice potatoes. Carefully stir into hot mixture. Heat through, stirring lightly to coat potato slices.

Serves 5 or 6. And tastes pretty great the next day, too!

How To Make Potato Salad:

Peel and dice potatoes into cubes. Place potatoes into a large pot of water. Boil for about 20 minutes . Take care not to overcook your potatoes you dont want them overly mushy.

Mix together mayonnaise, vinegar, mustard, chicken stock and salt and pepper in a large bowl.

Add potatoes, celery, onion and stir gently.

Stir in eggs.

Cover and refrigerate at least 4 hours to blend flavors and chill.

It was 1989, my second year of college. I was hired as a Resident Assistant in the dorm. My Resident Director was German and with my last name being Schultz , she assumed I knew German traditions. I did not! So she set out to bring traditional German food into my life.

My favorite was warm German Potato Salad. And it was hers that Ive based a good German Potato Salad against since then, not many have compared. Shed make a pot and invite me over a few times a month thats all wed eat it was that good! I miss her!

Ive never made it myself in all of these years. A little strange, I thought, with how much I loved it. And now, I have a SO that doesnt like traditional potato salad or actually, cold potatoes. It has taken me five five! years to solve this problem of not having potato salad when the menu just calls for it Mrs. Wards German Potato Salad!

I had family in town this week. Id made Pork BBQs and was just going to make a potato salad to go with it. But what would I fix him? Rather than make two different sides, I decided to try my first German Potato Salad and try to replicate hers. So I searched Farm Bell Recipes first, there was one from !

1 qt. potatoes, boiled and sliced I boiled 10 red, sliced, potatoes.

1 onion, diced
