We do love a potato salad around here! But we dont so much love peeling a ton of potatoes to get us some, and while we love mayo in other things we dont love it in potato salad.

So here comes our sour cream lemon potato salad to the rescue! Can we first please discuss how adorable baby potatoes are?

They come in all different colors, and you can use any or all of them in this recipe. The smaller they are the more I love emand because they have such smooth, tender skins, there is zero peeling involved. AND, they cook up super fast. You rock, baby potatoes!

Creamy Lemon Dressing Recipe

Ingredients. Ingredient Checklist. ¾ cup mayonnaise. ½ cup sour cream. 1 ½ tablespoons Dijon mustard. ¾ teaspoon salt. ¾ teaspoon lemon juice. ¼ teaspoon pepper.

Steps:

  • For the Sour Cream Dressing:
  • Whisk sour cream, mayonnaise, garlic, lemon zest, lemon juice, salt, and pepper in a medium bowl to combine.
  • Do Ahead: Dressing can be made 1 day ahead. Cover and chill.
  • For the salad:
  • Trim root end of lettuce discard any wilted outer leaves. Cut into quarters lengthwise, then cut each quarter crosswise into 3″ pieces. Without separating wedges into leaves, transfer to a large platter. Tuck avocado pieces among lettuce and drizzle lemon juice over season with salt.
  • Spoon half of dressing over salad and top with chives season with pepper. Serve with remaining dressing alongside.

You want the potatoes to be nice and tender, so after about 10 minutes, scoop one out with a slotted spoon and stick a paring knife into it. The knife will go in easily when they are done.

Lemon zest is the peel of the lemon, which is full of bright flavor! But you want to make sure you get super light shavings of it since it is packed with so much taste, and I love a microplane zester for this quick job

Whats the best way to juice a lemon?

There are a million juicers out there, but my favorite is this citrus juicer youve probably spotted at your friendly neighborhood bar. Cut your lemon in half, pop it in the juicer, give it a squeeze and you have lemon juice with no seeds getting in the way!

Does this potato salad need to be chilled?

Yes and no! You can either eat it up right away at room temperature, or you can pop it in the fridge for a couple of hours if you are a chilled potato salad type of person.

This potato salad is a great side for grilled chicken or steak or seafood, but Im also here to tell you that I could happily eat a bowl of it for lunch all by its delicious self. Happy potato salad making!

How To Make Sour Cream Lemon Potato Salad

Start by giving those baby potatoes a nice scrub, and then simmer them up in salted water until they are tender.

Once the potatoes are cooked, its time for the dressing! Theres something about swapping the mayo out for sour cream that lightens and brightens the potato salad deliciousness.

Side note: whenever a recipe calls for measuring out something thick or sticky I go straight for my beloved adjustable measuring cup.

You can set it to whatever measurement you need, and then the bottom of it twists up so that every bit of whatever creamy or gooey ingredient you are using goes in the recipe instead of staying stuck in the measuring cup. Hey, its the little things!

Back at the dressing, you are going to stir that sour cream into your bowl of cooked baby potatoes, and then drizzle in some lemon juice and lemon zest, a little chopped fresh dill, and for just a bit of sass, some chopped up shallot.

Give it a taste, add some salt and pepper if you think it needs itand youre done!

Salad Dressing Recipe With Lemon Olive Oil

1. Classic Vinaigrette: Whisk two tablespoons dark wine vinegar, 2 teaspoons dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste. Progressively whisk in 1/3 to at least oneOr2 cup essential olive oil.

2. ShallotWhite Wine: Make Classic Vinaigrette , replacing the dark wine vinegar with white-colored wine vinegar add 1 minced shallot.

3. Roasted Garlic clove: Slice the fill up 1 mind garlic clove drizzle with essential olive oil, wrap in aluminum foil and roast at 400 levels F until tender, 35 minutes. Awesome, then squeeze the cloves. Make Classic Vinaigrette inside a blender, adding the roasted garlic clove and three tablespoons grated Parmesan.

4. Bistro Bacon: Make Classic Vinaigrette add 1/3 cup crumbled blue cheese, 3 slices crumbled cooked bacon and a pair of tablespoons chopped chives.

5. Mediterranean: Make Classic Vinaigrette mash in 1/2 cup crumbled feta, then whisk in 1 tablespoon chopped parsley, 1 teaspoon dried oregano and 1 diced plum tomato.

6. Dijon: Whisk 3 tablespoons each dijon mustard and champagne vinegar, 1/2 teaspoon kosher salt, and pepper to taste. Progressively whisk in 1/2 cup essential olive oil.

7. Spicy Honey-Mustard: Whisk 2 teaspoons each honey and dijon mustard, two tablespoons lime juice, and 1/2 teaspoon each lime zest and kosher salt. Progressively whisk in 1/4 cup each essential olive oil and vegetable oil, adding 2 teaspoons chopped thyme and 1/2 minced jalapeno.

Lemon Rosemary Creamy Salad Dressing, an easy homemade creamy dressing recipe. Great on salads, but also the best over chicken and salmon, on sandwiches, and a fun dip for chips, pretzels, and even shrimp.

My Rosemary, Lemon, and Feta Spread recipe has been so popular lately, that I couldnt help coming up with something else with lemon and rosemary. That one is more of a spread where this recipe is more of a dressing and dip. This creamy salad dressing though is WAY more than JUST a salad dressing.

How Long Will Homemade Blue Cheese Dressing Last

Heres the great news, this easy homemade dressing lasts for about a week when stored in the fridge. We love making a double batch so we can add it to salads, use a veggie dipping sauce, or spoon onto dinners throughout the week.

In fact, theres a jar of it in our fridge now ready to be used in our favorite dishes. Here are a few suggestions for how to use this easy blue cheese dressing:

  • Skip store-bought salad dressing and use it on your favorite homemade salads. Its especially delicious with baby greens, kale, brussels sprouts, cabbage, carrots, sweet bell peppers, cauliflower, and broccoli. Its also excellent with salads where you add fruit .
  • Swap out the traditional dressing and use this blue cheese dressing to make coleslaw.

How To Make Sour Cream Salad Dressing

Food editor Emma Laperruque shared this two-ingredient recipe with Bon Appétit that she says, could make a cardboard box taste good. The magic behind the dressing is that it uses jarred whole pepperoncini. These flavor-packed jars not only contain the sweet Italian chili pepper, but also a brine that can be used as a base to whip up a quick salad dressing. Plus, its got the same richness and tanginess as a classic ranch dressing, just with fewer ingredients.

All you have to do is mix together 1/4 cup of full-fat sour cream with one tablespoon of minced pepperoncini and two tablespoons of the brine from the jar. Add a pinch of salt and pepper to taste and its ready to toss with your favorite salad green mix for lunch or dinner.

Now, dont worry if you dont have sour cream or pepperoncini on hand as Laperruque suggests some ingredient swaps. Whole-milk Greek yogurt and crème fraîche are willing and able to step in, she says of the sour cream base. Same deal with dill pickles, pickled jalapeños, or even sauerkraut, she names instead of pepperoncini. Use the same amount of the substitute ingredients and youll be on your way to enjoying one of the best salads youve ever had!

This dressing recipe really blew me away at how simple and yummy it is. So much so, Im taking a page out of Laperruques book and drizzling it over everything like grain bowls, roasted chicken, and pizza!

Tips & Tricks For The Best Sour Cream Salad Dressing

I like my dressing to be tangy, as I find the sharp flavour balances out once it is added to a salad. If you find it a bit too strong, add some more sour cream, or decrease the quantity of vinegar and mustard.

This dressing will keep for a few days in the fridge, although it will thicken slightly due to the olive oil. Just give it a stir before using.

I grate the garlic clove on a Microplane grater for this recipe. It is a quick and easy way of pureeing the garlic clove.

Taco Salad With Sour Cream Dressing

Craving Mexican but want something fresh and healthy? Try this taco salad with sour cream dressing.

Ingredients

  • 1 red onion, thinly sliced
  • 1 telegraph cucumber, peeled, roughly chopped
  • 500g cherry tomatoes, quartered
  • Kernels from 4 cooked corn cobs
  • 100g baby rocket leaves
  • 230g pack plain corn chips

Don’t forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1. Whisk the sour cream, lemon juice and garlic with enough warm water to form a smooth, loose dressing. Season and set aside.
  • 2. Toss the remaining ingredients, except chips, in a serving bowl. When ready to serve, toss through chips and dressing.

This sour cream dressing was born out of laziness. It was hot, and I had thrown together a salad of post Christmas ham, boiled eggs and miscellaneous vegetables from the garden. All it needed to pull it together was a creamy dressing of some form. However every recipe I found featured mayonnaise as a key ingredient.

There was no mayonnaise in the fridge, I couldnt be bothered making any and dinner was imminent, so a trip to the shops was out. I did however have a large tub of sour cream in the fridge, so experimentation became the order of the day. I was pleasantly surprised as to how good the end result was.

Sour cream lends a tangy, creamy edge to the dressing, and I find it indistinguishable from any dressing featuring mayonnaise. I always have sour cream on hand as I often use it to replace cream in sauces. Not for any misplaced health benefits, rather that I prefer the flavour sour cream lends to a dish. One more use for this versatile condiment can therefore only be a good thing.

This dressing will keep for a few days in the fridge. I have been pouring it over the ubiquitous ham and salad for lunch. I also suspect that with the addition of some grated Parmesan and a few chopped anchovies it would make a fine Caesar salad dressing.
